- Spread two slices of bread with mayonnaise. Layer with turkey, tomato and cheese; top with remaining bread. Spread outsides of sandwiches with butter. On a hot griddle, grill sandwiches until golden brown, 3-4 minutes on each side.

- In a small bowl, combine the first eight ingredients. Pour 1/4 cup yogurt mixture into a large resealable plastic bag; add turkey. Seal bag and turn to coat; refrigerate turkey for 8 hours or overnight. Cover and refrigerate remaining yogurt mixture., Drain and discard marinade. Moisten a paper towel with cooking oil. Using long-handled tongs, lightly coat the grill rack. , Grill, covered, over medium heat or broil 4 in. from the heat for 15-20 minutes or until a thermometer reads 170°, turning occasionally. Let stand for 5 minutes before slicing., To remaining yogurt mixture, add the tomatoes, cucumber, onion, green pepper, cheese and olives., Grill pita halves, uncovered, over medium heat for 1-2 minutes on each side or until warm. Fill each pita half with sliced turkey and 1/3 cup yogurt mixture.,

PITA GRILLED CHEESE
Quick easy pita grilled cheese is loaded with Mediterranean flavors of spinach, olive, and sun-dried tomato stuffed inside pita bread with cheddar cheese.

- Heat oil in a large skillet over medium-high heat until the hot oil sizzles, about 1 minute. Add spinach and sauté until completely wilted, about 2-3 minutes. Season with salt, pepper, and garlic powder.
- Stir in olives and sun-dried tomatoes. Mix well and set aside.
- Open each sliced pita pocket and arrange 1 slice of cheddar cheese inside (You can tear the slice in half and overlap them to make it easier to fit in). Top with 3 tablespoons of the spinach filling, then layer with another slice of cheese on top.
- Heat a clean skillet over medium-low heat for 1 minute and use a silicone brush to brush with a little bit of oil. Place two stuffed pita halves on the hot pan at a time and cook until crispy and the cheese melts, about 2 minutes per side. Flip them over once and press down using the back of a flipper spatula.
- Repeat with the remaining pita pockets and serve warm.
JAZZED UP GRILLED CHEESE AND TURKEY PITA
My mother gave me the idea, by kicking the boring grilled cheese sandwich up a notch. Then I experimented by using pita bread and it is not only quick and easy but savory for when I want something light but heartier than just the everyday sandwich.

- First step is to chop garlic up finely, preferrably in a mortar until is smashed all to pieces:}.
- Then combine garlic and margarine so that it makes a garlic butter of it's own in a separate bowl (you should have alot left over for next time or additional sandwiches).
- Cut pita's in half and fill your pocket pitas as you like them.
- Coat the pita's on the outside with the garlic butter.
- Heat a pan up and grilled them to taste.
- Enjoy.

This is an healthier alternative to bruschetta using pita bread instead of a baguette or french stick. You can either use mayonnaise or cheese spread to mix with the pesto & either tomato slices or diced tomatoes. I use a soft cheese spread, the ones that are sold in triangles, they are really creamy & mix really well with the pesto.

- Boil noodles until done.
- While noodles are cooking, grease a rectangular glass casserole dish.
- After noodles are drained and have cooled for a few minutes, put them in casserole dish and mix with beaten egg.
- Set aside.
- In a medium saucepan, melt butter on medium-low heat and add flour to make a paste.
- Add half and half and bring to a boil on medium-high heat.
- Reduce heat and add velveeta and cream cheese in small chunks.
- Stir and add seasonings (last four ingredients).
- After all the cheese is melted and the sauce has a medium thick consistency (you may need to play around with the half and half or milk to get the consistency you prefer), pour it over the noodles.
- Stir noodles with sauce until they are combined.
- Sprinkle parmesan over the top.
- Bake in a preheated oven at 375 degrees for 30-45 minutes (I wait until it's a little browned).

- preheat oven to 350 degrees.
- lay thawed phyllo on a flat surface and cover with damp tea towel.
- mix cheese, eggs and salt - set aside.
- on an 11" x 17" greased baking pan lay phyllo to cover.
- brush with melted butter.
- repeat until there are six layers.
- spread cheese filling evenly over phyllo, leaving about 1/2" around the edges.
- cover with phyllo brushed with butter.

- In shallow, flat dish, combine first 7 ingredients.
- Rub mixture over turkey, cover and refrigerate 1 hour.
- Grill butterflied turkey 5-6 minutes or til done, turning once.
- Remove to plate, and squeeze lime juice over tenderloins.
- Slice into 1/4 inch slices.

- Lightly butter one slice of bread and place on plate, butter side down.
- Place thin slices of Velveeta, to cover, or thickness you like, on upturned bread.
- Place 3 slices cooked bacon on top of Velveeta.
- Place 1 thick slice of tomato on top of bacon.
- Lightly butter one slice of bread and place on top of filling, butter side up.
- Heat frying pan on medium heat. When hot, slide sandwich into pan. Cook until lightly browned. Flip sandwich and cook other side until lightly browned.
- Cool a bit before eating, especially if made for a small child. Enjoy!

This recipe might sound strange... who ever thought of using mayo on a grilled cheese instead of butter?? Try it, you'll see. It makes a great crunch on the bread. And you can use fat free mayo... - Sautee the Spinach. In a grill pan, heat 1 tablespoon extra-virgin olive oil over medium-high heat until shimmering. Add the spinach and cook for a couple of minutes, tossing, until wilted. Transfer the spinach to a plate for now and turn the heat off.
- Assemble the sandwiches. Open up the pita pockets (it helps to warm the pita so they don’t break when you open them). Spread the feta on the bottom followed by basil pesto. Spoon a bit of the wilted spinach on top. Add the mozzarella and sundried tomatoes.
- Grill the pitas. Heat the grill pan again over medium-high. Brush the pitas with extra virgin olive oil on both sides. Arrange the pita sandwiches in the heated pan, making sure they are all touching the hot pan. Cook for 1 to 2 minutes or so on one side, applying pressure on the top part of the sandwich with the back of a spatula, turn over and cook for another couple minutes, applying pressure again with your spatula, until the cheese is melted and the bread gains some beautiful char marks. Manage the heat to make sure the bread is well-crisped but not burned and the mozzarella is melted (you may need to cover the pan very briefly).
