½ pound skinless, boneless chicken breasts
½ teaspoon garlic salt
½ teaspoon Italian seasoning
1 tablespoon olive oil
2 cups milk
1 large clove garlic, minced
8 ounces fettucine, broken in half
½ cup heavy whipping cream
¾ cup freshly grated Parmesan cheese, plus more for serving

Steps:

  • Slice each chicken breast horizontally into 3 thinner pieces using a sharp knife. Sprinkle each chicken piece with garlic salt and Italian seasoning on both sides.
  • Heat olive oil in a large skillet over medium-high heat. Add chicken and cook until golden and cooked through, about 2 minutes per side. Remove onto a plate.
  • Add milk and garlic to the skillet. Bring to a simmer and add fettuccine. Cook, stirring every 30 seconds to prevent sticking until pasta has softened, about 3 minutes. Reduce heat to medium and cook, stirring every couple of minutes, 6 to 7 minutes more. Stir in cream and Parmesan cheese. Simmer, stirring occasionally, until sauce has thickened and pasta is cooked, about 2 more minutes.
  • Serve immediately and garnish with additional Parmesan cheese if desired.

200 g / 7oz chicken breast, cut in half horizontally
Salt and pepper
1 tbsp olive oil
250 g / 8 oz fettuccine
2 cups milk, any fat %
1 1/2 cups chicken stock / broth
1 large garlic clove, minced
1/2 cup thickened / heavy cream (Note 1)
3/4 cup freshly grated parmesan (Note 2)
Parsley, for garnish

Steps:

  • Sprinkle both sides of the chicken with salt and pepper.
  • Use a skillet large enough to fit the pasta.
  • Heat oil over medium high heat. Add chicken and cook for 2 minutes on each side until golden and cooked through. Remove onto plate and rest for 5 minutes, then slice while pasta is cooking.
  • Add milk, chicken broth and garlic. Bring to simmer then add pasta.
  • Move pasta around every 30 seconds or so until it is softened (around 3 minutes) so it doesn't stick. Once pasta is softened, reduce heat to medium and stir every couple of minutes.
  • At about 9 - 10 minutes, the pasta should be almost cooked but there should still be liquid covering the base of the skillet. Add cream and parmesan and mix.
  • Simmer, stirring occasionally, for ~2 minutes, until sauce is thickened and pasta is cooked. If you cook it too long and the sauce goes gluggy, add a splash of hot tap water - will go back to silky with a few tosses.
  • Adjust salt and pepper to taste and serve immediately, garnished with freshly grated parmesan and parsley!

1 tbsp olive oil
4 skinless boneless chicken thighs, cut in half
300g fettuccine, or tagliatelle
1 tbsp butter
200ml double cream
½ a nutmeg, grated
100g parmesan
parsley, chopped, to serve

Steps:

  • Heat the olive oil in a non-stick frying pan over a medium high heat. Add the chicken thighs and fry for around 10 mins, turning half way, until they are golden brown and cooked through. Set aside to cool a little, then use two forks to shred.
  • Bring a pan of salted water to the boil and add the pasta, cook for 1 minute less that package instructions. Whilst the pasta is cooking, add the butter to the frying pan over a medium heat, scraping the bottom a little to get any of the browned bits. Tip in the cream along with the nutmeg and bring to a simmer. Add the chicken back to the pan.
  • Once the pasta is cooked, use tongs to transfer the pasta straight from the water into the frying pan with the cream mixture. Sprinkle most of the parmesan over and use the tongs to toss it all together, adding a splash of the pasta water if it looks a little stiff. Season well, then tip into bowls. Top with the remaining parmesan, a scattering of parsley, and black pepper.

