2 1/2 pounds tomatoes, cored and halved
1 to 2 fresh serrano chiles
1 tablespoon olive oil
1/2 small yellow onion, finely chopped
2 garlic cloves, finely minced
1 teaspoon chopped fresh oregano leaves
1/2 teaspoon ground cumin
1 teaspoon Worcestershire sauce
1/2 teaspoon salt

Steps:

  • Preheat broiler to high.
  • Arrange the tomatoes and chiles on an aluminum foil-lined broiler pan skin side up. Broil until their skins start to char and shrivel, about 10 to 12 minutes or until they are soft. Transfer the tomatoes and the chiles to a blender, puree, and set aside.
  • Heat the olive oil in a medium saucepan over medium-high heat. Add the onions and the garlic and cook until soft, 2 to 3 minutes. Stir in the oregano, cumin and Worcestershire sauce. Add the tomato puree and simmer until the sauce is slightly thickened and the flavors have blended, 10 minutes. Season with salt.
  • Serve with various chips and vegetables.

Steps:

  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until slightly browned, about 5 minutes. Cook and stir onion in the bacon grease until onion is transparent, 5 to 10 minutes. Remove bacon from skillet and drain on a paper towel-lined plate; crumble.
  • Stir chopped tomatoes, tomato sauce, cilantro, jalapeno pepper, salt, pepper, and crumbled bacon into onion; bring to a simmer and cook until flavors blend, about 15 minutes.

The best red salsas I've had on the street are a deep, rusty brick color, and they taste definitively of dried chiles, acid and salt. Most people use a combination of dried arbol chiles-the hottest dried chile in the markets-and guajillo or cascabel, which paint the salsa a gorgeous deep-red color. In this simple version, I keep the tomatoes to a minimum and omit onion, so the chiles can shine brighter. It's tongue-swellingly hot, which makes it perfect on just about anything. I've called for eight dried arbol chiles, but you can bump it up to ten for even more fire.

8 to 10 dried arbol chiles
2 guajillo chiles
3 medium cloves garlic, unpeeled
2 ripe plum tomatoes
Salt to taste

Steps:

  • 1 Snip off the stems of the chiles and shake out their seeds as best you can. If the chiles are too dry and brittle, warm them slightly on a gently heated comal, and then remove the seeds. Alternately, keep the seeds in to make a very hot salsa.
  • 2 Heat the comal on low to medium-low and place the unpeeled garlic cloves near the edge of the pan, away from direct heat. Turn occasionally until soft and blackened in spots, 5 to 7 minutes. Peel the garlic cloves once cool enough to handle and set aside in a blender jar.
  • 3 To toast the chiles, work with one at a time so they don't burn. Place each chile near the edge of the comal-again, away from the hottest part of the pan-and turn constantly for 5 to 10 seconds, pressing any wrinkled or folded spots lightly so all parts of the chile skin come into contact with the pan. They are done when the color lightens up in spots and they emit a spicy aroma. (This is a very quick process!) Remove all toasted chiles to a separate bowl and cover with water. Let sit 15 minutes or until the skins are soft. Reserve the soaking water.
  • 4 While the chiles sit, heat the comal to medium or medium-high. Cook the whole tomatoes, turning often with tongs, until soft and blackened in spots. Transfer to a bowl and set aside.
  • 5 Add the hydrated chiles to the blender jar (with the garlic), with 2 tablespoons of the reserved chile water and a generous 1/4 cup water. Blend until smooth. Add the tomatoes and 2 tablespoons more water, plus 3/4 teaspoon salt. Blend again, adding more water and salt if desired. (Note that the saltiness will mute when the still-warm salsa cools.) Serve at room temperature.

I made this sauce one day by fooling around with a recipe in "Border Cooking." I had on hand some great homemade chicken broth and a fresh batch of my Diablo Dust (chile powder made with guajillos and anchos). A good quality chile powder like Gephardt's works nicely, and canned broth should be fine, although, I think homemade is superior. Use this sauce for huevos rancheros, egg dishes, burritos, chimichangas, enchiladas, etc. It is not a table sauce, but is best for topping hot foods.

