2 pounds beef bottom round, trimmed of excess fat
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
3/4 cup all-purpose flour
1/4 cup vegetable oil or bacon drippings
2 cups chicken broth
1 teaspoon dried thyme

Steps:

  • Preheat the oven to 300 degrees F.
  • Cut the meat with the grain into 1/2-inch thick slices and season on both sides with salt and pepper. Place the flour into a pie pan. Dredge the pieces of meat on both sides in the flour. Tenderize the meat, using a needling device, until each slice is 1/4-inch thick. Dredge in the flour again and set aside.
  • Add enough of the vegetable oil or bacon fat to just cover the bottom of a 4 to 5-quart Dutch oven set over medium-high heat. Once the oil begins to shimmer, add the steaks to the pan, being careful not to overcrowd. Cook until golden brown on both sides, approximately 2 minutes per side. Remove the steaks to a plate and repeat until all of the steaks have been browned.
  • Remove the last steaks from the pot and add the chicken broth and thyme and whisk until the liquid just comes to a boil. Return the steaks to the pot and make sure they are all submerged in the liquid. Cover the pot and place it in the oven on the middle rack. Cook for 1 1/2 to 2 hours or until the meat is tender and falling apart.

With this recipe, don't be shy to add other spices to it. This goes great with mashed potatoes, green beans and sweet tea. You can use the gravy from the steak for the mashed potatoes.

1 teaspoon cracked black pepper
1 teaspoon seasoned salt
¼ teaspoon garlic powder
1 pound beef cube steaks
½ cup olive oil
2 cups beef broth

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Mix the flour, black pepper, seasoned salt, and garlic powder together in a shallow bowl, and coat the cube steaks thoroughly with the flour mixture, patting the flour onto the steaks to get a good coating. Retain 3 tablespoons of seasoned flour.
  • Heat the olive oil in a skillet over medium heat, and pan-fry the cube steaks until golden brown on both sides, about 5 minutes per side. Place the steaks into a 9x12-inch baking dish. Whisk the retained seasoned flour into the beef broth until smooth, and pour the broth over the steaks. Cover the dish with aluminum foil.
  • Bake in the preheated oven until the meat is tender and the gravy has thickened, about 2 hours.

8 oz cube steak, 4 steaks, 8 oz (225 g) each
1 ½ teaspoons kosher salt, plus more to taste
1 teaspoon black pepper, plus more to taste
2 large eggs
2 ¾ cups whole milk, divided
1 ½ cups all-purpose flour, divided, plus 3 tablespoons
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon paprika
1 cup vegetable oil
3 tablespoons unsalted butter
½ cup heavy cream

Steps:

  • Preheat the oven to 225˚F (110˚C).
  • Set a steak in the center of a cutting board and cover with a piece of plastic wrap. Using a meat mallet, pound the steak evenly to ¼-inch (½ cm) thick. Season with salt and pepper on both sides. Repeat with the remaining meat.
  • In a wide, shallow dish, whisk together the eggs and 1 cup (240 ml) of milk. In a separate shallow dish, mix together the 1 ½ cups (190 g) of flour, pepper, salt, garlic powder, onion powder, and paprika.
  • Dredge the steaks in the flour mixture, then dip in the egg mixture, letting any excess egg drip off. Coat again in the flour mixture. Set aside for 10-15 minutes, until the coating has dried out a bit.
  • Meanwhile, heat the oil in a 10-inch (25.5 cm) pan over medium-high heat until it reaches 375˚F (190˚C).
  • Fry the steaks, 2 at a time, for 3 minutes, until golden brown and crispy. Flip and cook on the other side for 3 minutes more, until golden brown and cooked through when the internal temperature reaches 155˚-165˚F (170˚-175˚C). Transfer the steaks to a paper towel-lined plate or baking sheet and immediately season with salt. Once all of the steaks are done frying, transfer to the oven while you prepare the gravy.
  • Pour the hot oil into a heatproof bowl and let cool before discarding. 9. Leave any browned bits in the pan.
  • In the same pan, without wiping it out, melt the butter over medium heat. Add the remaining 3 tablespoons of flour, whisking to incorporate. Cook for 2-3 minutes, until the roux is a light brown color. Add the heavy cream and remaining milk. Bring to a simmer and cook, whisking constantly, until thickened, 5-7 minutes. Season with salt and pepper.
  • Ladle the gravy over the steaks and serve with your favorite side dishes.