Olive oil, for tossing
12 ounces boneless, skinless chicken breast (about 2)
1 stick (8 tablespoons) unsalted butter
2 cups heavy cream

Steps:

  • Bring a large pot of water to a boil, and salt generously. Add the pasta and cook according to package directions until al dente (tender but still slightly firm). Drain and toss with a splash of oil.
  • Meanwhile, slice the chicken into 1/4-inch-thick strips, and lay them on a plate or a sheet of waxed paper. Season with salt and pepper.
  • Heat a large skillet over medium heat. Add 2 tablespoons of the butter. When the butter melts, raise the heat to medium-high and add the chicken in 1 layer. Cook, without moving the pieces, until the underside has browned, 1 to 2 minutes. Flip the pieces, and cook until browned and cooked through, 2 to 3 minutes more. tony creole seasoning
1 (8 ounce) package Philadelphia Cream Cheese
1/2 cup butter
1/2 cup milk
3/4 cup parmesan cheese or 3/4 cup any Italian cheese
1 teaspoon white pepper
1 (16 ounce) package cooked angel hair pasta (drained and not sticking together) or 1 (16 ounce) package pasta, of your choice (drained and not sticking together)

  • Cook your pasta, while your chicken sautes, then add a little olive oil or butter to pasta to prevent sticking, lay on large platter or casserole dish; set aside.

3/4 to 1 pound boneless skinless chicken breasts (cut in bite size pieces)
1 tablespoon olive oil
1 tablespoon butter
salt and pepper
2 cloves garlic (grated)
1 1/2 cups chicken stock
1 cup milk (2% used; may use whole milk)
1 1/2 cups heavy cream
8 ounces short pasta (dry, uncooked (see post for pasta options))
1 cup parmesan cheese (grated)
1/4 teaspoon nutmeg
2 tablespoon fresh parsley (chopped)

Steps:

  • Drizzle the olive oil and add the butter to a deep skillet or pot over medium to medium-high heat then add the bite size chicken pieces to the hot skillet.
  • Season with salt and pepper to taste then leave the chicken in place without moving for 2 minutes letting the chicken sear. Turn the pieces over and continue until they're cooked through and remove from the skillet.
  • In the same skillet (don't wash it!) reduce the heat to low then add the grated garlic, chicken stock, milk, heavy cream, 1 teaspoon of salt and the dry (uncooked) pasta.
  • Cover, bring to a boil then reduce the heat and simmer with a light boil for 10-14 minutes or until the pasta is al dente. Stir occasionally so the pasta doesn't stick to the bottom of the pan.
  • Return the chicken to the pot, fold in the chopped parsley then stir. Taste and adjust salt as needed then serve right away with extra parmesan cheese at the table.

8 oz (250 g) brown mushrooms, (sliced)
2 cups (500 ml) chicken broth, (or stock)

Extra salt and pepper, (to taste)
8 oz (250 g) dry pasta, (penne or fettuccini)

Steps:

  • Season chicken thighs with salt and pepper.
  • Heat half of the oil in a large pot over medium-high heat. Add the chicken thighs and sear on both sides until golden brown and cooked through. Remove chicken and set aside.
  • Add the remaining oil in the pot. Fry onion until transparent, stirring occasionally (about 2 minutes).   • Cook fettuccini in a pot of salted water (4 qts water, 1 Tbsp salt,) according to package instructions then drain and set aside.

2 tablespoons unsalted butter
1 teaspoon minced garlic
4 cups chicken broth, preferably low-sodium
1 package (1 pound) penne rigate or ziti
1 1/2 cups heavy (whipping) cream or half-and-half, warmed
1 cup freshly grated Parmesan, plus more for serving
1/4 cup chopped fresh flat-leaf parsley (optional)

Steps:

  • Cut the chicken breasts into 1-inch pieces. Season with salt and pepper.
  • Melt the butter in a very large skillet over medium-high heat. Add the chicken, in batches if necessary, and sauté until nicely browned on the outside, but still a bit pink inside, about 4 minutes (the pieces don't have to be browned on all sides; two sides is fine). Remove the chicken and set aside on a plate.
  • Do not clean the pan! Those brown bits on the bottom of the pan are going to add flavor to the sauce. Add the garlic to the pan and sauté over medium heat until you can smell it, 30 seconds.
