Indonesian Chicken Cooked With Salted Yellow Beans image

This recipe calls for 'tauco' which can be either salted black beans or salted yellow beans. Either can be found in a Chinese market as salted black bean or salted yellow bean sauce. Or you can track down Indonesian salted yellow beans and smash 'em up yourself. Thai markets carry them.

1 medium roasting chicken
2 onions
4 cloves garlic
2 teaspoons dark soya sauce
3 tablespoons tauco (salted yellow beans)
1 teaspoon brown sugar
1 teaspoon paprika (optional)
1/2 teaspoon chili powder
1 teaspoon ground ginger
2 tablespoons vegetable oil
1/2 cup tamarind juice
1 cup water

Steps:

  • Cut the chicken into serving pieces; wash, and dry.
  • Slice the onions.
  • Pound the garlic and the tauco into a smooth paste.
  • Fry the onions in the oil for half a minute.
  • Add the tauco, then the chicken.
  • Stir well, so that every part of the chicken is coated with tauco.
  • Put in the soya sauce and the rest of the ingredients.
  • Cover, and simmer very gently for 45 minutes.
  • Then take the lid off, and cook for a further 5 minutes to reduce the sauce.
  • Serve hot.

This is an all time favorite that has lasted me from grade school through adulthood. I've served it to just about everyone I know and have received nothing but rave reviews!

1 cup uncooked long grain white rice
2 cups water
1 pound fresh green beans, trimmed and snapped
2 teaspoons olive oil
1 pound skinless, boneless chicken breast halves - cut into chunks
¾ cup low-sodium chicken broth
⅓ cup smooth peanut butter
2 teaspoons honey
1 tablespoon low sodium soy sauce
1 teaspoon red chile paste
2 tablespoons lemon juice
3 green onions, thinly sliced
2 tablespoons chopped peanuts

Steps:

  • Bring the rice and water to boil in a pot. Reduce heat to low, cover, and simmer 20 minutes.
  • Place green beans in a pot fitted with a steamer basket over boiling water, and steam 10 minutes, or until tender but crisp.
  • Heat the oil in a skillet, and cook the chicken 5 minutes on each side, or until juices run clear.
  • Mix the chicken broth, peanut butter, honey, soy sauce, chile paste, lemon juice in a saucepan over medium heat. Cook and stir 5 minutes, until slightly thickened. Mix in the green beans. Serve over rice. Garnish with green onions and peanuts.

Poached chicken breasts, which are at the center of this salad, are a low-fat, high-protein staple with endless possibilities. In this recipe, inspiration comes from the Southeast Asian country of Indonesia. Mint leaves and cilantro add a fresh bite and mung bean sprouts or sunflower sprouts help to fill out the dish. This spicy, refreshing salad makes a great summer meal.

1 whole chicken breast or 2 boneless skinless breasts, poached and shredded about 4 cups shredded chicken
Salt
freshly ground pepper (optional)
1 bunch scallions, white part and green, thinly sliced
1/4 cup slivered fresh mint leaves
1/4 cup chopped cilantro
1 small red bell pepper, cut in thin strips
1 serrano pepper, finely chopped seeded if desired
2 cups mung bean sprouts or sunflower sprouts
1 romaine lettuce heart, leaves separated, washed and dried
1/4 cup chopped roasted peanuts
1/4 cup freshly squeezed lime juice
2 teaspoons finely chopped fresh ginger
1 garlic clove, minced
1 tablespoon Southeast Asian fish sauce
Pinch of cayenne
2 tablespoons crunchy or smooth natural peanut butter (more to taste)
1/3 cup buttermilk

Steps:

  • Place the chicken in a large bowl, and season with salt and pepper. Add the white part of the scallions, the mint, cilantro, red pepper, minced chile pepper and sprouts. Toss together.
  • Combine the lime juice, ginger, garlic, fish sauce and cayenne. Stir together. Add the peanut butter, and combine well. Whisk in the buttermilk. Taste and adjust seasonings.
  • Line a platter with the lettuce leaves. Toss the chicken mixture with the dressing, and arrange over the lettuce. Sprinkle the peanuts and the scallion greens over the top, and serve.

Fermented black beans are found in Asian markets and once you buy them, they last pretty much forever! Also called salted black beans, they're used in the black bean chicken you order from Chinese take-out and has a much different flavor than the Mexican type of black beans. 1 lb boneless chicken thighs
1/4 teaspoon salt, plus more to taste
1 tablespoon light soy sauce
1 head garlic, peeled (cut very large cloves in half)
2 1/2 inches piece fresh ginger, peeled and sliced
4 scallions, green parts only, cut in 1 1/2-inch pieces
4 tablespoons fermented black beans, rinsed
1 tablespoon shaoxing wine or 1 tablespoon sherry wine
2 -3 teaspoons dried chili pepper flakes
1/2 red bell pepper, julienned
2 teaspoons rice vinegar
1 teaspoon sesame oil
peanut oil, for frying

Steps:

  • Cut the chicken into bite sized chunks; put them in a bowl and add salt and soy sauce; mix well and set aside.
  • Heat peanut oil in the wok over high heat; add the chicken and stir-fry until it changes color, then remove from the wok with a slotted spoon.
  • Drain off all but 3 tablespoons oil from the wok, then return it to medium heat; add the ginger and garlic and stir-fry for a few minutes until they are fragrant and the garlic cloves are tender. Add the black beans and stir-fry until fragrant, splashing in the wine as you do so. Add the chili flakes and stir-fry for a few moments.
  • Return the chicken to the wok; add the red bell pepper and toss both in the fragrant oil, splashing in the vinegar and adding salt to taste. When everything is sizzly, throw in the scallions and stir a few times until barely cooked. Then, off the heat, stir in the sesame oil and serve.

3 tablespoons olive oil
4 garlic cloves, finely minced
1 white onion, chopped small
1 small jalapeno, seeded and minced finely
3 cups cooked black beans (freshly cooked or canned beans that have been rinsed and drained)
1 teaspoon chili powder
1/2 teaspoon cumin powder (I usually add 1 teaspoon)
2 1/2 cups fresh vegetable stock or 2 1/2 cups water
1/2 red bell pepper, seeded and diced
1 cup long grain rice
1/2 teaspoon ground turmeric (closer to 1 teaspoon for me)
1/2 teaspoon freshly grated ginger
1/4 teaspoon ground coriander
salt, to taste

Steps:

  • In a soup pot, heat 2 tablespoons olive oil and sauté 2 garlic cloves and the jalapeño pepper for about 5 minutes on low heat.
  • Add the beans, chili powder, cumin, 1/2 cup stock and cook, uncovered for approximately 25-30 minutes, increasing heat to low-medium. Add the bell pepper last 5 minutes of cooking. Season to taste with salt.
  • In the meantime, heat the remaining tablespoon of olive oil in a sauté pan and sauté the 2 garlic cloves on low heat for about 2 minutes. Add the remaining 2 cups of stock, bring to a boil. Stir in the rice, reduce heat and cook 17 minutes.
  • Once rice is cooked, stir in the spices. Season to taste with salt.
  • Arrange the black beans on one side of a serving platter. Arrange the rice on the other half.
