CORNSTARCH BANANA BREAD (GLUTEN-FREE, WHEAT-FREE)

Steps:
- Mix everything together with the exception of the bananas.
- In a separate bowl, beat the bananas with a mixer until smooth. Combine the two and mix thoroughly.
- Bake in a loaf pan at 325F for 60-70 minutes (or longer) until a toothpick stuck in the center comes out clean.

RICE FLOUR BANANA BREAD (WHEAT FREE)
I always seem to have rice flour on hand (for Vietnamese and Thai food), and am always looking for ways to use it up. This recipe is from the incomparable Beatrice Ojakangas' "Great Whole Grain Breads" (Simon & Schuster, 1984,1993). The recipe calls for small loaf pans, probably to reduce the baking time. Might be possible to use a large pan, but I haven't tried.

- Preheat the oven to 350°F.
- In a large bowl, beat the butter and sugar until creamy.
- Beat in eggs, one at a time.
- Stir in buttermilk and lemon extract and mix well.
- Combine rice flour, baking powder, baking soda and salt and add to the butter mixture.
- Stir in bananas and coconut and mix well.
- Spoon the mixture into two greased mini loaf pans (5 1/2 by 3 inches).
- Bake 50 to 55 minutes, or until a wooden pick inserted into the center of the bread comes out clean.
- Cool in pans 2 minutes, then turn out and cool completely.
GLUTEN-FREE BANANA BREAD

Steps:
- Heat the oven to 180C/160C fan/gas 4 and line a 900g loaf tin with parchment paper (our tin was 19 x 9 x 6cm). Put all the ingredients, except the sliced banana, 1 tbsp caster sugar and the icing sugar, into a large bowl and stir until smooth and combined.
- Pour into the tin and put the two remaining banana halves cut-side up across the top of the batter, pressing down slightly. Sprinkle over the caster sugar. Bake for 1hr-1hr 15 mins until a skewer comes out clean, covering with foil towards the end of cooking if it browns too much.
- Dust with icing sugar and leave to cool.

- 1. In a large bowl, mix together almond flour, salt and baking soda.
- 2. In a smaller bowl, combine agave, grapeseed oil, eggs and vanilla, then stir in bananas.
- 3. Mix wet ingredients into dry.
- 4. Place batter in either a cake pan or two small (7x4 inch) loaf pans.
- 5. Bake at 350° for 40 minutes.

Steps:
- Preheat oven to 180°C Grease with butter or cooking spray, 20cm/8 inch round cake pan; line base with baking paper.
- Beat eggs with 2 tsp vanilla extract at medium high speed for about 10 minutes or until thick and creamy. Gradually add sugar, beating until dissolved between additons at medium speed.
- Sieve in the cornflour little by little for the third time and fold well in with a rubber spatula.
- Pour mixture into pan and spread evenly; bake for about 20 minutes or skewer inserted into the cake comes out clean. Turn sponge onto a wire rack to cool.
- Dust with a little sifted icing sugar and top with some fresh blueberries or any berries you like. Can also spread some jam to go with it.

- Preheat oven and prepare pan. Preheat oven to 350 degrees F. Spray a 9x5-inch baking pan with nonstick cooking spray.
- Make the batter. Mash bananas until almost smooth in a medium mixing bowl with a fork. Set aside. Whisk together gluten-free flour, sugar, baking powder, baking soda, and salt in a large mixing bowl.
- Add mashed bananas, melted butter, eggs, and vanilla extract. Stir until a batter forms. Spread batter evenly into greased loaf pan.
- Bake the banana bread. Bake until a cake tester inserted into the middle of the loaf comes out clean. Also check the very top of the loaf for doneness. If the top browns too quickly and the center isn't done, cover the loaf a lightly greased piece of foil. (If the center is baked and top of the loaf is raw, cover with a greased piece of foil and reduce the oven temperature by 25 degrees. Bake until done.)