1 to 2 lb cubed beef steak
1 c all purpose flour
canola or vegetable oil for browning meat
lb salt and pepper to taste
GRAVY (NOTE THAT THESE MEASUREMENTS MAY NOT BE EXACT. USE YOUR OWN JUDEGMENT)
1/4 c shortening, lard, or bacon grease
1/4 c all purpose flour
1 tsp salt
1/2 tsp pepper
1 pinch sugar
2 to 3 c milk

Steps:

  • 1. Wash and pat dry cube steaks. Sprinkle with salt and dredge in flour, set aside. In large skillet, brown the cube steaks in hot oil a couple of minutes on each side, then lay into slow cooker and set aside.
  • 2. In deep skillet (I use a cast-iron fryer), melt grease. While grease is melting, mix flour with salt, pepper, and sugar. When grease is melted, add flour mixture and brown well, stirring constantly. Add milk while stirring constantly. Continue to stir and bring gravy to a boil, but Do not allow to thicken.
  • 3. Pour gravy over browned cube steaks and add additional salt and pepper, if desired. Turn slow cooker on high and cover. After about 1 hour, turn cooker down to low and cook for about three more hours, gently stirring occasionally.
  • 4. About the last hour of cooking, check on the gravy. If too thick, thin down with a little water or milk, stirring or whisking gently. If too thin, mix a couple of tablespoons cornstarch with water to make a pourable paste. Slowly and gently stir into gravy. You must be very gentle when stirring so as not to break up the tender meat too much.
  • 5. When gravy is the desired consistency and meat is tender, turn slow cooker off or to keep warm. Serve over rice or mashed potatoes and with your favorite veggies.

8 (4 ounce) tenderized beef round steak (cube steaks)
1 teaspoon seasoning salt

1 quart whole milk

  • HOUSE SEASONING:.
  • Mix ingredients together and store in an airtight container for up to 6 months.
  • STEAK:.
  • Combine 1 1/2 cups flour and 1/4 teaspoon of pepper in a small bowl.
  • Sprinkle 1 side of the meat with the House Seasoning and the other side with the seasoning salt, and then dredge the meat in buttermilk and then flour.
  • Heat 1/2 cup oil in a heavy skillet over medium-high heat.
  • Add 2 or 4 of the steaks to the hot oil and fry until browned, about 5 to 6 minutes per side.
  • Remove each steak to a paper towel-lined plate to drain.
  • Repeat with the remaining steaks, adding up to 1/4 cup more oil, as needed.
  • Drain all but 4 TBS drippings, and scrapings.
  • GRAVY:.
  • Add 4 tablespoons flour to the pan drippings, scraping the bottom with a wooden spoon.
  • Stir in the pepper and the salt.
  • Reduce the heat to medium and cook, stirring frequently, until the flour is medium brown and the mixture is bubbly.
  • Slowly add the whole milk, stirring constantly with whisk.
  • Return the steaks to the skillet and bring to a boil over medium-high heat.
  • Reduce the heat to low, and place the onions on top of the steaks.
  • Cover the pan, and let simmer for 30 minutes.

1 c crisco
3 Tbsp flour
salt to taste
3 c water

Steps:

  • 1. Cut round steak into pieces. Heat Crisco in large skillet (I use an iron one). Roll steak in flour and fry brown on both sides over medium-high heat(about 3 minutes each side). Remove meat from skillet.
  • 2. Add 3 tablespoons flour to the pan drippings and brown while stirring. Add salt and 3 cups water, stir well. Put steak back in pan and spoon some gravy over meat. Simmer covered on low 2 hours or until meat is fork tender.

