For a substantial appetizer, you can't go wrong with mini sandwiches. Instead of serving egg or ham salad on ordinary bread, I like to present them on homemade puff pastry.-Karen Owen, Rising Sun, Indiana

1 cup water
1/2 cup butter
1 cup all-purpose flour
4 large eggs
EGG SALAD FILLING:
6 hard-boiled large eggs, chopped
1/3 cup mayonnaise
3 tablespoons chutney, finely chopped
2 green onions, finely chopped
1 teaspoon salt
1/2 teaspoon curry powder
HAM SALAD FILLING:
1 can (4-1/4 ounces) deviled ham
3 ounces cream cheese, softened
2 tablespoons finely chopped green pepper
1-1/2 teaspoons prepared horseradish
1 teaspoon lemon juice

Steps:

  • In a saucepan over medium heat, bring water and butter to a boil. Add flour all at once and stir until a smooth ball forms. Remove from the heat; let stand for 5 minutes. , Add eggs, one at a time, beating well after each addition. Continue beating until mixture is smooth and shiny. Drop by teaspoonfuls 2 in. apart onto greased baking sheets., Bake at 400° for 20-25 minutes or until lightly browned. Remove to wire racks. Immediately cut a slit in each puff to allow steam to escape; cool completely., In separate bowls, combine the ingredients for egg salad filling and ham salad filling. Split puffs and remove soft dough from inside. Just before serving, spoon fillings into cream puffs; replace tops. Refrigerate leftovers.

My Tuna Puff Pastry Pinwheels are the ultimate, easily prepared appetiser, suitable to serve either hot or at room temperature. However, they are not just for entertaining; they are great served as snacks or ideal to add to school or work lunch boxes.

1 sheet puff pastry (See Note 1)
2 tsp extra virgin olive oil
1 medium brown/yellow onion - finely diced
185 g (6.5 oz) canned tuna in oil - well-drained (See Note 2)
1/3 cup cheddar cheese - grated (See Note 3)
3 tbsp flat-leaf parsley - finely chopped (See Notes 4 and 5)
1 tsp lemon zest (See Note 6)
1/4 tsp cayenne pepper - optional
sea salt and freshly ground black pepper - to taste

Steps:

  • Preheat your oven to 200 degrees C (390 F). Prepare a baking tray with baking paper.Remove the puff pastry from the freezer and defrost. Return pastry to fridge once desfrosted to keep chilled.
  • Finely chop your onion, and fry gently in olive oil for about 8-10 minutes, or until slightly caramelised. Set aside to cool.
  • Drain the can of tuna and add to a medium size bowl. Mash to break up any large pieces.
  • Add the cooked onion and remaining ingredients to the tuna, and mix well to combine.Check that the seasoning is to your taste, adding more salt, pepper or lemon zest if necessary.
  • Top the pastry with your tuna mixture. Evenly spread mixture, being sure to leave a small gap around the edge of the pastry.Using the back of a spoon or rubber spatula, press down on the mixture to compact it.
  • Slowly start to roll the pastry from the end nearest you. Keep rolling forward, reasonably firmly, keeping it as tight as possible, until you have come to the end of the roll.Return the puff pastry to the refrigerator for about 15 minutes to firm up.
  • Using a serrated knife, trim the ends and discard.Then, using the same knife, slice each pinwheel approximately 1.5 cm (1/2 ") thick.
  • Place your pinwheels on a baking tray. If a little mixture falls out, just push it back in gently. See Note 7.
  • Bake for 15-20 minutes, or until golden brown and the pastry is cooked through.Serve warm from the oven or allow to cool to room temperature (this is my favourite way to enjoy them!)
  • If making in advance, store in the fridge in an airtight container for up to 4 days. Reheat in a pre-heated oven at 180 degrees C (350 F) for about 7 minutes to crisp the pastry.They also freeze well. Allow them to cool completely then arrange them on a single layer on a baking tray and place in the freezer. When frozen, you can store them in an airtight container or zip-lock bag for up to two months. You can reheat them from frozen by placing in a pre-heated oven at 180 degrees C (350 F) for about 10 minutes.

1 cup water
1/2 cup butter
1 cup flour
1/4 teaspoon salt
4 eggs
homemade or deli bought tuna salad

Steps:

  • Heat to boiling 1 cup water and 1/2 cup b utter.
  • Stir in 1 cup flour and 1/4 teaspoon salt.
  • Stir all together until mixture leaves pan and forms a ball (about 1 minute).
  • Take off heat and cool, beat in 4 eggs, one at a time.
  • Beat mixture until smooth and glossy.
  • Drop by spoonfuls on ungreased cookie sheet {1/2 teaspoon batter 2 inches apart).
  • Bake in 450°F oven 15-20 minutes.
  • Cool and split in halves.
  • Fill with tuna fish salad.
  • Makes 50-75 puffs.

Crispy puff pastry easily shaped into cases and filled with tuna, spring onions, garlic, capers, dill and sour cream. Quantities are so easily varied in a recipe such as this one, so do add more or less sour cream, depending on how creamy you'd like your Tuna Puff Pies to be, and the appropriate amount of cayenne pepper if you want them to have some bite! Adapted from a recipe on the Simply Great Meals website.

1 1/3 sheets frozen reduced-fat puff pastry, thawed
425 g tuna in brine
2 spring onions, finely chopped
2 garlic cloves, finely minced
1/4 cup capers
1 teaspoon dill
salt, to taste
fresh ground black pepper or cayenne pepper, to taste
1/2-1 cup low-fat sour cream
2 tablespoons parsley, finely chopped
1 teaspoon lemon zest, finely grated

Steps:

  • Drain the tuna and flake with a fork into chunky pieces.
  • Cut the whole pastry sheet into 9 squares of 8cm x 8cm, and the 1/3 of a sheet into 3 squares. Arrange each pastry square into a greased muffin pan.
  • Divide the tuna evenly between the 12 pastry cases, sprinkle evenly with spring onions, garlic, capers and dill; and add salt and fresh ground black pepper or cayenne pepper, to taste. Top each Tuna Puff Pie with a dollop of sour cream (YOU decide on the size of the dollop!) and sprinkle with parsley and lemon zest.
  • Bake in a preheated oven at 200°C for 18 minutes.

FILLING:
