CORN AND GREEN CHILE CHOWDER

4 tablespoons (1/2 stick) butter
3 slices bacon, chopped
1 onion, sliced
1 tablespoon chopped fresh oregano
Two 7-ounce cans chopped green chiles
5 ears corn, kernels sliced off (2 1/2 to 3 cups)
2 cloves garlic, minced
3 1/3 cups chicken stock or broth
2 tablespoons cornstarch
1 1/2 cups heavy cream
1 heaping cup grated Monterey Jack
1 heaping cup grated pepper jack
Kosher salt and freshly ground black pepper
1/3 cup sliced green onions

Steps:

  • Set a 6-quart multi-cooker to the saute setting and add the butter. Add the bacon, onions and oregano and cook, stirring frequently, until the onions start to become translucent, 3 to 4 minutes. Add the green chiles, corn and garlic and cook for an additional minute. Add 3 cups of the chicken stock.
  • In a separate bowl, whisk the cornstarch into the remaining 1/3 cup chicken stock. Add to the multi-cooker and stir well. Cover and position the vent to the sealing setting. Set the multi-cooker to pressure-cook on high for 5 minutes. When the time is up, carefully quick release the steam (it takes about 3 minutes), then remove the lid.
  • Mix in the heavy cream. Stir in the cheeses until they have melted completely. Check the seasoning; add salt and pepper as needed. Ladle into bowls and serve immediately garnished with the green onions.

1 onion, chopped
1 carrot, chopped
1 stalk celery, chopped
2 garlic cloves, crushed
1/2 teaspoon turmeric
1 bay leaf
4 cups reduced-sodium vegetable broth
5 cups frozen corn, divided
1 dash cayenne pepper (to taste)
1/4 cup green onion, chopped

Steps:

  • In saucepan, heat oil over medium heat.
  • Add onion, carrot, celery and garlic; cook, stirring for 2 minutes.
  • Stir in turmeric and cook for 1 minute.
  • Add bay leaf and vegetable stock; bring to simmer.
  • Simmer for 10 minutes; add 4/5 approx.of the corn, simmer 5 minutes.
  • Discard bay leaf.
  • In blender puree in batches.
  • Return to saucepan and add remaining corn kernels and cayenne.
  • Serve hot or cold garnished with green onions or coriander.

2 cups yellow corn flour, such as Maseca
2 cups chopped yellow onion
1/3 cup sugar
2 teaspoons garlic powder
2 teaspoons onion powder
2 teaspoons black pepper, plus more for seasoning
1 quart heavy cream
2 pound fresh or frozen sweet corn kernels
2 tablespoons salt
1 pound crabmeat, such as backfin or lump
1/4 cup chopped green onions

Steps:

  • Melt the butter over medium heat in a large heavy pot. Add the corn flour and onions and cook, stirring, until lightly browned and smelling of toasted nuts, about 4 minutes. Stir in the sugar, garlic powder, onion powder and black pepper. Immediately add the cream, corn and 4 quarts of water. Let simmer over medium heat, stirring occasionally, until thickened and the corn is cooked and tender, about 40 minutes. Taking care, blend the bisque in batches until smooth. Add the salt and pepper to taste. To serve, divide the crabmeat among 6 bowls and top with the hot bisque (which will lightly cook the crab). Garnish with the green onions.

1 cup uncooked sweet corn from the cob
2 tablespoons minced shallots
1 tablespoons minced garlic

Essence, recipe follows
1 cup crab stock or fish stock
3 bay leaves
Salt and pepper
2 cup milk
2 cup heavy cream
1 teaspoons liquid crab boil
3 tablespoons blond roux
1/2 lump crab meat, picked over for shells and cartilage
1/4 cup chopped green onions
1/2 teaspoons Worcestershire sauce
Chives for garnish
2 1/2 tablespoons paprika
2 tablespoons salt
2 tablespoons garlic powder
1 tablespoon black pepper
1 tablespoon onion powder
1 tablespoon cayenne pepper
1 tablespoon dried oregano
1 tablespoon dried thyme

Steps:

  • In a large sauce pot, heat the olive oil. When the oil is smoking hot, add the onions, corn, shallots, garlic, celery and saute for 1 minute. Season with Essence. Add the stock, and bay leaves. Season with salt and pepper. Bring the mixture to a boil. Whisk in the milk, cream, and crab boil.Bring back to a boil, reduce to a simmer. Simmer for 5-7 minutes. Whisk in the roux, 1 tablespoon at a time. Reduce the heat to low and continue to cook, whisking until the mixture thickens. Stir in the crab meat, green onions, and Worcestershire and simmer for 6-8 minutes. Reseason if needed. Ladle into a shallow bowl and garnish with chives.
  • Combine all ingredients thoroughly.