It is one of those things that I cook by eyeballing the ingredients but someone requested I post it so the amounts are guesstimates with instructions on what the mixture should look like. 4 -6 cube steaks
flour (for dredging)
salt and pepper
2 tablespoons oil
2 tablespoons butter
4 -8 tablespoons butter
4 -8 tablespoons flour (approximately)
2 cups milk
water
salt and pepper

Steps:

  • For steak: Melt butter & oil in an electric skillet set on about 350°F
  • Dredge cube steak in flour seasoned with salt & pepper mixture. (I have done it dipping it in egg first & didn't think it made that much difference).
  • Fry about 5 minutes on each side. (If you over cook it gets tough.) Move cooked steak to a small cookie sheet & place in a warmed oven.
  • For the gravy: Pour any butter and oil out of the skillet, being careful to not pour off the browned flour that are in the pan. Loosen the bits of browned flour from the pan with your spatula.
  • Turn the heat down to about 250°F and melt 4-8 Tbls of butter stirring the pan drippings into it. (The more butter you start with, the more gravy you'll have. My family likes LOTS of gravy!).
  • Once the butter has browned a bit add enough flour to absorb all the butter, mixing well. (You will use approximately the same amount of flour as butter.).
  • Start adding milk about 1/2 cup at a time while using a whisk to work it into the flour/butter mixture. After I have added about 2 cups of milk I start using water. Add liquid until the gravy is as thin as you like it. This takes a little time especially when you are first getting used to it. Add some liquid, mix, add liquid, mix --
  • Once the gravy is the right consistency add some salt & pepper until it is to your liking (I used quite a bit of salt actually).
  • Remove steak from oven & serve with mashed potatoes!
  • (Hint: have the rest if the meal done before you start the steak & gravy. Once you are into making the gravy you won't be able to do anything else because you have to stir it constantly so it doesn't stick or burn).

4 (6 oz.) top sirloin steaks, or other thin, boneless steak
2 tsp. olive oil
Salt
Pepper
1 cup beef stock
2 Tbsp. Worcestershire sauce
1 Tbsp. flour

Steps:

  • Pat the steaks dry, then season them generously with salt and pepper.
  • Heat the olive oil in a skillet over medium-high heat. Cook for 3-4 minutes on each side, or until deeply browned.
  • Transfer the steaks to a plate to rest.
  • In a measuring cup, whisk together the beef stock, Worcestershire sauce, and flour until smooth. Pour into the pan that you cooked the steaks in.
  • Bring the gravy to a simmer over medium heat, scraping up any browned bits from the bottom of the pan. Simmer for 3-5 minutes, or until the gravy is glossy and thick enough to coat the back of a spoon. Season to taste with salt and pepper.
  • Return the steaks to the pan and turn them to coat with gravy. Cook 1-2 minutes to rewarm, if desired.

A true Southern classic! This is all about pleasure and taste, no worries about fat content, etc. A repeated request when both my kids are home. Nothing fancy, just great eating. Mashed potatoes are a must with this. If my mom is here, we have to double the gravy and make biscuits, but if she isn't here, I leave the biscuits off.....just an overload for me! We usually add a side of roasted green beans or asparagus. Put your treadmill on high the next day...you will need the extra exercise....but I've found it is worth it to see the enjoyment on my kids' faces. Freshly ground black pepper, and freshly ground sea salt make all the difference. Prep time does not include marinating time (2 hours). The recipe as posted is perfect for me, and I don't add any other seasonings. However, if you feel you have to ....add some garlic powder for extra flavor. Personally I don't think it needs it....tastes like Grandma's the way it is posted, and that is perfect to me.