1 tablespoon olive oil
1 cup chopped onion
2 -3 minced jalapenos
3 cloves chopped garlic
2 tablespoons dry oregano (Mexican, if possible)
1 tablespoon cumin powder
2 tablespoons chili powder
4 cups chicken broth (homemade preferred)
2 (10 ounce) cans rotel
salt and pepper
2 tablespoons chopped cilantro leaves
2 tablespoons chopped green peppers

Steps:

  • Saute onions and jalapenos over a medium heat for 1-2 minutes. Add garlic. Saute another 30 seconds. In a medium size sauce pan, smoke the oregano, cumin, and chile powder over a medium high heat until fragrant. Quickly add chicken stock, then all the rest of the ingredients. Bring to a boil, turn heat to low. Reduce sauce by at least one half. Will freeze.

CHICKEN WITH RANCHERA SALSA

1 1/2 pounds heirloom tomatoes, cut into large cubes
1 small white onion, finely diced (1 cup)
1/3 cup chopped fresh cilantro, plus 1/2 cup leaves for garnish
2 jalapeno peppers, seeded if desired (for less heat) and finely chopped
3 garlic cloves, finely chopped
2 tablespoons plus 1 teaspoon extra-virgin olive oil
Kosher salt
4 boneless, skinless chicken breasts (about 1 1/2 pounds)
1 cup grated pepper Jack cheese (about 4 ounces)
1/4 cup crumbled queso fresco or feta cheese

Steps:

  • Preheat the broiler. In a 13 x 9 x 2-inch flameproof baking dish, toss the tomatoes, onion, chopped cilantro, jalapenos, and garlic with 2 tablespoons of the oil. Season with salt. Broil for about 3 minutes, or until the vegetables begin to soften and char. Remove from the broiler and stir the vegetables.
  • In a medium bowl, sprinkle the chicken with salt and the remaining 1 teaspoon oil and toss to coat. Nestle the chicken into the tomato mixture and turn to coat. Broil for about 12 minutes, or until the chicken is cooked through and the sauce is bubbling and slightly charred on top.
  • Sprinkle the cheeses over the chicken. Broil for 2 to 3 minutes, or until the cheese melts and begins to brown. Sprinkle with the cilantro leaves and serve.

Steps:

  • In a skillet, cook the bacon until done but soft, not crisp. Add the tomatoes, peppers, onions, garlic, cumin, salt and pepper. Bring the mixture to a boil. Reduce the heat to simmer, cover and cook for 10 minutes.
  • Remove from the heat and serve hot over your morning eggs (huevos rancheros), tamales, beans (frijoles) or potatoes (papas). Serve cold with tortilla chips.

This is a medium hot "Table Sauce". It can be served as a "sprinkle on" for everything from enchiladas to scrambled eggs. It makes a welcome addition to a pot of chili. It should not be considered as a dipping sauce unless you've got a fair hot tooth. We like to use serranos because of the heat to flavor ratio. Jalapenos may be used, but they won't yield quite the quality of flavor. It yields a hot, pungent, sweet south of the border flavor that can easily be addictive.

1/4 cup fresh lime juice

  • Stem serranos, and puree along with garlic in blender until smooth adding water if necessary to maintain puree.

  • Bottle in sprinkle top bottles and refrigerate.

This is a recipe for what is marketed as "picante" sauce. Picante is the Spanish word for spicy or spicy hot, and this dish can be adjusted from mild to wild, depending on your taste. I was given the foundation for this recipe by an old girlfriend who still lives in Monterey, Mexico. The original recipe called for boiling the tomato, onion and peppers for about 5 minutes before blending them. Also she only added a little salt and cilantro to her salsa. I "doctored" it up a little and everyone agreed (even the old girlfriend) that it was much more flavorful my way. For the record, I don't boil any ingredient in this recipe. I like the 100% fresh flavor of it. This is the recipe I use to make salsa for my fiance, because, unlike my fiance (and most people) I like mine eardrum burning hot.

