JALAPENO CORNBREAD

- Combine 1 1/4 cups flour, 1 1/2 cups cornmeal, 3 tablespoons sugar, 1 tablespoon baking powder, 1 teaspoon salt and 1/2 teaspoon baking soda. Whisk 2 1/4 cups buttermilk, 2 eggs, 1/2 stick melted butter and 1 tablespoon chopped pickled jalapenos; stir into the flour mixture. Pour into a buttered, cornmeal-dusted 9-inch cast-iron skillet; top with sliced fresh jalapenos. Bake at 450 degrees F, 20 to 25 minutes.
JALAPENO POPPERS

- Preheat the oven to 275 degrees F. Set a wire rack over a baking sheet.
- If you have them, slip on some latex gloves for the pepper prep. Cut the jalapenos in half lengthwise. With a spoon, remove the seeds and white membranes (the source of the heat; leave a little if you like things HOT). Smear cream cheese into each jalapeno half and then wrap with a bacon piece (1/2 slice). Secure by sticking a toothpick through the middle. Place on the rack in the baking sheet.
- Bake for 40 to 45 minutes. (You don't want the bacon pieces to shrink so much they start to squeeze the jalapenos.) If after 45 minutes the bacon doesn't look brown enough, just keep cooking until the bacon is sizzling.
- Serve immediately, or they're also great at room temperature.
JALAPENO POPPERS
The flavor of the peppers come through, but the cheese and bacon put some of the fire out. I believe the "tenderfoot" would even like these. I have even frozen these with good success.

- (Use gloves to work with peppers).
- Fill jalpenos with cream cheese and wrap a slice of bacon around each one.
- Secure with a toothpick.
- Bake at 425 degrees until bacon appears to be done, about 15-20 minutes.
CORNBREAD WITH JALAPENO PEPPERS
An absolutely incredible cornbread recipe! I don't remember where I found this one but it was while I was in grad school. I invited the crew over and made this recipe to accompany a pot of chili. All I can say is that it was excellent and much enjoyed! If there are leftovers, excellent reheated or toasted. A lot of ingredients but.... yummmmmm!

- Mix dry ingredients together in lg bowl.
- In sm bowl, mix together eggs, milk,& butter; add to dry ingredients.
- Add remaining ingredients and combine thoroughly.
- Fill lightly-greased 12 c muffin pans ½ full w/ batter (or turn into greased 9"x13" pan).
- Bake in preheated 400 degree oven for 20-25 mins (longer for pan) or til top springs back when lightly pressed; remove from oven.
- Let cool before turning muffins out.

Kickin' and easy. Use as an appetizer or a side. If half a jalapeno is too much for you in a bit, just put the batter in mini muffin tin and place a slice of jalapeno on top (or in the middle and cheese on top).

- Slice the jalapenos longwise and carefully remove all the seeds and veins.set aside.
- In a medium bowl, mix up the Cornbread batter according to the box instructions, add in the Corn and 1 cup of the Cheddar.
- Fill each Jalapeno half with some batter! Careful, don't over fill them!
- Sprinkle them all with the remaining 1/2 cup of Cheddar.
- Place them on a baking rack & sheet pan, bake them at 350 for about 15-20 minutes, or until the Cornbread is firm and cooked through. They will be puffed and cheesy too!
- Alternatively put the dough in mini muffin tin and then place a slice of jalapeno on top or sneak it in the middle and put more cheese on top. This is a milder approach.
EASY JALAPENO POPPERS

- Brown and drain sausage. Set aside to cool a little.
- Cut jalapenos in half length-wise and clean out middle stuff and seeds.
- In a bowl, squish together the cream cheese, sausage, and a few shakes of garlic powder (to your own taste).
- Stuff each jalapeno half with the cheese mixture.
- Place the jalapenos on a cookie sheet.
- Bake at 350 for about 20 minutes. They are done when they are beginning to brown on the top.

JALAPENO POPPERS

- Roast chilis under a broiler or on a grill until outside begins to turn black and bubbly. Place chilis in a Zip-Loc bag or a container covered with plastic wrap and let cool.
- Grate cheese and chop cilantro, mix together and hold for later.
- In three separate bowls, place flour, beaten eggs and bread crumbs. (This is referred to as standard breading procedure: first flour, then egg, and then into the bread crumbs.)
- Peel skin from chiles by wiping with a dry towel or by lightly running a paring knife over the surface of the chile.
- Carefully cut a slit lengthwise in each chile and then carefully cut out the seeds.
- Take the chiles one by one and stuff them full with the cheese and cilantro mixture. Place them each into the flour, then egg, and finally, into the bread crumbs. Now you have jalapeno poppers which you can hold in the refrigerator or freezer until you are ready to serve them.
- To Serve:
- Heat a large pot with vegetable oil over low-to-medium heat for frying. (The optimal temperature is 325 degrees.) Fry the jalapeno poppers for 3-5 minutes until crispy on the outside and soft in the center. Serve hot with the aioli for dipping.
- To make the aioli, simply mix all ingredients and let stand until you are ready to use.
