2 pouches (6.5 oz each) Betty Crocker™ cornbread & muffin mix
2/3 cup milk
1/4 cup margarine or butter, melted
2 eggs
4 medium green onions, chopped (1/4 cup)

Steps:

  • Heat oven to 400°F. Grease divided scone pan with shortening. Make muffin mixes as directed on pouch, using milk, margarine and eggs. Stir in onions. Spoon evenly into each wedge of pan.
  • Bake 15 to 17 minutes or until golden brown. Immediately remove from pan to cooling rack. Serve warm.

Everyday Cornbread image

Tender and a touch sweet, this cornbread is easy to whip up with very few ingredients.

2 large eggs
2 tablespoons honey
¾ cup milk (preferably whole but low-fat works too)
1¼ cups all-purpose flour, spooned into measuring cup and leveled-off
¾ cup yellow cornmeal
¼ cup plus 2 tablespoons sugar
1 tablespoon baking powder
1 teaspoon salt
1 stick (½ cup) unsalted butter, melted and cooled

Steps:

  • Preheat the oven to 350°F degrees. Spray an 8-inch baking dish with nonstick cooking spray.
  • In a medium bowl, break up the eggs with a whisk. Whisk in the honey, and then the milk. Set aside.
  • In a large bowl, whisk together the flour, cornmeal, sugar, baking powder, and salt. Add the milk mixture and the melted butter to the dry ingredients. Whisk until just blended. Do not overmix; it's okay if there are a few lumps. Spoon the batter into the prepared pan. Bake for 25 to 30 minutes, or until the top is set and golden. Cool the cornbread for 10 to 15 minutes in the pan, then cut into squares and serve warm.
  • Freezer-Friendly Instructions: Cornbread tastes best when served fresh out of the oven, but it can be frozen in an airtight container or sealable plastic bag for up to 3 months. Thaw for 3 for 4 hours on the countertop before serving. To reheat, wrap cornbread in aluminum foil and warm in a 350°F oven until hot. Alternatively, heat squares in the microwave at 50 percent power for 30 to 45 seconds, or until just hot; do not overheat or they will get tough.

This classic, savory Southern cornbread is just begging for a bowl of chili or a plate of ribs. Made with all cornmeal, straight buttermilk, and no added sugar (like it should be!) in a cast iron skillet, this cornbread is an easy dinner side dish.

1 tablespoon bacon drippings
2 cups cornmeal OR 1 1/2 cups cornmeal and 1/2 cup flour
1 teaspoon baking soda
1 teaspoon salt
1 tablespoon sugar (optional)
1 large egg (optional)
1 1/4 cups buttermilk
6 tablespoons unsalted butter, melted

Steps:

  • Make the batter: Whisk together all the dry ingredients (cornmeal, baking soda, salt, sugar if using) in a large bowl. In another bowl, beat the egg (if using) and buttermilk until combined, then mix that into the bowl of dry ingredients. Stir in the melted butter.
  • Rest bread in skillet, then serve: Let the bread rest for 10 to 30 minutes in the skillet before cutting it into wedges and serving. To store, let the cornbread cool, then remove from pan and wrap in plastic wrap or transfer to an airtight container. Store at room temp for 2 to 3 days To avoid burning your hand because you've forgotten the pan is hot, I recommend placing a pot holder on the pan's handle while the cornbread is resting, or cooling the handle down a bit with an ice cube.

4 tablespoons canola oil, divided
1-1/2 cups finely ground white cornmeal
1/4 cup sugar
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon salt
2 large eggs, room temperature
2 cups buttermilk

Steps:

  • Place 2 tablespoons oil in a 10-in. cast-iron skillet; place in oven. Preheat oven to 450°. Whisk together cornmeal, sugar, baking powder, baking soda and salt. In another bowl, whisk together eggs, buttermilk and remaining oil. Add to cornmeal mixture; stir just until moistened., Carefully remove hot skillet from oven. Add batter; bake until golden brown and a toothpick inserted in center comes out clean, 15-20 minutes. Cut into wedges; serve warm.

These potato wedges have a crunch to them. They are great with a burger or grilled cheese.

4 medium russet potatoes
1/2 cup(s) mayonnaise
1/4 teaspoon(s) seasoning salt
1/4 teaspoon(s) onion salt
1/4 teaspoon(s) fresh cracked pepper or ground
2 cup(s) your favorite dry stuffing mix (cornbread is my choice)
1/2 cup(s) parmesan, jar or fresh

Steps:

  • Preheat oven to 375. Wash & scrub your potatoes and quarter potato long way to make wedges. Mix mayonnaise, onion salt, seasoning salt, and black pepper.
  • Brush the mayonnaise mixture on each wedge and roll in stuffing mix and lay on foil lined cookie sheet, do all 16 wedges like this.
  • Then sprinkle all wedges with parmesan cheese and bake at 375 for 50 minutes or until potatoes are tender inside and crunchy on the outside. Dip them in honey mustard, ranch, ketchup etc...