4 tomatoes (2 1/2-inch to 3-inch in diameter, the redder the better)
1/2 yellow onion (2 1/2-inch to 3-inch in diameter)
2 dried arbol chiles (3-inch long, stems removed)
1 serrano chili pepper (3-inch long, stem removed)
1 lime, juice and pulp of
1/2 cup of loosely packed cilantro leaf
4 garlic cloves (Aprox 1 1/2 - 2 Tblsp chopped Garlic)
1/4 cup ground cumin
1 teaspoon salt
1 tablespoon paprika (for color) (optional)

Steps:

  • Section the tomatoes and onion into pieces small enough for your food processor or blender to work effectively.
  • I use a blender set on it lowest setting (mine says stir).
  • **In a blender, slowly add all the ingredients, starting with the tomatoes and onions.
  • Make sure not to put too much into your blender bowl at any one time, or it will not chop properly.
  • Once the tomato and onion mixture is nice and smooth, continue to blend and incorporate all the other ingredients.
  • **In a food processor, add all ingredients to the bowl and pulse until the mixture can withstand the continuous operation of the food processor.
  • Process until smooth.
  • FINAL INSTRUCTIONS-- Get some chips and a family member or a friend to help with the final adjustments.
  • I usually have to tweak the amount of salt, cumin, cilantro or garlic to make it "perfect".
  • If the onion or other seasonings are too much, add another tomato.
  • Your salsa can be enjoyed now, but it is best after an overnight stay in the refrigerator.
  • To make it the way I like it, I add one more tomato, one more chile arbol, at least one more large serano pepper and one more teaspoon of salt.
  • I have also substituted the seranos with jalepeños or habeñeros.

This is my favorite salsa. I got the recipe from my mother who has been making it since she was a young girl living with her grandparents on their ranch in Mexico. You can adjust the hotness according to your preference. Serve it over scrambled eggs or on anything you like.

3 medium ripe tomatoes
5 medium jalapeno peppers, stemmed
1 medium onion, diced

Steps:

  • Heat a medium skillet over medium heat. Add oil to the hot skillet and place whole tomatoes and jalapenos in the pan. Cook, turning every 2 minutes, until all sides are scalded. Remove from the heat.
  • Transfer tomatoes and jalapenos carefully to a blender and process until pureed.
  • Cook and stir onion in the same skillet over medium heat until translucent, about 5 minutes. Add tomato-jalapeno puree and pour in water; bring to a simmer. Simmer until thickened, about 5 minutes. Season with salt and serve warm.

When you go out for Mexican food at your favorite little place, and your food's covered with that delicious red sauce, and you wish you could make it at home? Now you can! This is so simple to make! I found this recipe in one of my gazillion cookbooks. I decided to give it a try. I'd been using the same red sauce for years, and loved it, so I'm not sure why I even tried this one. But am I glad I did!!! lol This recipe is mild, so should you want yours more spicy, then you'll want to use the hotter dried chiles. Either way, I'm sure you will love it. Don't be afraid of the dried chiles if this is your first attempt. It really is simple to do, and the end result will be so worth it. Where I buy my dried chiles, actually it's Albertson's, there's a rack in the specialty aisle, and there are cellophane bags hanging up. Usually, the bags have the type of chile and how spicy hot it is. So, that should help you out some. If you can't find any, zmail me and I'll help you. This freezes well.

3 1/2 cups warm water
1 medium onion, chopped
2 garlic cloves, chopped
1/4 cup vegetable oil
1 (8 ounce) can tomato sauce
1 tablespoon dried Mexican oregano (regular will do)
1 tablespoon cumin seed
1 teaspoon salt

Steps:

  • Soak chiles in warm water until softened, about 30 minutes. Drain; strain and reserve liquid. Remove stems and seeds and membranes from the chiles. Cook and stir onion and garlic in oil in a 2-qt. saucepan until onion is tender. Add chiles and 2 cups of the reserved liquid , the tomato sauce, oregano, cumin and salt. Simmer uncovered 20 minutes. Cool.
  • Transfer to blender container; cover and blend on low speed until smooth. Strain. Refrigerate sauce no longer than 10 days.
  • Note: I strain mine in a mesh strainer or colander. It takes a few minutes, but keep thinking of how great this is going to taste!
