I know there are a lot of fancier versions of corned beef on here, but this is the way my Mum always makes it, and my sister, and until now, it has always been my way of doing it too. I plan to start trying some of the other recipes on here, but something tells me I'll keep coming back to this one.

1 kg corned beef
2 tablespoons apple cider vinegar
2 tablespoons tomato sauce
2 tablespoons brown sugar
6 carrots, cut into large chunks

Steps:

  • Place vinegar, sugar, and sauce into the crockpot. Add about a cup of water and blend all the ingredients.
  • Add silverside, and add enough water to cover. Cook on high for at least 4 hours, adding the carrots for the last hour.
  • I like to leave mine simmering in the crockpot for asd long as possible, all day is best, but 4 hours is enough.
  • To serve, cut the meat against the grain, and serve with the carrots, and some mashed potatoes, green beans, and white sauce. Yum!

The way my mum made it, the way I make it. Mum used to cook her veggies (potatoes, carrots, parsnips, tiny onions) in the water, putting them in about 45 minutes before the meat was cooked. I find them over salty done this way. Reserve a half a cup of strained cooking liquid to make my Mustard Sauce for Corned Beef recipe #21617.Leftovers make good sandwiches with relish or chutney.

2 tablespoons sugar
2 tablespoons vinegar
2 tablespoons ketchup
10 peppercorns, lightly crushed
3 cloves
1 onion, peeled, quartered
2 kg corned beef (silverside is good)

Steps:

  • Place all ingredients in a large saucepan, making sure there is enough water to cover the piece of meat.
  • Bring to the boil, then cover and reduce heat to a simmer and cover with a lid.
  • Cook for about 2 hours, or until very tender.
  • Allow to rest in the water for about 20 minutes before slicing.
  • Recommend serving with Mustard Sauce for Corned Beef recipe#21617.

This is THE BEST corned beef recipe ever. It's from 'The Brooklyn Cookbook' by Lyn Stallworth and Rod Kennedy, Jr. The secret is that it's roasted not boiled. I usually cook 2 pieces of meat - as much as I can fit in my large roasting pan - to be sure there are leftovers. ;) I either roast my cabbage in wedges or make one of the MANY wonderful cabbage dishes here. Please don't just boil the stuff! .

5 lbs packaged ready-to-cook corned beef (or more)
1 large onion, sliced
2 large oranges, sliced
3 tablespoons pickling spices
3 stalks celery, with leaves
1/4 cup water

Steps:

  • Preheat the oven to 300°F.
  • Line a roasting pan with a double layer of heavy-duty aluminum foil, enough to wrap the meat tightly.
  • Rinse the corned beef and pat it dry. Place it on the foil. Arrange the onion and orange slices over and around the meat. Sprinkle on the pickling spices, lay on the celery stalks, and pour on the water. Wrap very tightly and pinch the edges well to seal.
  • Bake the corned beef for 4 hours, or until a few bubbles begin to escape.

2 quarts water
1 cup kosher salt
1/2 cup brown sugar
2 tablespoons saltpeter
1 cinnamon stick, broken into several pieces
1 teaspoon mustard seeds
1 teaspoon black peppercorns
8 whole cloves
8 whole allspice berries
12 whole juniper berries
2 bay leaves, crumbled
1/2 teaspoon ground ginger
2 pounds ice
1 (4 to 5 pound) beef brisket, trimmed
1 small onion, quartered
1 large carrot, coarsely chopped
1 stalk celery, coarsely chopped

Steps:

  • Place the water into a large 6 to 8 quart stockpot along with salt, sugar, saltpeter, cinnamon stick, mustard seeds, peppercorns, cloves, allspice, juniper berries, bay leaves and ginger. Cook over high heat until the salt and sugar have dissolved. Remove from the heat and add the ice. Stir until the ice has melted. If necessary, place the brine into the refrigerator until it reaches a temperature of 45 degrees F. Once it has cooled, place the brisket in a 2-gallon zip top bag and add the brine. Seal and lay flat inside a container, cover and place in the refrigerator for 10 days. Check daily to make sure the beef is completely submerged and stir the brine.
  • After 10 days, remove from the brine and rinse well under cool water. Place the brisket into a pot just large enough to hold the meat, add the onion, carrot and celery and cover with water by 1-inch. Set over high heat and bring to a boil. Reduce the heat to low, cover and gently simmer for 2 1/2 to 3 hours or until the meat is fork tender. Remove from the pot and thinly slice across the grain.

