This one goes well grilled or roast chicken also good with pork and ham. I leave the five spice out because I don't like it.

Number Of Ingredients 7

8 tamarillos
1/2 cup brown sugar, firmly packed
1/4 cup water
3/4 cup beef stock
1/2 teaspoon five-spice powder
1/3 cup water (extra)
1 tablespoon brown sugar (extra)

Steps:

  • Peel and chop tamarillos, combine with sugar and water in pan, simmer, covered, about 5 mins.
  • or until tamarillos are soft. Blend or process mixture; strain.
  • Return mixture to pan, stir in stock, spice, extra water and extra sugar, simmer, uncovered, 5 minutes.
  • Freezes well.

3/4 lb tomatillo, husks removed
2 jalapenos, stemmed
1 medium white onion, peeled and quartered
4 cloves garlic, peeled
1 tablespoon vegetable oil
1/4 cup cilantro leaf, , leaves and stems, chopped
1 1/2 cups chicken stock (can substitute vegetable stock)
to taste salt and pepper, to taste

Steps:

  • Heat a cast iron skillet over high heat.
  • Grill tomatillos,jalapnos, onion and garlic in skillet, occasionally turning to toast all side, for about 5 minutes.
  • ingredients will blacken in places (this is a good thing).
  • Remove from skillet and put into a blender, add cilantro and puree until smooth.
  • Heat 1 vegetable oil in a deep saucepan over medium heat.
  • Pouyr puree into pan and cook, stirring constantly, until it darkens in color, about 5 minutes.
  • Add chicken stock, season with salt and pepper, and lower heat to medium low.
  • Cook, stirring occasionally, until sauce thickens, about 30 minutes.

1 pound tomatillos, husked and rinsed
3 cloves garlic, unpeeled
1 Anaheim chile, seeded, deveined
1 white onion, quartered
1/2 jalapeno chile, seeded, deveined
2 tablespoons extra-virgin olive oil
1 1/2 teaspoons salt, plus more for sprinkling
1/4 teaspoon freshly ground black pepper, plus more for sprinkling
Juice from 1/2 lime

Steps:

  • Preheat the oven to 350 degrees F.
  • Place the tomatillos, garlic, Anaheim chile, onions and jalapeno on a baking sheet. Toss the vegetables with the oil, salt and pepper. Roast the vegetables until the tomatillos turn a dark-green color and the onions golden brown, about 30 minutes.
  • Let the vegetables cool slightly. Peel the garlic and transfer all the ingredients to a blender. Blend until smooth, about 1 minute. Add the lime juice and sprinkle with more salt and pepper.
  • The tomatillo sauce can be made 1 day ahead, covered and chilled.

1 (4-pound) chicken
1/4 cup olive oil
1 1/2 Spanish onions, julienne
1 red bell pepper, julienne
1 green bell pepper, julienne
5 garlic cloves, chopped
1 (28-ounce) can whole tomatoes (recommended: San Marzano)
3 ounces Worcestershire sauce
4 ounces chipotle sauce
1 1/2 tablespoons dried oregano
2 tablespoons adobo seasoning
Salt and pepper
1 bunch fresh cilantro leaves, chopped

Steps:

  • For the Chicken Tamarillo: Place whole chicken in stockpot and cover with water. Bring to boil, over high heat, then reduce heat to a simmer and cook for 1 hour 15 minutes, or until fully cooked. Remove chicken to cutting board. Strain and reserve stock. Remove skin and discard. Shred the meat by pulling apart with your hands. Heat olive oil on medium heat in rondo or large high sided skillet) and saute onions for 10 minutes. Add peppers and garlic and saute for 5 minutes. Crush tomatoes with hands and add to skillet along with the juice from the can. Add the reserved chicken stock and simmer 5 minutes. Stir in the shredded chicken, Worcestershire sauce, chipotle sauce, oregano, adobo, salt and pepper, to taste, and simmer another 10 minutes. Fold in cilantro before serving.
  • Serve with rice, beans, shredded cheese, and fried sweet plantains, if desired.
