1/2 cup chopped green onions (8 medium)
1 red baking apple, unpeeled, chopped
4 cups unseasoned dry bread cubes
1/2 cup raisins
1/4 teaspoon salt
1/4 teaspoon ground allspice
1/4 cup apple juice
4 Cornish game hens (24 oz each), thawed if frozen
1/4 teaspoon salt
1/8 teaspoon pepper
1/4 cup apple jelly
2 tablespoons butter or margarine

Steps:

  • Heat oven to 350°F. In 10-inch skillet, melt 3 tablespoons butter over medium-high heat. Add onions and apple; cook and stir until tender. Stir in remaining stuffing ingredients. In ungreased 15x10x1-inch pan, spread stuffing.
  • Split each game hen in half. Sprinkle lightly with salt and pepper. Place hen halves, skin side up, over stuffing. In 1-quart saucepan, melt jelly with 2 tablespoons butter over low heat; brush over hens.
  • Bake uncovered 1 hour to 1 hour 15 minutes or until hens are fork-tender and until juice of hens is clear when thickest pieces are cut to bone (at least 165°F).

4 Cornish game hens, about 1 1/4 pounds each, giblets removed and discarded
Salt and ground black pepper
2 teaspoons olive oil
1/2 cup minced scallions
2 cloves garlic, minced
1 teaspoon dried thyme
1 cup instant brown rice
1 1/2 cups reduced-sodium chicken broth, divided
1 cup sun-dried tomatoes in olive oil, drained and chopped
1 small green bell pepper, chopped
Prepared cranberry sauce, optional

Steps:

  • Preheat oven to 450 degrees F.
  • Rinse hens inside and out and pat dry. Season the hens, inside and out, with salt and black pepper. Place hens in a large roasting pan and set aside.
  • Heat oil in a medium saucepan over medium heat. Add scallions and garlic and saute 2 minutes. Add brown rice and thyme and stir to combine. Add 1 cup of the chicken broth, cover and bring mixture to a simmer. Allow rice to cook for 3 minutes then add the sun-dried tomatoes and bell pepper. Season, to taste, with salt and black pepper.
  • Remove from heat and spoon rice mixture loosely into cavity of hens. Pour remaining 1/2 cup of chicken broth into bottom of pan.
  • Place hens in oven and immediately reduce oven temperature to 350 degrees F. Bake 45 minutes to 1 hour, or until juices from thigh run clear when pierced with a fork, basting every 15 minutes with the pan juices.
  • Remove the hens from the oven and transfer to a platter. Pour the pan juices over top and serve.
  • Serving suggestion: Serve the stuffed hens with cranberry sauce and a side dish of fresh or frozen snow peas sauteed in a little olive oil and seasoned with salt and crushed red pepper.

1/2 cup raisins
1/4 cup apple brandy or cognac
1 loaf stale sliced white bread
6 small Cornish game hens
2 tablespoons olive oil
6 tablespoons unsalted butter, at room temperature
1 cup finely diced celery
1/2 cup finely diced onion
2 tablespoons minced garlic
1/2 cup chopped flat leaf parsley leaves
1/2 cup toasted pine nuts
Approximately 1 1/2 cups chicken stock or canned chicken broth
Coarse salt and freshly ground pepper
1 teaspoon paprika

Steps:

  • Preheat the oven to 350 degrees.
  • Combine the raisins and brandy in a small bowl. Set aside for about 15 minutes to allow the raisins to plump slightly.
  • Trim the crusts from the bread and cut the slices into 1/2-inch cubes. Place the bread cubes on a baking sheet in the preheated oven and bake for about 15 minutes or until golden brown. Remove from the oven and transfer the cubes to a mixing bowl. Set aside. Do not turn off the oven.
  • Fill a large mixing bowl with lightly salted cold water and, 1 at a time, thoroughly rinse each hen in the salted water. Place the rinsed hens under cold running water to remove excess salt. Drain well and pat dry. Set aside.
  • Drain the liquid from the raisins, separately reserving both the raisins and the liquid.
  • Combine the oil with 2 tablespoons of the butter in a medium saute pan over medium heat. Add the celery, onion and 1 tablespoon of the garlic and saute for 3 minutes. Add the reserved soaking liquid from the raisins and cook, stirring frequently, for about 5 minutes or until the liquid has evaporated. Stir in the parsley, pine nuts, and reserved raisins. Scrape the mixture into the reserved toasted bread cubes and add just enough chicken stock or broth to moisten without letting the bread cubes get soggy. Season, to taste, with salt and pepper.
  • Using a large spoon, lightly push some stuffing into the cavity of each bird. (Do not pack the stuffing in tightly or it will get very soggy and may not cook properly).
  • Combine the remaining butter and garlic and coat each hen with a light layer of the seasoned butter. Sprinkle lightly with paprika and season to taste with salt and pepper. Place the hens in a roasting pan. Cover the pan with aluminum foil and place in the preheated oven. Roast for 20 minutes. Remove the foil and continue to roast for an additional 20 minutes or until the hens are golden brown and an instant-read thermometer inserted into the center of the bird and into the stuffing reads 165 degrees. Remove from the oven and serve.

  • Spray the broiler rack with nonstick spray; preheat the broiler. Broil the hens 7 inches from the heat, skinned side down, 15 minutes. Turn the hens and broil until cooked through, 5-10 minutes more.

8 Cornish game hens (20 to 24 ounces each)
1/4 cup butter, softened
1/2 teaspoon salt
1/2 teaspoon pepper
2 cups unsweetened apple juice
1 tablespoon honey
1 tablespoon Dijon mustard
PECAN RICE:
2 tablespoons butter
1-1/2 cups uncooked long grain rice
2 teaspoons ground cumin
1 teaspoon curry powder
4 cups reduced-sodium chicken broth
1 cup chopped pecans, toasted
3 green onions, thinly sliced
1/2 cup golden raisins

Steps:

  • Tuck wings under hens; tie drumsticks together. Rub skin with butter; sprinkle with salt and pepper. Place hens breast side up in a shallow roasting pan., Bake, uncovered, at 350° for 1 hour. Meanwhile, place apple juice in a small saucepan. Bring to a boil; cook until reduced by half. Remove from heat. Stir in honey and mustard. 4 Cornish hens (I used frozen ones- but fresh would be just as yummy)
2 sprigs fresh basil
2 sprigs fresh rosemary
2 sprigs fresh thyme
1/2 garlic clove (diced or chopped)
1/4 cup unsalted butter (I cheated and bought some fresh "poultry" herbs- just picked out what I needed)
4 ounces extra virgin olive oil (extra virgin olive oil)
2 tablespoons of fresh diced red peppers
4 jona gold apples (sliced or diced whichever you prefer)
1 (8 ounce) bag of butter & herbed croutons
1/2 cup unsalted butter (melted)
2 sprigs fresh rosemary
1/2 garlic clove (freshly chopped)
1 small vidalia onion (finely chopped)
1/4 cup scallion (chopped- 1-inch pieces so it adds color & flavor)

Steps:

  • 1- Prep hens- make sure you clean them well.
  • 2- Combine all of the MARINADE mixture and marinate the hens for 2 hours.
  • 3- Combine all of the STUFFING ingredients- melt the butter and pour it over the croutons, add garlic, onion and rosemary add the chopped/diced apples last to the mixture before stuffing the hens.
  • 3- Preheat the oven to 425- Arrange marinated hens in a large glass baking pan- prior to stuffing them make sure that you add some salt & pepper also set aside some of the marinade so that you can brush/baste a couple of times while they are cooking.
  • 4- Cook for about an hour and a half checking on them every 1/2 hour ( I covered my hens with foil until the last 20 minutes because I wanted the hens to have a nice color)
  • For those who like more robust flavor add additional herbs (to taste).