1 1/2 lbs cube steaks
1/2 tablespoon sea salt, freshly ground
1/2 tablespoon white vinegar
1 1/2 cups all-purpose flour

Steps:

  • Combine 1/2 tbsp sea salt and 1/2 tbsp white vinegar with a cup of water in a bowl or pan large enough to hold your meat. Stir until salt is dissolved. Add the cubed steak, and add additional water to cover the meat. Let this rest in the refrigerator for 2 hours. This will flavor the meat and make it tender.
  • Combine 1 1/2 cups flour and 1 tbsp freshly ground black pepper; stir well. Remove the meat from the marinade, draining well. Dredge the meat in the flour mixture.
  • Pour oil into a heavy skillet, to a depth of 1/2 inches. Heat to 375 degrees. Add the meat and fry a few pieces at a time, 6 to 7 minutes on each side or until lightly browned. Remove from the skillet and drain well on paper towels. Keep warm.
  • Drain the pan drippings until you only have 2 tbsp of oil in the skillet. Place the skillet over low heat. Add 2 tbsp flour, stirring until smooth. Cook for 1 minute, stirring constantly. Gradually add the milk and cook over medium heat, stirring constantly, until the mixture is thickened and bubbly. Stir in 1/4 tsp salt and 1/2 tsp black pepper. Serve the meat with the gravy. Enjoy.

2 cups whole milk, at room temperature
2 large eggs
3 cups all-purpose flour
1/2 teaspoon garlic powder
1/2 teaspoon hot paprika
Coarse salt and freshly ground black pepper
2 cups canola oil, for frying
2 pounds round steak, tenderized and roughly cut into 5-inch squares (about 8 pieces)
Mashed potatoes, for serving

Steps:

  • Whisk 1/2 cup of the milk and the eggs together in a bowl and set aside. Combine the flour, garlic powder, paprika and some salt and pepper in another bowl and set aside.
  • Heat the oil in a cast-iron skillet over medium-high heat until it reaches 350 degrees F on a deep-fry thermometer. Dip a cutlet into the egg wash, then in the seasoned flour. Return to the egg wash for a quick dip, then immediately add to the heated oil in the skillet. (Be careful, the oil will pop and sizzle.) Repeat without crowding the skillet. Cook until brown, 3 to 5 minutes. Turn and cook an additional 3 minutes. Remove to a plate lined with paper towels and keep warm. Repeat with the remaining ingredients, moderating the heat to maintain medium-high heat.
  • Pour off all but 2 to 3 tablespoons of the cooking oil with the "drippings," the browned bits in the bottom of the skillet. On low heat, add 3 tablespoons of the leftover seasoned flour mixture to the oil and whisk to make a roux. Cook until golden, about 1 minute. Gradually add the remaining 1 1/2 cups milk to the flour mixture while whisking together. Let cook until thickened, about 10 minutes. Taste and adjust for seasoning with salt and pepper.
  • Serve the cutlets with mashed potatoes and the gravy.

It is my husbands job to pick the meat out and I come up with what I am gonna cook for dinner. Yesterday he pulled out a chuck roast....

1 large onion, sliced
3 clove garlic minced
4 Tbsp canola oil (more if needed)
1 c flour
2-3 Tbsp montreal seasoning

1 pkg chicken gravy mix
water, as needed
optional-sliced mushrooms

  • 1. Slice roast into thin slices. Dredge in flour & seasoning, salt and pepper.
  • 2. In a lg fry pan add oil & garlic. Place slices of meat and brown on both sides; remove when browned. Add more oil and saute onions till caramelized. Remove onions. Add water to the drippings and then the gravy packets.
  • 3. Add back in the meat & onions. Simmer on low for 1 1/2 hrs or till tender. Pour over rice or mashed potatoes. Can be made in the crock pot.