1 cup minced yellow onion
2 (16 ounce) cans corn
4 tablespoons minced celery
2 teaspoons salt
1 teaspoon cayenne pepper
1 cup fish stock or 1 cup water
4 bay leaves
4 cups milk
1 quart heavy whipping cream
2 teaspoons crab boil (optional)
2 lbs crawfish tails
4 (6 ounce) cans of fancy lump crabmeat
2 (16 ounce) cans cream of potato soup

Steps:

  • Heat the oil in a large heavy pot or Dutch oven over medium heat. Add the flour a tablespoon at a time, stirring constantly with a wooden spoon until blended. Continue stirring to make a light brown roux, 5 to 10 minutes.
  • Add the onions, corn, celery, garlic, salt, and cayenne and cook, stirring occasionally, until the onions soften, about 4 minutes. Slowly stir in the stock or water. Add the bay leaves and bring to a boil. Add the milk, cream, and the crab boil, if using. Reduce the heat to medium-low. Simmer, uncovered, for 30 minutes.
  • Stir in the crab, crawfish, green onions and both cans of potato soup. Simmer for 5 minutes.
  • Remove and discard the bay leaves.
  • Ladle into shallow soup cups or bowls and serve hot.

3 large ears of corn
2 slices thick bacon
1 tablespoon butter
1 cup sliced green onion
1/2 jalapeno
1/2 teaspoon salt
1 3/4 cups chicken broth
1 diced potato
fresh thyme
2 tablespoons cream
salt
pepper

Steps:

  • Husk and slice kernels off the three ears of corn. Reserve one of the cobs for later, and set aside.
  • Slice onions into two separate piles. Separating the white/light green onions from the dark green onions. Set aside.
  • Crisp bacon, crumble and set aside. Reserving one tablespoon of grease, set pan back onto heat.
  • On med., add in 1 tbs. butter, 1/2 cup of the light colored onions, 1/2 a jalapeno diced fine, and 1/2 teaspoons salt. Cook about three minutes.
  • Add: broth, corn kernels, one corn cob, diced potato, and thyme. cook slowly for 15 minutes.
  • Discard cob and remove one cup of soup mixture from pot. Puree in blender and return to pot. Stir in with it: 2 tbs. cream, and the darker green onions. (remaining 1/2 cup). Simmer a few minutes longer.
  • Season with salt and pepper, top with crumbled bacon and some sliced green onions for garnish.

1 small onion, peeled and minced
3 large roasted poblano chilies, peeled, seeded and chopped
2 stems fresh basil
2 stems fresh marjoram
3 1/2 cups fresh corn
1/2 teaspoon sugar
2 cups water
16 large oysters, shucked, juice reserved
1/2 pound wild mushroooms (chanterelle or oyster)
1/4 cup minced chives

Steps:

  • Heat 2 tablespoons butter in a large skillet until hot; add onions and cook slowly over low heat until translucent, about 5 minutes. Add chilies, basil and marjoram, and continue cooking 5 minutes longer, stirring occasionally. Add corn and stir. Add sugar and water, increase heat and bring liquid to a simmer. Add oyster juice, remove herbs and cool.
  • Pour corn mixture into a blender or food processor and puree until smooth, adding more water if too thick. Pass the soup though a fine mesh strainer into a pot over low heat and keep warm.
  • In a saute pan, heat 2 tablespoons butter over medium heat. Add mushrooms and saute until lightly browned, about 5 minutes; set aside. In another saute pan over medium heat, warm the remaining 2 tablespoons butter. Add oysters and cook until barely warm, about 3 minutes. Pour any remaining oyster juice into the soup pot.
  • Pour the soup into 8 warm bowls, arrange oysters and mushrooms in the center of each and garnish with chives.

¾ cup onion, chopped
3 (14 ounce) cans chicken broth

½ cup half-and-half
3 tablespoons all-purpose flour
