10 baby bell peppers, halved lengthwise and seeds removed
1 tablespoon olive oil
1/2 teaspoon kosher salt
4 ounces goat cheese, at room temperature
3 tablespoons mascarpone, at room temperature
1 teaspoon orange zest (from about 1 orange)
1/2 teaspoon lemon zest (from about 1 lemon)
2 tablespoons chopped chives

Steps:

  • Position an oven rack in the top third of the oven and preheat the broiler to high.
  • On a rimmed baking sheet, toss the peppers with the olive oil and 1/4 teaspoon salt and arrange them cut-side down. Broil until beginning to brown and soften slightly, about 4 minutes. Allow to cool to room temperature.
  • In a medium bowl, combine the goat cheese, mascarpone, orange zest, lemon zest and remaining 1/4 teaspoon salt. Mix well with a rubber spatula. Place the cheese mixture in a piping bag with a decorative tip. Fill each pepper evenly with the cheese mixture, being careful not to overfill. Sprinkle with the chives. Store in the refrigerator if not serving immediately.

1/8 teaspoon pepper

1 cup cut fresh asparagus (1-inch pieces)
1 garlic clove, minced
3 plum tomatoes, chopped
3 tablespoons 2% milk
2 tablespoons herbed fresh goat cheese, crumbled
Hot cooked rice or pasta
Additional goat cheese, optional

Steps:

  • Toss chicken with salt and pepper. In a large skillet, heat oil over medium-high heat; saute chicken until no longer pink, 4-6 minutes. Remove from pan; keep warm., Add asparagus to skillet; cook and stir over medium-high heat 1 minute. Add garlic; cook and stir 30 seconds. Stir in tomatoes, milk and 2 tablespoons cheese; cook, covered, over medium heat until cheese begins to melt, 2-3 minutes. Stir in chicken. Serve with rice. If desired, top with additional cheese.

3 boneless chicken breasts, skin-on
4 to 5 ounces garlic-and-herb goat cheese (recommended: Montrachet
3 sun-dried tomatoes, julienned
Good olive oil
Kosher salt and freshly ground black pepper

Steps:

  • Preheat the oven to 375 degrees F.
  • Place the chicken breasts on a sheet pan. Loosen the skin from the meat with your fingers, leaving 1 side attached. Cut the goat cheese into 1/2-inch-thick slices and place 1 or 2 slices plus 1/3 of the julienned sun-dried tomatoes under the skin of each chicken breast. Pull the skin over as much of the meat as possible so the chicken won't dry out. With your fingers, rub each piece with olive oil, and sprinkle them very generously with salt and pepper. Bake the chicken for 35 to 40 minutes, until the skin is lightly browned and the chicken is just cooked through. Serve hot or at room temperature.

12 ounces Montrachet goat cheese, with garlic and herbs
Fresh basil leaves
Good olive oil

Steps:

  • Preheat the oven to 375 degrees.
  • Place the chicken breasts on a baking sheet. Loosen the skin from the meat with your fingers, leaving one side attached.. Cut 12 thick slices of the Montrachet and place 2 slices plus a large basil leaf under the skin of each chicken breast. Rub each piece with olive oil and sprinkle generously with salt and pepper. Bake the breasts for 35 to 40 minutes, until just cooked through. Serve hot or at room temperature.

6 large chicken breast halves with skin and bones
1 11-ounce log chilled soft fresh goat cheese (such as Montrachet), cut into eighteen 1/3- to 1/2-inch-thick rounds
2 tablespoons extra-virgin olive oil
2 medium-size sweet onions (such as Maui), cut into 1/2-inch-wide slices
2 red bell pepper, cut into 1-inch-wide strips
2 yellow bell pepper, cut into 1-inch-wide strips
1 bunch fresh chives, finely chopped

Steps:

  • Gently slide finger tips between chicken meat and skin along 1 long side of each breast, leaving skin attached on opposite ling side. Place 3 goat cheese rounds under skin of each chicken breast. skewer seams closed with toothpicks. Sprinkle chicken with salt and pepper. (Can be made 1 day ahead. Cover and chill.)
  • Prepare barbecue (medium-high heat) or preheat broiler. Place oil in large bowl. Place onions on baking sheet. Brush with 1 tablespoon oil. Add bell peppers to remaining oil in bowl; toss to coat. Sprinkle onions and peppers with salt and pepper. Grill or broil chicken, skin toward heat, until cooked through, turning occasionally, abut 22 minutes. Transfer to baking sheet; tent with foil. Grill or broil onions and peppers until lightly charred, turning occasionally, about 4 minutes.
  • Remove toothpicks from chicken. Arrange chicken, onions and peppers on plates. Spoon Jalapeño Salsa over chicken. Spoon Tomato Salsa on side. Sprinkle with chives and serve.

