EASY RAISIN CAKE
A not too sweet cake packed with raisins. Perfect with coffee or tea and a wonderful departure from the typically sweet holiday goodies.

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Lightly grease one 10 x 10 inch baking pan.
- In a large saucepan boil the raising with the water for 10 minutes. Add the butter or margarine and let cool.
- In the same pan add the flour, soda, salt, sugar, cinnamon, nutmeg, and chopped nuts (optional), mix well and pour batter into a lightly greased 10x10 inch baking pan
- Bake at 350 degrees F (175 degrees C) for 35 minutes. Serves 8 to 12.

ALMOND RAISIN CAKE WITH SHERRY
Forget the tea and cake here and serve this with a glass of sherry. For the best result make this the day before so the flavours can infuse

Steps:
- Tip the raisins into a bowl, pour over the sherry, then leave for at least 30 mins to soften. Meanwhile, heat oven to 180C/ fan 160C/gas 4. Lightly grease a deep 20cm round cake tin, then line the bottom with a circle of greaseproof paper.
- Mix together the yogurt, oil and eggs. Put the remaining dry ingredients into a large bowl, pour in the yogurt mixture, then stir together until smooth. Scoop half the raisins out of the sherry, then stir into the batter. Spoon into the prepared tin and smooth the surface with a spoon. Cook in the oven for 50-55 mins until the top springs back when pressed lightly and a skewer inserted into the middle of the cake comes out clean.
- Take a skewer and prick all over the cake. Pour over 5 tbsp of the soaking sherry and let it soak in. You can make up to this point 3 days in advance and store in an airtight container. Serve warm or leave to cool, then dust with icing sugar. Warm the rest of the soaked raisins and sherry, then serve alongside the cake with some vanilla ice cream.

CORINTHIAN RAISIN CAKE
This is a wonderful loaf with quite a few aromatic spices. very quick and easy to make. I got this recipe from a cookbook "Regional Cuisines of Greece" with a couple of adjustments.

Steps:
- Preheat oven to 350*.
- Cream butter and sugar together for 5 minutes.
- Add eggs, milk, sour cream, cloves, fruit peels, 1 tsp of cinnamon and 1/2 flour.
- In separate bowl, combine raisins baking powder and remaining flour.
- Combine 2 mixtures together.
- Pour into greased loaf pan.
- Bake 40 minutes.
- Combine confectioners sugar with remaining cinnamon,dust top of cake and serve.
RAISIN CAKE FROM THE PANTRY
Steps:
- Combine the raisins with sugar, water, shortening and spices and simmer for a minute. Cool to room temperature.
- Preheat the oven to 300 degrees. Lightly grease a 9inch square baking pan. Combine cooled raisin mixture with flour and nuts. Transfer to baking pan and bake 1 hour or until a toothpick when inserted in the center comes out dry. Cool in pan and cut into squares.
IRISH RAISIN CAKE
Steps:
- Preheat oven to 325 degrees and grease a Dutch Oven. Cream sugar and butter in large bowl. Add in eggs one at a time. Add seasonings. Mix baking soda into the buttermilk. Alternate adding flour, buttermilk and raisins into mix. Bake for 2 1/2 to 3 hours in covered Dutch Oven. Cake is finished when knife inserted into middle comes out clean.
IRISH CURRANT AND RAISIN CAKE

- 1. Set a rack in the middle of the oven and preheat to 350°.
- 2. Stir together the 2 1/4 cups flour, the baking powder, baking soda, and salt in a bowl.
- 3. In the bowl of a heavy-duty mixer, beat the butter and sugar with the paddle on medium speed until soft and light, about 5 minutes. Add the egg, beating until smooth.
- 4. Decrease the mixer speed to low and beat in half the flour mixture. Stop and scrape down the bowl and beater with a rubber spatula. Beat in the buttermilk, then the remaining flour mixture.
- 5. Give the batter a final mix with the rubber spatula.
- 6. Toss the currants and raisins with the remaining 1 tablespoon flour and fold them into the batter. Scrape the batter into the prepared pan and smooth the top.
- 7. Bake for about 45-55 minutes, or until the cake is well risen and deep gold and a toothpick inserted in the center emerges clean.
- 8. Cool in the pan on a rack for about 30 minutes, then invert the cake onto a rack and remove the pan and paper. Invert the cake onto another rack and cool completely.
- Storage: Wrap in plastic and keep at room temperature, or double-wrap and freeze for longer storage.

Steps:
- Preheat oven to 350 degrees F.
- Grease a 9" x 13" inch pan.
- Mix flour, sugar, baking powder, salt and cinnamon.
- Beat oil, eggs and vanilla until smooth.
- Add the egg mixture to the flour and mix with wooden spoon until smooth.
- Stir in carrots, coconut, 1 cup hazelnuts, raisins and pineapple.
- Pour into pan and bake at 350F for about 45 minutes.
- Sides should pull away from pan.
- Don't worry if the center sinks a bit, it's OK.
- Cool completely on a rack.
- Using an electric mixer combine the butter and cream cheese until smooth and well mixed.
- Add the confectioners sugar and 1/2 cup hazelnuts and beat until well mixed.
- Spread icing over cooled cake.
RAISIN CAKE
My mom always made this cake at Christmas time. She would cut it in bar size pieces and put it with the Christmas cookies. It was always one of my favorites, and my dad's as well. Don't over bake and make sure you keep it in a air tight container until you are ready to eat. Measurements for the frosting are approximates. Only add enough water to make the glaze easily spreadable. These can be frozen for a couple weeks.

- Cook 1 pound raisins and 1 cup water over medium high heat for 15 minutes.
- Add 1 cup cold water.
- In large mixing bowl cream ½ cup shortening and 2 cups sugar.
- Add 1 teaspoons Salt, 1 teaspoons Ginger, 1 teaspoons Cinnamon and 1 teaspoons Baking soda, mix well.
- Add raisins and water. Add 4 cups flour. Mix well.
- Put in a 13x9 inch greased baking pan.

- Frost with Glaze. Cut into bar cookies.
BOILED RAISIN CAKE (CANADIAN WAR CAKE)
This is called War Cake because it was made in Canada during WW2 and was shipped out to the troops serving overseas. My grandmother used to make this cake and let it sit for at least a week before slicing into it. But, this recipe I found in a local fundraising cookbook, calls for it sitting for only one day before slicing it up. Just as yummy as grandmas.

Steps:
- Mix raisins, butter, brown sugar, spices, and water in heavy saucepan.
- Place on high heat and bring to a boil.
- Lower heat and simmer for 6 minutes.
- Remove from heat and turn raisin mixture into a large bowl.
- Let stand at room temperature for 30 minutes.
- Meanwhile, combine flour, salt, and baking soda and mix gently.
- Add orange juice, vanilla and dry ingredients to cooled raisin mixture and beat well.
- Turn batter into a well greased 10 ¼" x 3 5/8" x 2 5/8" loaf pan.
- Bake at 350 degrees Fahrenheit for 1 hour.
- Allow cake to cool in pan for 10 minutes.
- Remove from loaf pan and allow to cool completely on wire rack.
- Let cake ripen for at least one day before slicing.
