FLATTENED CORNISH GAME HENS WITH GARLIC-CITRUS MARINADE
A delicious entree that is easy enough for a weekday dinner, yet pretty enough for a dinner party. Serve with stir-fried summer squash, a salad and french bread. The recipe comes from Bon Appetit.

Steps:
- Prepare BBQ (Medium heat).
- Combine olive oil, chopped thyme, garlic,lemon peel, lime peel, honey, salt, and pepper in a baking dish and stir marinade to blend well.
- Place hens on work surface and cover with plastic wrap and pound gently with mallet to flatten slightly.
- Place hen halves in marinade in dish, using fingers, rub both sides of hens with marinade.
- Let marinate 20 minutes at room temperature.
- Grill hen halves until just cooked through and skin is lightly charred, brushing with remaining marinade, about 12 minutes per side.
- Arrange hen on plates and garnish lemon wedges, lime wedges, and fresh thyme sprigs.

Steps:
- Soak clay pot, top and bottom, in cold water for 15 minutes.
- Drain.
- Rinse hens, pat dry; reserve giblets for another use.
- Sprinkle hens with salt, pepper and nutmeg.
- Mix herbs in cream cheese to taste.
- Place half of mixture inside each hen.
- Place hens, breast side up in cooker.
- Drizzle with margarine.
- Place cooker in cold oven.
- Set oven to 450 degrees.
- Bake until hens are tender and light brown, about 1 1/4 hours.
- Remove cover; bake about 10 more minutes, until brown. (Don't open frequently.).
- Serve with cooking juices over hens.

Steps:
- Preheat oven to 425 degrees F (220 degrees C). Line the inside of a roasting pan with aluminum foil.
- Place hens, breast-side up, in the prepared roasting pan.
- Mix 1 tablespoon garlic and herb seasoning with 1 package cream cheese in a bowl. Stuff cream cheese mixture in 1 hen. Repeat with 1 tablespoon garlic and herb seasoning and remaining 1 package cream cheese; stuff the second hen.
- Brush hens with melted butter; sprinkle with remaining 1 tablespoon garlic and herb seasoning. Season with salt. Cover hens with aluminum foil.
- Bake in the preheated oven for 1 hour. Remove aluminum foil and bake until no longer pink at the bone and the juices run clear, about 15 more minutes. An instant-read thermometer inserted into the thickest part of the thigh, near the bone, should read 165 degrees F (74 degrees C).

- Blend 3 Tbs of butter with the sage, garlic, lemon zest, salt and pepper.
- Separate breast and leg skin from hens.
- Press the mixture under the skins and spread evenly.
- Melt remaining butter and add paprika Brush this butter over the hens.
- Place hens in single layer in shallow oiled pan.
- Roast at 400 F, uncovered, 40 to 45 minutes.
- Baste twice with pan drippings.

- Sprinkle the seasoning salt on the birds.
- Stuff 2 cloves in each hen. Sprinkle the rest of the cloves in the baking dish.
- Place the hens on top of the garlic. Add the onions.
- Preheat oven 350*.
- Cover with dish with foil.
- Bake 1 hour.
- Note: Uncover after 1 hour to brown the birds. About 15 to 20 minutes or so. Check.
- Mixed Sauce for Mashed Potatoes:.
- Take all cooked garlic cloves and cooked onion pieces and the drippings. Place in a blender and pulse twice.
- Add to mashed dry potatoes. Add milk, salt and pepper. Serve with margarine or butter.

- Preheat the oven to 350 degrees F.
- Coat each Cornish hen with 2 tablespoons of the butter and sprinkle with salt and pepper. Into the cavity of each bird, insert a lemon half, an onion quarter, half a garlic head and 3 thyme sprigs. Set aside.
