A HEARTY GREEN BEAN AND SAUSAGE CASSEROLE
A hearty variation on the traditional green bean casserole that can be used as a main dish or a side.

Steps:
- Crumble the pork sausage into a large skillet over medium-high heat. Cook and stir until evenly browned. Drain grease, and set aside.
- Preheat the oven to 350 degrees F (175 degrees C). Coat a 9x13 inch baking dish with nonstick cooking spray.
- In a large bowl, stir together the cream of mushroom soup, milk, soy sauce, garlic, and pepper. Mix in the sausage, then add the green beans, and stir until evenly coated. Pour half of the mixture into the prepared baking dish. Top with half of the fried onions. Spread remaining green bean mixture over the onions.
- Bake for 30 minutes in the preheated oven. Remove from the oven, and sprinkle the rest of the fried onions over the top. Return to the oven for 5 to 10 more minutes, or until the onions are toasty, and green beans are cooked to your desired doneness. Let rest 5 minutes before serving.

GREEN BEAN CASSEROLE WITH CRISPY SHALLOTS
Steps:
- Preheat the oven to 375 degrees F. Heat the olive oil in a small skillet over medium-high heat until very hot but not smoking. Add 1/4 cup shallots and cook, stirring, until golden brown and crisp, about 2 minutes. Transfer with a slotted spoon to paper towels to drain. Repeat with the remaining shallots, cooking 1/4 cup at a time. Reserve the oil in the skillet.
- Place the green beans in a steamer basket fitted over a pot of boiling water. Cover and steam until bright green and still crisp, about 3 minutes. Heat 1 tablespoon of the reserved shallot oil in a large, deep nonstick skillet over medium-high heat. Add the mushrooms and cook, stirring occasionally, until the mushroom liquid is evaporated and they begin to brown, about 12 minutes. Add the garlic and thyme and cook, stirring, 1 minute. Transfer the mushroom mixture to a bowl. Whisk together the milk and flour until the flour is dissolved. Add the mixture to the skillet and, whisking constantly, bring to a simmer. Reduce the heat to medium low, whisking occasionally, until thickened, 10 to 15 minutes. Remove the pan from the heat and stir in the green beans, mushroom mixture, 1/3 cup parmesan cheese, the parsley, nutmeg, 3/4 teaspoon salt and 1/2 teaspoon pepper.
- Coat a 2-quart baking dish with cooking spray. Spoon the green bean mixture into the prepared dish and sprinkle the top with the crispy shallots and the remaining 2 tablespoons cheese. Bake until golden on top and bubbling, about 20 minutes.

- Heat oven to 375˚F. Oil a 2-quart baking dish. Bring a large pot of salted water to a boil. Add the beans and cook until just tender, 3 to 4 minutes. Drain and run under cold water to cool. Meanwhile, heat 1 tablespoon oil in a large skillet over medium heat. Add the sausage and cook, breaking it up with a spoon, until browned, about 5 minutes. Transfer to a bowl and toss with the breadcrumbs and 2 tablespoons Parmesan. Wipe out the skillet and heat the remaining 2 tablespoons oil over medium heat. Add the onion, season with 1/2 teaspoon salt and 1/4 teaspoon pepper and cook, covered, stirring occasionally, until very tender, 6 to 8 minutes. Stir in the garlic and cook for 1 minute. Whisk in the milk and bring to a simmer. Whisk in the cream cheese, nutmeg, cayenne, and remaining 1/4 cup Parmesan and simmer, stirring occasionally, until slightly thickened, 2 to 3 minutes; stir in the lemon zest and toss with the green beans. Fold in the spinach and transfer to the prepared baking dish. Sprinkle with the sausage mixture and bake until golden brown, 15 to 20 minutes.
HOMEMADE GREEN BEAN CASSEROLE
Steps:
- Preheat the oven to 375 degrees F.
- Bring a large pot of water to a rolling boil, season with 2 tablespoons salt, and blanch the green beans for 5 minutes. Shock the green beans in a bowl filled with ice water, then remove and set aside to dry.
- Melt the butter in a large cast-iron pan or Dutch oven over medium-high heat. Add the shallots and cook until lightly browned. Add the mushrooms and some salt and pepper, and cook until just softened. Add the flour and stir to coat the mushrooms and shallots. Add the chicken stock, whisking vigorously to smooth out any lumps. Whisk in the half-and-half. Bring to a simmer and cook for 3 minutes. Check the seasoning and adjust with more salt and pepper as needed. Add the green beans, then pour the mixture into a 9-by-13-inch baking dish.
- Bake for 30 minutes. Let the casserole rest for 5 minutes. Sprinkle with fried onions to lend some extra crunch. Serve.
CRISPY TOP GREEN BEAN CASSEROLE
This year, my daughter Julie and I made a team effort out of making the green bean casserole for Christmas dinner. I had a recipe I'd wanted to use portions of, and together in the kitchen we made created a new twist on the old standard that was really tasty!

- Preheat the oven to 350 degrees F.
- (If you havent steamed your green beans, begin with those theyll be done, about 20 minutes, by the time you need to mix them into the casserole.).
- Begin the sauce: in a saucepan melt the butter over low heat, then whisk in the flour, stirring continually, and cook for 2 minutes (the mixture will be quite thick).
- Gradually add the milk while whisking, and bring to a simmer; cook, whisking continually, for 3 or so minutes and it thickens.
- Add the concentrated chicken base, celery salt, nutmeg, and white pepper; whisk well to make sure chicken base is dissolved, remove from heat and set aside.
- Begin the filling: in a large nonstick skillet, melt together the olive oil and butter over medium heat; add the onion and garlic, and sauté until onion begins to soften, about 5 to 7 minutes.
- Add the chopped mild green chiles, stir well to combine, and let the mixture brown for about 3 minutes without stirring.
- Add the sliced mushroom, cover, and sauté, stirring occasionally, until mushrooms are tender, about 5 minutes; remove about half of the mushroom mixture from the pan and set it aside.
- In a 1 1/2 quart lightly-sprayed casserole dish, combine the half of the mushroom mixture from the pan, the cooked green beans, and the white sauce; taste test and adjust salt and pepper, if necessary.
- Combine the remaining mushroom mixture with the bread crumbs; combine the melted butter and the sage, then stir it into the crumb mixture.
- Spread the crumb mixture over the beans.
- Bake uncovered for 30 minutes.

Steps:
- Chop Onions, crush garlic and lightly fry in a wok or frying pan.
- Place in a casserole dish.
- Cut each sausage into three pieces and add to the casserole dish.
- Slice mushrooms if required and add to the casserole dish.
- Pour in the tin of baked beans and chopped tomatoes.
- Add chili sauce as required.
- Stir the ingredients together cover with lid and cook at 175 c for approx 50 minutes.
- Serve with Rice or mashed potatoe.

- Preheat oven to 375°F.
- Pour baked beans into a lightly greased 11x7 inch casserole dish.
- Slice hot dogs or sausage into 1/2 inch pieces.
- Chop onion.
- Stir the ketchup, mustard, salt and pepper into beans in pan.