8 ounces carrots (Chopped)
3 tablespoons virgin olive oil
3 bay leaves
4 lbs corned beef brisket
2 cups Guinness stout (Black Lager)
4 cups beef stock
1/4 cup pickling spices
4 ounces side bacon (Cooked & Chopped)
6 cups vegetable stock
4 lbs yukon gold potatoes (Chopped)
1 tablespoon fine sea salt
1 lb savoy cabbage (Sliced Thin)
1 1/2 cups heavy cream
5 tablespoons unsalted butter
4 scallions (Chopped)
2 tablespoons parsley (Chopped)
2 tablespoons thyme (Chopped)
1 teaspoon white pepper
1/4 teaspoon fresh nutmeg (Grated)
1 cup creamed horseradish

Steps:

  • Pre-heat oven to 400°F.
  • Heat Dutch Oven add 1-tablespoon olive oil, bay leaves, vegetables and saute' 4-5 minutes.
  • Add remaining olive oil and sear Beef Brisket on both sides. Add 1/4 cup Guinness Black Lager and reduce by one-half. Add Stout, beef stock, pickling season and cover Dutch Oven. Place in pre-heated oven, reduce to 250°F and braise for 5-6 hours.
  • One hour before the Corned Beef is done start preparing the "Colcannon".
  • In a large pot add vegetable stock, potatoes and fine sea salt. Cook potatoes 10-15 minutes or until they are done. Strain potatoes and reserve water. Add 3 tablespoons butter and hand mash potatoes. Season with salt and pepper to taste.
  • Core cabbage and slice very thin. Boil cabbage in potato water and cook until tender. Season with sea salt and black pepper to taste. Hold cabbage warm and strain.
  • In a small saucepan bring cream to a full boil and reduce to a simmer. Wisk in butter, scallions, parsley, thyme, white pepper and nutmeg. Simmer for 2-3 minutes. Reseason with sea salt and white pepper to taste.
  • Remove brisket, place on a cutting board to rest before slicing.
  • In a large pan combine cabbage (strained), cream, bacon bits and simmer for 3-4 minutes. Fold in mashed potatoes and remaining butter. Mix Colcannon to a smooth and creamy consistency. Season with salt and pepper to taste.
  • Place Colcannon in 6 large bowls and add sliced Corned Beef. Add a tablespoon butter, laddle some Beef Broth over Colcannon and serve.
  • Place a bowl of creamed horseradish on the table.
  • Garnish with sprigs of fresh parsley.

1 3/4 lbs onions, spiced or unspiced
2 1/2 lbs carrots
6 lbs corned beef brisket
1 cup malt vinegar
6 ounces stout beer (such as Guinness)
1 tablespoon mustard seeds
1 tablespoon coriander seed
1/2 tablespoon black peppercorns
1/2 tablespoon dill seed
1/2 tablespoon whole allspice
2 bay leaves
3 lbs cabbage, rinsed
2 1/2 lbs small red potatoes
1/2 cup coarse grain mustard
1/2 cup Dijon mustard
horseradish

Steps:

  • Use a 14 to 20 qt. pan.
  • Coarsely chop enough onions and carrots to make 1 cup each.
  • In pan, place onions and carrots, corned beef with any liquid from meat, vinegar, stout, mustard seed, coriander, peppercorns, dill, allspice, and bay leaves.
  • Add water to barely cover beef.
  • Cover pan and bring to a boil over high heat.
  • Simmer till meat is tender when pierced, 2 1/2 to 3 hours.
  • Meanwhile, cut remaining onions into wedges.
  • Cut remaining carrots into 2 inch lengths, halve them lengthwise if large.
  • Cut cabbage in half through cores, then into wedges.
  • Scrub potatoes.
  • Add onions, carrots and potatoes to tender corned beef, place cabbage on top.
  • Cover and return to simmering over high heat; reduce heat and simmer till cabbage is tender when pierced, 15 to 20 minutes.
  • With slotted spoon, scoop out vegetables onto warm serving dishes.
  • Using tongs and a slotted spoon, remove beef to a cutting board.
  • Cut off fat.
  • Slice meat across grain, place on warm platters.
  • Serve meat and vegetables with mustards.
