- Heat oven to 400°F. Place chicken strips on ungreased cookie sheet. Bake at 400°F. for 18 minutes or until chicken is thoroughly heated.
- Meanwhile, spread margarine on bread slices. Add bread to cookie sheet with chicken during last 10 minutes of cooking time.
- Spread dressing on each toasted bread slice. Top with chicken, half cheese slice, ham and another half cheese slice. Bake an additional 2 to 3 minutes or until cheese is melted.

CHICKEN CORDON BLEU MELTS
Steps:
- Preheat BBQ grill to medium heat. Place a baking stone on the grill to preheat.
- Brush both sides of the chicken cutlets with olive oil and season with salt and pepper. Grill the cutlets about 2 minutes on each side. Chicken is done when the internal temperature reaches 165°F.
- Lay bread on baking sheet. Butter one side of the bread and spread Dijon mustard on the other side. Place a grilled chicken cutlet on top of the mustard. Top each piece of chicken with sliced ham and then 2 slices of Cache Valley Creamery Swiss Cheese.
- Place cheese side up on the baking stone and cook until the cheese is melted and the bottom of the bread is golden brown. Sprinkle chopped parsley on top and serve open faced. Serve immediately.
CHICKEN CORDON BLEU SANDWICHES

- Preheat the broiler. Line a baking sheet with foil and evenly space the chicken cutlets in the center. Brush the chicken with 1 tablespoon olive oil and season with salt and pepper. Broil, rotating the baking sheet as needed so the chicken cooks evenly, until lightly browned, 2 to 3 minutes. Flip the chicken and continue to broil until cooked through, 2 to 3 more minutes.
- Remove the baking sheet from the oven and top each piece of chicken with 1 slice ham and 2 slices mozzarella. Broil until the cheese melts, 1 to 2 minutes. Season with salt and drizzle with olive oil.
- Meanwhile, cut the baguette crosswise into 4 equal pieces, then split open. Spread the bottom halves with butter and the top halves with mustard. Toss the watercress with the remaining 1/2 tablespoon olive oil and season with salt and pepper. Sandwich the chicken and watercress between the baguette halves.
EASY CHICKEN CORDON BLEU MELTS WITH FRIED ONIONS

- Prepare the chicken salad: If using canned chicken, drain then shred with a fork in a medium sized bowl. Add Miracle Whip/mayonnaise and mustard. Season with Salad Supreme, celery salt, garlic powder, pepper and salt to taste. Mix well and set aside.
- Preheat the oven to 375 degrees.
- Slice the onion and place in a frying pan with a thin layer of water, just enough to cover the bottom of the pan. Fry the onion over medium heat stirring regularly until the water steams off. Continue to cook for a few minute until the onions turn golden in color, but are still soft.
- Lightly grease a cookie sheet. Place slices of bread in a single layer on the cookie sheet. Spread chicken salad across each slice of bread until it's evenly distributed.
- Layer 3 slices of ham on top of slice of bread, followed by 1 slice of provolone. Top each one with fried onions.
- Bake for 10 minutes or until cheese is melted.

- Preheat oven to 350 degrees.
- Combine ham, green onion, cream cheese and mustard. Stir in 3/4 cup of the swiss cheese.
- Place 1-2 T of ham mixture on each of the bread slices, spreading mixture to the edges of the bread.
- Sprinkle remaining cheese over each slice.
- Bake 15-18 minutes.

- Preheat oven to 375 degrees. Melt butter in glass baking dish.
- Lightly flatten chicken breasts between plastic wrap with mallet. Lay 1 slice of ham and 1 piece of cheese on flattened breast, fold in half and seal close with toothpicks. Repeat process for remaining chicken breasts.
- Coat each piece with flour, then eggs and then bread crumbs. Place chicken pieces in glass baking dish. Turn to coat with butter.
- Bake for 40-45 minutes or until golden brown. Serve with parselyed rice and steamed broccoli.
VEAL CORDON BLEU
This is so good! I love ordering veal dishes at French restaraunts and decided to try making this myself. I was surprised that it isn't that hard. I found this recipe in a 1973 Betty Crocker cookbook. Prep and cook times approximate. Note: If you don't have a wooden mallet, the edge of a plate can be used to pound meat.

- If using veal round steak, cut into 4 serving pieces.
- Pound meat until 1/4 inch thick.
- Place a slice of ham and cheese on each piece of meat.
- Roll up carefully, beginning at narrow end; secure rolls with wooden picks.
- Mix flour, salt, pepper and allspice; coat rolls with flour mixture.
- Dip rolls into egg, then roll in bread crumbs.
- Melt shortening in large skillet; brown rolls, about 5 minutes.
- Reduce heat and add water.
- Cover; simmer 45 minutes or until tender.
- Remove cover last 2 or 3 minutes to crisp rolls slightly.
