CARAMELIZED RIPE PLANTAINS

4 ripe plantains
1 tablespoon butter
1 tablespoon sugar
Vanilla ice cream, for serving

Steps:

  • Peel the plantains and slice them into 1/2-inch rounds. Heat the butter to foaming in a heavy skillet over medium heat. Add the plantain slices to the butter and cook for 5 to 8 minutes, or until they are lightly browned and slightly caramelized. Sprinkle the plantain slices with the sugar, allow the sugar to caramelize slightly, then remove the plantains from the skillet. Serve warm.
  • These plantain slices are also particularly good when served over vanilla ice cream, topped with the caramelized butter from the pan.

Plantains cannot be eaten raw like regular bananas. They are ripe when they are black and just starting to soften to the touch. If plantains are green allow them to ripen at least 10 days or put in a paper bag to speed up the process.

¼ cup vegetable oil (60 ml)
2 ripe plantain, peeled, cut on the diagonal into ¼-inch slices
Flour, for dredging
Salt and Pepper

Steps:

  • In large skillet, heat oil on high. Lightly smash the slices of plantains using a large, flat meat tenderizer or a heavy-bottomed pot. Dredge plantain slices in flour very lightly. Fry for 2 minutes per side or until golden. Transfer to tray lined with paper towel to drain. Season the smashed plantains with salt and pepper.

4 ripe plantains (ripe plantains are black)
1 tablespoon vegetable oil
1 1/2 tablespoons sugar

Steps:

  • Slice plantians 1/2 inch wide.
  • Heat skillet over medium heat and add oil.
  • When oil is hot add plantains and fry until golden brown and slightly crisp. About 5-8 minutes.
  • Sprinkle with sugar and wait until it carmelizes.
  • Remove from skillet and drain oil. Cool for 10 minutes before serving.
