CLASSIC MOROCCAN TOMATO SALAD



Classic Moroccan Tomato Salad image

Number Of Ingredients 8

1 cup cherry tomatoes, halved
1/4 red onion, minced finely
2 tbsp parsley, minced
2 tbsp cilantro, minced
2 tsp olive oil
½ tsp salt
½ tsp pepper
½ tsp cumin

Steps:

  • Halve the cherry tomatoes, mince the onion, parsley, and cilantro.
  • In a small bowl combine all ingredients and mix well. Taste to see if you want to add any additional salt, pepper or cumin.
  • Enjoy over omelettes, with bread, or as a side salad.

Number Of Ingredients 11

1 small green pepper, cored, seeded and deveined
1 1/2 cups cored, peeled, seeded tomatoes cut into half-inch cubes
1 tablespoon finely chopped parsley
1 tablespoon finely chopped onion
1/4 teaspoon finely minced garlic
1/2 teaspoon finely minced fresh coriander
Salt to taste, if desired
1/4 teaspoon cayenne pepper
1/2 teaspoon ground cumin
1 tablespoon white vinegar
2 tablespoons peanut oil

Steps:

  • Cut the pepper into strips about half an inch wide. Cut the strips crosswise into thin slices. There should be about 1/3 cup. If there is more than that, save the remaining for another use.
  • Put the pepper in a bowl and add the remaining ingredients. Blend. Chill.

This healthy Salad is not only easy to make, but is also very tasty. This salad is excellent with Lentils and Rice Dish (Mujadarah). or my its self. see my recipe for Lentils and Rice Dish (Mujadarah).

Number Of Ingredients 10

3 medium finely diced tomatoes
1 -2 finely diced cucumber
1 small diced onion (optional)
1 finely diced green onion
1 tablespoon chopped mint leaves or 1 teaspoon dried mint
1 crushed garlic clove (optional)
1/2 bunch chopped fresh parsley
2 lemons, juice of
salt and pepper (pepper is optional)
1/4 cup olive oil

Steps:

  • Mix all ingredients together, and ready to serve, although is best when marinated for 30 Minutes.
  • This healthy Salad is excellent with Lentils and Rice Dish (mujadarah) or by itself. See my Lentils rice dish (Mujadarah) recipe.

Number Of Ingredients 10

3 or 4 ripe red tomatoes, about 3/4 pound, or an equal amount of cherry tomatoes
1 1/2 cups coarsely chopped celery with leaves
1/2 cup chopped parsley
3 tablespoons drained capers
1/4 cup chopped hot cherry peppers, stems removed
12 pitted black olives
1/4 teaspoon dried hot red pepper flakes
1 teaspoon paprika
1/4 cup olive oil
Salt to taste if desired

Steps:

  • Cut and discard the tomato cores. Cut the tomatoes into 1-inch cubes. There should be about 3 cups. (If cherry tomatoes are used, cut them in half.) Put the tomatoes in a mixing bowl.
  • Add the celery, parsley, capers, cherry peppers and black olives. Blend the pepper flakes, paprika, olive oil and salt, and pour the mixture over the salad. Toss well.