1 1/4 cups all-purpose flour
2 tablespoons sugar

1 3/4 cups buttermilk
4 tablespoons unsalted butter

Steps:

  • Preheat oven to 425 degrees. Whisk together cornmeal, flour, sugar, baking powder, baking soda, and salt in a large bowl; set aside. Whisk together egg and buttermilk; stir into flour mixture.
  • Melt butter in a 10-inch cast-iron skillet or a 2-quart baking dish in oven. Remove skillet; swirl to coat bottom. Pour in batter. Bake until a tester comes out clean, 20 to 25 minutes. Cut into wedges.

Thin and Crispy Cornbread image

The thick, golden wedges of cornbread served directly from a skillet that you see in glossy food magazines look nothing like the thin and crispy cornbread April McGreger's Mississippi grandmother used to make. The ratio of crunch to tender middle here errs on the side of crunch, which makes it perfect for soaking up the delicious broth called potlikker, which comes from simmering smoked meat and greens, sometimes cooked with Southern field peas. This cornbread bakes up best in a well-seasoned 12-inch cast-iron skillet, though you can divide the batter between two smaller skillets or even cake pans. A scattering of dry coarse cornmeal in the hot skillet before you pour in the batter makes the cornbread extra crunchy. Flipping it onto a plate or rack also helps the crust stay crisp. Or you could make it thicker and cook it ahead of time, then split the slices and toast them before serving.

2 cups coarse cornmeal, preferably white, plus about 2 tablespoons extra for the skillet

Steps:

  • Heat the oven to 500 degrees. Add bacon drippings to a 12-inch skillet and place in the oven to warm.
  • In a medium mixing bowl, use a whisk or fork to combine the cornmeal, salt and baking soda. Add the egg, buttermilk and water and stir well to combine. When the skillet is very hot and the bacon grease is sizzling, carefully remove from the oven and pour half the hot fat into the cornbread batter. Whisk well to combine.
  • Working quickly, sprinkle the hot skillet with the remaining coarse cornmeal. It should smell like popcorn. Pour the batter into the hot pan and return to the oven. Check after 20 minutes, baking until the cornbread is deep golden brown.
  • Remove the hot pan from the oven and immediately flip out onto a plate. Cut into wedges.

225g fine cornmeal
140g plain flour
1 tsp caster sugar
2 tsp baking powder
2 x 284ml cartons buttermilk, or use natural yogurt
2 eggs
100g can sweetcorn (drained weight), or use frozen
50g cheddar cheese, grated
weighing scales
23cm round cake tin
teaspoon

Steps:

  • Before you get started, take a look at our weighing and measuring skills guide. Heat the oven to 230C/210C fan/gas 8 and butter a 23cm cake tin or ovenproof frying pan. Tip the cornmeal, flour, sugar, baking powder and 1½ tsp salt into a large bowl. Beat the buttermilk or yogurt, eggs and melted butter together in a small bowl using a fork. Pour the wet ingredients into the dry, then add most of the sweetcorn and most of the cheese (save a handful of each for the top). Mix together with a spatula until just combined.
  • Pour the batter into the prepared tin. Sprinkle over the reserved sweetcorn and cheese, then bake for 30 mins until golden and a skewer inserted into the middle comes out clean, with no wet batter clinging to it.
  • Leave to cool in the tin for 10 mins, then cut into wedges and serve warm. Once completely cool, will keep in an airtight container for two days, or the freezer for a month.

50g butter, plus extra for greasing
1 small onion, finely chopped
225g fine cornmeal
140g plain flour
1 tbsp sugar
2 tsp baking powder
1 ½ tsp salt
2 x 284ml cartons buttermilk (or same quantity semi-skimmed milk with a squeeze of lemon juice)
2 eggs

Steps:

  • Heat oven to 230C/fan 210C/gas 8. Smear some butter all over a 23cm cake tin or ovenproof frying pan. Melt the butter in a separate pan. Tip in the onion and cook over a gentle heat for 5 mins until softened.
  • Meanwhile tip all the dry ingredients into a large mixing bowl. Beat together the buttermilk and eggs in a separate bowl, then stir in the buttery onions. Pour over the dry ingredients and mix together until just combined and you have a batter.
  • Pour the batter into the cake tin or frying pan and smooth the top with a knife. Bake for 25 mins until golden and a skewer inserted in the centre comes out clean. Cool in the pan for 10 mins, then turn out, cut into wedges and serve. You can make up to 2 days ahead and store in an airtight container, or freeze for up to 1 month.
