- Preheat oven to 425 degrees F (220 degrees C).
- Melt the butter in a large saucepan over medium heat. Stir in the onions, mushrooms, and garlic; cook until tender, but not browned, about 5 minutes. Stir in the flour, sage, and thyme until blended. Pour in the gravy, water, and milk, stirring to blend. Bring to a boil over medium-high heat; cook 1 to 2 minutes. Stir in the turkey and vegetables, and cook until vegetables are tender, about 5 minutes.
- Line a 10 inch pie plate with the bottom crust. Pour in the turkey mixture. Cover with the top crust. Seal and crimp the edges. Pierce top crust in a few places with a fork. Cover the edges of the pie with strips of aluminum foil.
- Bake in preheated oven for 25 minutes. Remove foil strips, and bake until crust is golden, about 20 minutes more. Remove from oven, and rest 10 minutes before serving.

- In a bowl, whisk together 2 cups of flour with salt. Using a pastry cutter, cut the vegetable shortening and 6 tablespoons of cold butter into the flour mixture until the butter and shortening are the size of small peas. Sprinkle on cold water, 1 tablespoon at a time, and gently gather the moistened dough together with a fork until it just begins to clean flour from the side of the bowl. Separate the dough into 2 equal-size pieces, form into rounds, and refrigerate until needed.
- Preheat oven to 425 degrees F (220 degrees C).
- Melt 3 tablespoons of butter in a large skillet over medium heat, and cook the carrots, onion, and celery with black pepper until the onions are translucent, about 8 minutes. Transfer the mixture into a bowl; set aside. Place 2 tablespoons of flour into a resealable plastic zipper bag, and toss the cooked turkey meat into the flour; shake the bag to coat. Melt 2 more tablespoons of butter in the same skillet over medium heat, and cook the turkey meat in the butter until the flour coating turns golden brown, about 10 minutes. Pour the chicken broth into the skillet about 1/2 cup at a time, and stir until the broth begins to simmer and thicken, about 5 minutes. Remove the skillet from the heat. Stir in the cooked vegetables, green beans, cream of mushroom soup, cream-style corn, parsley, and thyme until the filling is thoroughly combined.
- Roll out one of the dough pieces on a floured work surface to a circle about 11 inches in diameter, then fit the crust into a 10-inch pie dish. Pour the filling into the bottom crust. Roll out the second crust into an 11-inch circle, lay it on top of the filling, then pinch and fold the two crusts together at the edges to seal. Cut 5 slits into the top crust to vent steam.

- Preheat oven to 400 degrees F (200 degrees C). Line 2 pie dishes with prepared pie crusts.

- Prepare a deep pie dish by placing a the pie crust into the dish.
- Melt 3 tablespoons of butter in a large skillet and add onion, celery, carrots, mushrooms and garlic. Cook over low heat until softened, about 10 minutes. - To make the crust, whisk 4 1/2 cups of flour with 1 teaspoon of salt in a bowl, then mash the 1/2-inch pieces of cold unsalted butter into the flour mixture with your fingers until the mixture looks like coarse crumbs. Stir in ice water, 1 tablespoon at a time, until the mixture gathers together into a smooth dough and all the flour is incorporated. Form the dough into a ball, wrap in plastic wrap, and refrigerate for 30 minutes.
- Bring a saucepan filled with water to a boil, and cook the carrots until they just begin to soften, about 2 minutes; transfer the carrots with a slotted spoon into a bowl of ice water to stop them from cooking. Heat 1/4 cup of unsalted butter over medium heat in a large pot, and cook the celery and onion until the onion begins to turn translucent, about 3 minutes; stir in mushrooms and garlic, and cook until the mushrooms have given up their juice and the vegetables are tender, about 8 more minutes. - Place one pie crust in a pie plate.
- Preheat oven to 425°F .
- In a large pan melt butter add onion, celery, carrots, potatoes, mushrooms and garlic.

- To Make the Turkey Mixture: Preheat the oven to 350 degrees.
- In a medium saucepan, combine 2 cups of the broth, the celery, onions and carrots; bring to a boil, then reduce the heat.
- Cover and simmer about 5 minutes or until the veggies are tender.
- In a custard cup, stir the remaining 1/4 cup of the broth and the cornstarch until smooth.
- Slowly stir this into the broth-veggie mixture, then stir in the milk; cook and stir over medium heat until the mixture comes to a boil.
- Reduce the heat; cook and stir for 1 minute more, then stir in the turkey, peas, parsley, sage, garlic powder, celery salt, poultry seasoning, Worcestershire sauce, drained corn, and Tony Chachere's Cajun seasoning.
- Transfer the mixture to a shallow 2-quart casserole.
- To Make the Pastry Crust: Lay one sheet of the phyllo dough on top of the turkey mixture.
- Spray the dough with no stick spray; repeat layering and spraying the phyllo dough two more times.
- Fold or crumple the edges of the dough and tuck them inside the casserole dish; bake for 35-40 minutes or until golden brown.
- You can add potatoes, mixed veggies, hot pepper sauce, minced garlic to enhance the flavor.
- NOTE: Even though the phyllo dough crust will get soft once you refrigerate it, it will get flaky again if you reheat it in the oven.
