  • Wrap tortillas in damp paper towels and microwave for 20 seconds on 50% power.
  • Top each tortilla with refried beans, Taco Bell red sauce, onions and cheese.

When you need a quick, no-fuss burrito, turn to this 5-ingredient copycat Taco Bell bean burrito recipe. Fill, roll, and dip in taco sauce for an easy weeknight dinner for the family.

10 (10-inch) flour tortillas
1 (30 oz.) can of refried beans
¾ cup diced yellow onion (about ½ of a medium onion)
2½ cups of red taco sauce
1 cup of shredded cheddar cheese

Steps:

  • PREHEAT the oven to 225° F. Put a casserole dish in the oven.
  • OPEN the can of refried beans and pour them in a saucepan on the stove over medium-low heat.
  • ADD 1 cup of water (or cream) to the beans. Stir. Place the lid on the saucepan and heat the beans until they begin to simmer. Stir until the liquid is incorporated. Replace the lid and heat on low for 5 minutes. Take the pan off the heat and set it aside. The beans need to cool for 5 minutes, so the burritos are not too hot to roll.
  • PEEL and DICE the onion.
  • SHRED the cheese.
  • OPEN the taco sauce.
  • WARM the tortillas. Heat a skillet on the stove over medium heat. When the skillet is warm, add a tortilla and heat for 15 to 20 seconds. Flip it over and heat for another 10 to 15 seconds, or until warm. Repeat with all the tortillas.
  • SET UP the burrito assembly station. Line up the warm tortillas, the hot beans, the onions, the taco sauce, and the cheese.
  • MAKE EACH BURRITO. Smear 2 tablespoons of refried beans down the center of the tortilla. Sprinkle 1 teaspoon of minced onions on the beans, followed by 2 teaspoons of taco sauce and 1 tablespoon of shredded cheese.
  • ROLL THE BURRITO. Fold in the sides of the tortilla that are perpendicular to the line of ingredients to prevent anything from falling out of the burrito. Next, roll the right side of the tortilla over the bean mixture until the burrito is rolled and secured. Place in the heated casserole dish in the oven.
  • REPEAT with all the burritos.
  • HEAT in the oven for 10 minutes, or until the cheese melts.
  • SERVE with extra taco sauce.

1 (15 ounce) tomato puree

1/2 teaspoon onion powder

Steps:

  • Heat oil in a large skillet over medium-high heat. Add Add beef; cook, breaking up meat with a spoon, until no longer pink, about 9 to 12 minutes.
  • Add remaining ingredients; simmer over medium-low heat, stirring occasionally, until thickened, 12 to 15 minutes.

Ultimately you would make everything from scratch, but since this is a copycat recipe of a dollar menu junk food item, let's take some shortcuts ;-) Basically it's beef, rice & nacho cheese sauce and Fritos, nuttin' fancy. but ours will taste superior due to the fact it's not a dollar menu item and we can add more beef changing the flavor profile from a rice, fritos and cheese burrito with a minuscule meat flavor to a monumental explosion of culinary bliss! (too much? lol!) The only "stand" I take is I don't eat store bought Nacho cheese (but I will eat Taco Bell gas sauce, go figure) so the recipe includes a homemade version that literally takes 5 minutes.*Note, there is a great clone of Taco Bell seasoning and Spanish rice made from scratch on this website, if you're into the extra effort, it's worth it.

1 lb ground beef, 80/20
1 (1 ounce) package taco seasoning
1 (5 5/8 ounce) package Spanish rice, Knorr
1 (2 ounce) bag Fritos corn chips
6 flour tortillas
2 tablespoons butter
2 tablespoons flour
1 cup whole milk
6 ounces medium cheddar, shredded (about 1.5 cups)
1/4 teaspoon salt
1/4 teaspoon chili powder

Steps:

  • Cook ground beef and Spanish rice according to directions on packages.
  • For the Nacho cheese sauce:.
  • Add the butter and flour to a small sauce pot. Heat and whisk the butter and flour together until they become bubbly and foamy. Continue to cook and whisk the bubbly mixture for about 60 seconds.
  • Whisk the milk into the flour and butter mixture. Turn the heat up slightly and allow the milk to come to a simmer while whisking. When it reaches a simmer, the mixture will thicken. Once it's thick enough to coat a spoon, turn off the heat.
  • Stir in the shredded cheddar, one handful at a time, until melted into the sauce. If needed, place the pot over a low flame to help the cheese melt. Do not over heat the cheese sauce.
  • Once all the cheese is melted into the sauce, stir in the salt and chili powder. Taste and adjust the seasoning as needed. If the sauce becomes too thick, simply whisk in an additional splash of milk.
  • Lastly, let's eat!
  • Warm a flour tortilla in a pan or oven until pliable. lay on a flat surface, rice, beef, Fritos and top with nacho cheese sauce, roll 'er up and dig inches.

1 cup long grain rice
2 tablespoons tomato paste
1/4 teaspoon sweet paprika
1/2 teaspoon kosher salt
1/2 yellow onion, peeled and roughly chopped
1 green bell pepper, seeded and coarsely chopped
1 jalapeno pepper, seeded and chopped
3 garlic cloves, crushed
2 teaspoons ground cumin
1 teaspoon kosher salt
2 1/2 teaspoons whole black peppercorns
2 cups whole milk
1 tablespoon tomato paste
1 teaspoon red wine vinegar
2 cups cheddar cheese, grated
2 cups Velveeta cheese, grated
1/4 cup mayonnaise
3 dashes chipotle hot sauce
1/4 teaspoon chili powder
1/8 teaspoon garlic powder
1/8 teaspoon onion powder
1/8 teaspoon paprika
8 flour tortillas, 10 inch size
1 1/3 cups cheddar cheese, shredded
1/4 cup reduced-fat sour cream
1 tablespoon vegetable oil

Steps:

  • Make Copycat Taco Bell Seasoned Beef, set aside 1/1/3 cups for Quesaritos. Reserve the rest.
  • Make Red Rice:.
  • Cook rice according to package directions, adding tomato paste, paprika, and salt to water before rice.
  • Make Nacho Cheese Sauce:.
  • In a large saucepan over medium, heat oil. Add onion, bell pepper, garlic, cumin, salt, and black pepper. Cook, stirring occasionally until onion has softened about 5 to 7 minutes. Slowly whisk in the milk, tomato paste, and vinegar, until well combined; allow to steep for 20 minutes.
  • In a large heatproof bowl, combine grated cheeses, Place a fine mesh strainer over the bowl containing the cheese. Strain milk mixture into the bowl. Discard solids from strainer.
  • Using a wooden spoon stir cheese mixture until smooth and saucy. If cheese doesn't melt completely, set bowl over a pot of simmering water and stir until cheese melts and mixture comes together.
  • Make Creamy Chipotle Sauce:.
  • In a small bowl stir together Creamy Chipotle Sauce ingredients. Refrigerate until ready to use.
  • Divide shredded cheddar and 1/2 of Nacho Cheese Sauce between 4 tortillas, top with remaining tortillas forming quesadillas. Working one at a time, wrap each quesadilla in a layer of damp paper towels; microwave on high until cheese is almost completely melted 2 to 4 minutes. Dividing between all four, roll each quesadilla burrito - style around Copycat Taco Bell Seasoned Beef, rice, remaining nacho cheese, Chipotle Sour Cream and sour cream. Rest seam side down after rolling.
  • Heat oil in a large skillet over medium high. Place Quesaritos in skille and toast on each side, about two minutes each side. Serve immediately.