2 boneless chicken breasts, with skin
4 slices prosciutto (thin slices)
2 garlic cloves, peeled and sliced thinly
1/4 teaspoon dried thyme
3 tablespoons goat cheese
3 tablespoons extra virgin olive oil
1 large red pepper, seeded and sliced into strips
4 tablespoons chicken broth
salt and black pepper
fresh basil leaf, torn

Steps:

  • Using a small, sharp knife, cut a slit down the side of each chicken breast to form the breast into a pocket. Tuck 2 slices of prosciutto inside each breast.
  • Add half of the sliced garlic, the thyme and half the goat cheese, dividing these evenly between the two chicken pockets.
  • Fasten the chicken pocket, using either cook's string or wooden skewers.
  • In a large frying pan heat 2 tbsp of the olive oil until very hot. Add the chicken parcels, skin side-down, and fry for 5 minutes. Turn over and fry on the other side for a further 2 minutes.
  • Add the remaining garlic and sliced red pepper. Add the broth and season with salt and freshly ground pepper. Bring to the boil, reduce heat, cover and simmer for 5 minutes until the chicken is cooked through.
  • Remove the chicken parcels from the pan and set aside, keeping warm. Add the remaining goat cheese to the pepper mixture. In a food processor or blender blend the pepper mixture until smooth. Heat the sauce through.
  • Divide the pepper sauce among two serving plates. Top with chicken parcels, sprinkle over torn basil and serve at once.

1 wheat bun (I use Merita Light Wheat Buns, they're 80 calories and delicious)
4 ounces boneless skinless chicken breasts
1/2 lemon, juice of
fresh rosemary (1-2 sticks is plenty)
paprika
salt
pepper
non-stick olive oil flavored cooking spray (I use PAM, but any kind will do...you also don't have to use the olive oil kind, just non-stick spra)
2 ounces red peppers
1 1/2 ounces red onions (one big slice)
1 ounce goat cheese (any kind, I made this with only .5 oz goat cheese last night and it was still delicious and 40 calor)
shredded lettuce
1 teaspoon Grey Poupon Dijon Mustard

Steps:

  • Spray chicken breast with non-stick cooking spray on each side (I use PAM extra virgin olive oil, but any kind will do).
  • Squeeze about 1/4 of a lemon over each side of the chicken breast.
  • Wash and chop fresh rosemary and sprinkle about HALF of the amount you have over the entire chicken breast.
  • Salt, pepper, and paprika both sides of the chicken (just a pinch of salt, a good amount of pepper, and enough paprika to give your chicken breast some beautiful red color).
  • Keep the red onion in its circular shape if you can (it's easiest for grilling in that shape) and slice the red pepper into pieces no bigger than the palm of your hand.
  • Spray red onion and red pepper with olive oil spray
  • Put chicken breast, red onion, and red pepper on grill and cook until chicken breast is no longer pink on the inside (I like to butterfly my chicken breast, which means that after the chicken has cooked on both sides for about 4-5 minutes, you give it a slice down the side, open it up, and put the inside back on the grill. You don't have to slice the entire chicken, I usually just try to open up the thickest part of the chicken, which is sometimes still pink, and make sure that part gets put directly on the grill).
  • When the chicken starts looking like it only needs a few more minutes, add the splash the other 1/4 of the lemon and sprinkle the remaining rosemary on both sides (rosemary needs to be cooked for at least a minute or so, so make sure that wherever you put the rosemary gets grilled up a little bit).
  • The chicken should take around 10 minutes, depending on how thick it is.
  • Flip the red pepper and red onion when they start to get some darker grill marks (you want to make sure that they are nicely cooked, but not charred black). They shouldn't take longer than your chicken breast to cook.
  • Toast your wheat bun (either throw it on the grill for a minute or warm it up in the toaster oven until it starts to brown.
  • Spread the goat cheese on the warm bun.
  • Spread the dijon on the other side of the bun
  • Slice your grilled red pepper and onion into strips.
  • Top the bun with red pepper, onion, chicken breast, and shredded lettuce.
  • Enjoy!
  • *I ate this last night with a side of Harvest Cheddar Sun Chips (which was a great combination), but for guests, I would recommend either a homemade light pasta salad or oven baked sweet potato steak fries to go with this dish!*.