2 tablespoons chopped onion
⅓ cup uncooked wild rice
1 cup water
1 cube chicken bouillon
½ teaspoon salt
2 Cornish game hens

  • Melt 3 tablespoons butter in a medium saucepan over medium heat. Stir in the almonds, onion, and uncooked wild rice. Saute 5 to 10 minutes. 2/3 cup wild rice
2 cups water
1/4 teaspoon salt
1 small red onion
1/3 cup drained dried tomatoes packed in oil (about 2 1/2 ounces)
1 shallot
1/2 cup packed fresh parsley leaves
2 fresh turkey sausage links (about 6 ounces total)
1 tablespoon vegetable oil
two 1 1/4-pound Cornish hens
1 tablespoon unsalted butter
1 cup Tawny Port
2 cups chicken broth
2 teaspoons arrowroot
2 tablespoons water

Steps:

  • Make stuffing:
  • In a fine sieve rinse rice well. In a 1 1/2-quart saucepan bring 2 cups water to a boil with rice and salt and simmer, covered, 45 to 50 minutes, or until rice is tender. Drain rice in sieve.
  • While rice is simmering, separately chop fine onion, tomatoes, shallot, and parsley. Remove and discard casings from sausages and in a 12-inch non-stick skillet cook sausages in oil over moderate heat, stirring and breaking up lumps, until no longer pink. Add onion, tomatoes, and shallot and cook, stirring, until onion is softened. Stir in rice and parsley and season with salt and pepper. Cool stuffing completely. (Stuffing may be made 1 day ahead and chilled, covered.)
  • Preheat oven to 350° F and butter a 1-quart baking dish.
  • Rinse Cornish hens inside and out and pat dry. Season hens inside and out with salt and pepper and fill cavities with some of stuffing. Tie ends of drumsticks of each hen together with kitchen string and transfer remaining stuffing to baking dish.
  • In cleaned non-stick skillet heat butter over moderately high heat until foam subsides and brown hens on all sides. Arrange hens on a rack set in a flameproof roasting pan and add 3/4 cup each of Port and broth. Roast hens in upper third of oven, basting every 15 minutes, 50 to 55 minutes total, or until a thermometer inserted in thickest part of a thigh (be careful not to touch bone) registers 170° F.
  • During last 30 minutes of roasting hens, add 1/4 cup broth to stuffing in dish and bake, covered, in lower third of oven 30 minutes.
  • Transfer hens to a cutting board and let stand 15 minutes. Remove rack from pan and add remaining 1/4 cup Port. On top of stove deglaze pan over moderately high heat, scraping up brown bits, and transfer liquid to a 1-quart saucepan. Boil liquid until reduced to a glaze and add remaining cup broth. Bring broth to a simmer.
  • In a small bowl stir together arrowroot and 2 tablespoons water and whisk into broth. Reduce heat to low and cook, whisking, until slightly thickened (do not let boil). Season with salt and pepper. Discard string from hens and with a sharp knife halve hens lengthwise.
  • Arrange 1 hen half and some baked stuffing from dish on each of 4 plates and drizzle with sauce.

1 package (6 ounces) long grain and wild rice mix
2 tablespoons butter, divided
1/2 cup chopped pecans
1-1/3 cups orange juice
1 cup water
1/4 cup raisins

  • Set the seasoning packet from rice mix aside. In a saucepan, melt 1 tablespoon butter. Add rice and pecans; cook and stir over low heat for 10 minutes or until rice is golden brown. Stir in the orange juice, water, raisins and contents of seasoning packet; bring to a boil over medium heat. Reduce heat; cover and simmer for 25 minutes or until liquid is absorbed. , Spoon about 1/2 cup rice mixture into each hen; refrigerate remaining rice mixture. Tie legs of each hen together; turn wing tips under backs. Place on a greased rack in a roasting pan. Melt remaining butter; brush over hens. Sprinkle with salt and pepper., Bake at 350° for 1 to 1-1/4 hours or until a thermometer reads 165° when inserted in center of stuffing and thigh reaches at least 170°. Baste occasionally with pan drippings. Heat reserved rice mixture; serve with hens.