Worcestershire sauce
Salt
Pepper
Pinch of garlic powder
Flour for dredging
1/4 cup vegetable oil
1/2 cup minced onion
3 1/4 cups hot water
3 tablespoons flour

Steps:

  • Place the steak in a casserole dish and generously sprinkle with Worcestershire sauce. Cover and marinate overnight. Remove from the marinade and sprinkle generously with salt, pepper, and garlic powder. Dip the steak in flour and shake. Heat the oil and quickly fry the steak until brown, but do not cook the inside too much. This is done by cooking both sides on high heat, turning quickly, and then reducing heat to low to finish cooking.
  • Boil 1/2 cup minced onion in another pot with 1/4 cup of the water for about 5 minutes. When finished cooking as many steaks as desired, leave about 3 tablespoons browned crumbs (not burned) and drippings from steak in skillet. Add onion and 3 tablespoons flour. Stir until slightly browned. Slowly pour in the remaining 3 cups hot water as it thickens. Season with salt and pepper to taste. The gravy may be served over rice or steaks.

  • Take steak up and add flour to grease,brown.
  • In a cup,add bouillon to hot water to dissolve.
  • add to the ammount of cold water you have in a bowl as to how much gravy you wish to make.
  • Add water to browned flour and put steak over in the gravy;Let come to a boil.
  • Pour the steak and gravy in a double boiler; steam on low heat for 3 hours.

3 pounds thick sirloin or round steak
Salt
Cayenne pepper
Black pepper
3 tablespoons vegetable oil
2 medium onions, chopped
1 bell pepper, chopped
1/2 cup water, divided
2 tablespoons cornstarch
Serving suggestion: Steamed rice

Steps:

  • Sprinkle both sides of the steak with the salt, cayenne, and black pepper. Rub seasoning into meat. In a large skillet, heat oil over high heat until hot. Add steak and cook on high until browned, turning steak every 3 to 4 minutes. (Lower heat if necessary.) The steak should be well browned on both sides. Remove steak and add onions and bell peppers to pan. Cook until wilted. Place steak on top of onions and bell peppers and add 1/4 cup of water. Lower heat to medium, cover and simmer for 1 1/2 hours, turning steak every 20 minutes. (Note: when lifting lid of pot, let the water from the lid drain into the pot.) When steak is tender, remove steak and place on a platter. Mix cornstarch with 1/4 cup of water and add to the pot. Stir to make a gravy. Serve gravy over hot rice with steak.

Certainly may use sliced onions rather than chopped.Note: After some of the reviews I realized that even though it is quick to put together the cooking does take some time so I have changed the title.

Steps:

  • Dredge steak in flour & brown quickly in hot oil. Mix soup & water & pour over meat, Top with onion. Cover & simmer for 1 hour. Add kitchen bouquet to taste.

8 units steak
0.5 teaspoons salt
0.25 teaspoons black pepper
1 cups flour
4 tablespoons vegetable oil
21.5 ounces beef broth
1 units yellow onion
1 units white rice
3 cups water
5.5 teaspoons salt
4 tablespoons butter
5.5 cups white rice

Steps:

  • -Generously season meat on both sides with salt and pepper.
  • -Place flour in a resealable plastic bag and add meat, a few pieces at a time, shaking to coat all sides. Place floured meat on a piece of waxed paper next to cooktop, reserving 1/4 cup flour.
  • -Pour 4 tablespoons oil into a heavy, flat-bottomed 12-inch skillet with a tight-fitting lid. Heat oil over medium-high heat on stovetop for about 1 minute, and then add steak pieces. Brown meat for approximately 3 minutes per side, or until crispy and dark brown. (You may have to brown meat in batches.) Set aside.
  • -Add remaining 2 tablespoons oil and reserved flour to skillet. Cook and stir until smooth. Add 1 can broth and stir.
  • -Return meat to skillet and reduce heat to low. Place onions on top of meat. Pour remaining 1 can broth over meat and onions. Place lid on skillet, and simmer over very low heat for approximately 45 minutes, or until meat is tender and gravy has thickened.
  • -Serve over white rice.
  • WHITE RICE:
  • -In a 2-quart pot with a tight-fitting lid, combine water, salt, and butter. Bring to a rolling boil over medium-high heat on stovetop. Add rice, stirring well.
  • -Cover and reduce heat to the lowest possible setting. Cook for 18 minutes, or until water is absorbed and rice is tender.
