Here is a from-scratch version of the classic corn casserole, a popular holiday side dish in the southeastern United States that is traditionally made using store-bought Jiffy cornbread mix. If you've never had corn casserole before, you're really missing out: It's like an incredibly moist cornbread studded with fresh corn kernels. (Frozen corn can be used in the cold weather months.) Two pounds of corn kernels are bound together with a simple batter of flour, baking powder, cornmeal, Cheddar, eggs, melted butter and sour cream, then poured into a baking pan, topped with more cheese, and baked until bubbly. Fresh rosemary and scallions, untraditional and optional additions, add savory notes that balance out the sweetness of the corn.

Number Of Ingredients 11

6 tablespoons unsalted butter
2 pounds frozen or fresh corn kernels (about 6 1/2 cups)
4 scallions, thinly sliced crosswise (optional)
1 fresh rosemary sprig (optional)
Kosher salt and black pepper
1/2 cup all-purpose flour
1/2 cup fine or coarse yellow cornmeal
2 teaspoons baking powder
1 cup sour cream
2 large eggs
1 1/2 cups freshly grated Cheddar or Parmesan

Steps:

  • Heat the oven to 350 degrees. Add 4 tablespoons butter to a 9-by-13-inch pan or other 3-quart casserole dish and transfer to the oven. Once the butter has melted, about 5 minutes, take the pan out of the oven and let cool.
  • In a medium pot, melt the remaining 2 tablespoons butter over medium-high. Add the corn, scallions and rosemary, if using, 1 teaspoon salt and several grinds of black pepper, and cook, stirring occasionally, until the corn starts to give off some liquid and softens, about 5 minutes. Remove from heat and discard the rosemary sprig.
  • Stir the flour, cornmeal, baking powder and 1 teaspoon salt into the corn mixture. Tilt the baking pan so that the bottom gets coated in the melted butter, then pour the excess butter (do not scrape the dish) into the pot with the corn mixture. Stir to combine.
  • In a small bowl, whisk together the sour cream and eggs with a fork until combined. Add to the corn mixture along with 1/2 cup grated cheese and stir just until combined, taking care not to overmix.
  • Pour the batter into the pan, spread evenly, then sprinkle with the remaining 1 cup of cheese. Bake until the cheese is melted and the casserole is set, 30 to 35 minutes. For a golden top, broil for a few minutes. Serve hot.

Bring to a boil; cook and stir until thickened, about 3 minutes. , Reduce heat to low; cover and cook for 15 minutes. Divide mixture between 2 greased 8-in. square baking dishes. Cover and refrigerate until firm, about 1-1/2 hours., In a large skillet, cook the beef, onion, green pepper and garlic over medium heat until meat is no longer pink; drain. Stir in the tomatoes, tomato sauce, mushrooms, herbs and hot pepper sauce; bring to a boil. Reduce heat; simmer, uncovered, for 20 minutes or until thickened., Loosen 1 polenta from sides and bottom of dish; invert onto a waxed paper-lined baking sheet and set aside. 1 box Jiffy cornbread mix (8.5 oz) or use the below substitution
2 large eggs
1 stick butter, melted
3 c shredded cheddar cheese
1 c sour cream
COPYCAT JIFFY MIX
2/3 c all-purpose flour
1/4 tsp salt
1 Tbsp baking powder
3 Tbsp sugar
1/2 c cornmeal

Steps:

  • 1. Preheat oven to 350 F. To make corn casserole, combine all the ingredients in a bowl, except for half of the cheese.
  • 2. Grease a 13x9 baking dish.
  • 3. Pour corn casserole into the baking dish.
  • 4. Bake at 350 F until center is set and casserole is slightly golden, about 35-40 minutes.

1 lb ground beef or turkey
1 large yellow onion, chopped
1 large green pepper, chopped
1 8 oz. whole kernel corn
1 14.5 oz can diced tomatoes
1 8 oz. black olives, sliced
1 cup colby cheese, freshly shredded
3/4 cup cornmeal
2 cups cold water
1/2 tsp kosher salt
1 tbsp butter

Steps:

  • Preheat oven to 375 degrees.
  • In large skillet, saute chopped onions and green peppers in olive oil, until softened.
  • Add meat and cook until lightly browned. Move meat around pan with wooden spoon.
  • Add in corn, tomatoes, and olives. Stir and simmer until mixture has thickened.
  • While meat mixture is thickening, begin to make cornmeal topping. Combine cornmeal, salt, and cold water in medium saucepan. Cook on medium high, stirring occasionally until mixture thickens. Stir in butter, once mixture has thickened quite a bit. Continue to cook, until butter has melted into cornmeal mixture.
  • Pour meat mixture into 13x9 baking dish. Spread cornmeal topping on top of meat mixture.
  • Place pie in preheated oven and cook for 20 minutes. At the 10 minute mark, sprinkle the freshly shredded cheese over the top of the cornmeal topping.
  • Enjoy!!

Topping:
1 1/2 cups milk
1 teaspoon salt
2 tablespoons butter
1/2 cup yellow cornmeal

Steps:

  • Gather the ingredients. Preheat oven to 375 F.
  • Grease a 2 1/2-quart or 9-by-13-by-2-inch baking dish.
  • Heat olive oil in a large skillet over medium heat. Add ground beef and cook, stirring, until beef is no longer pink.
  • Add chopped onion, garlic, and bell pepper; cook for 2 minutes, or until just tender.
  • Pour off excess fat.
  • Stir tomatoes, corn, and seasonings into ground beef mixture and simmer for about 5 minutes longer.
  • Mix 1/2 cup cornmeal with 1 cup water. Stir into ground beef mixture. Cover and cook over low heat for about 10 minutes.
  • Add sliced olives to beef mixture and stir to blend thoroughly.
  • Pour beef mixture into prepared baking dish. Set aside while you make topping.
  • In a medium saucepan, heat 1 1/2 cups milk with 1 teaspoon salt and the butter. When milk is hot but not boiling, gradually stir in 1/2 cup yellow cornmeal. Continue cooking until thickened, stirring constantly.
  • Remove from heat and stir, then add cheese and beaten eggs. Stir to blend.
  • Pour topping over ground beef mixture and spread evenly to edges of casserole.
  • Bake for 20 to 25 minutes.

1 red bell pepper, diced

1 teaspoon cumin
1 teaspoon coriander
1 teaspoon smoked paprika
1/2 teaspoon salt
2 tablespoons chopped cilantro (or scallions)

1/2 cup all-purpose flour

2 teaspoons baking powder

Steps:

  • In a large skillet, saute onion in olive oil over medium heat until fragrant and golden, about 3-4 minutes. If using fresh chilies, saute with the onion. Add the bell pepper and cook 3-4 minutes. Add the fresh or frozen corn, saute 3-4 minutes. If using canned chilies, add along with spices and salt, saute 2 minutes, then turn heat off. Stir in fresh cilantro.
  • In a large bowl, add cornmeal, flour, salt, sugar and baking powder, and whisk. In a medium bowl, whisk eggs and sour cream. Gradually whisk in the melted butter.
  • Add the sauteed corn/pepper mixture to the dry ingredients along with the egg mixture and stir to combine all. Add 3/4 cup grated cheese. Pour the batter into a 2-quart greased baking dish, ( 8×9, 11 x 7) or you can bake it in a 10-inch cast ioron skillet) and top with the remaining 3/4 cup cheese. Batter should ideally not be over 2 inches high.
  • uncovered, for 25-35 minutes, or until puffed (it will dome) and golden!
  • with cilantro and/ or scallions! Serve warm.
