8 roma tomatoes (Whole)
1 small yellow onion, diced (1/3 - 1/2 C Diced)
1 fresh jalapeno pepper, stem removed and seeded
1/2 teaspoon celery salt
1/8 teaspoon oregano
1/4 cup fresh cilantro
1/2 teaspoon sugar
1 fresh poblano pepper
1/4 teaspoon garlic salt
1/2-3/4 cup water
1/4 teaspoon black pepper

Steps:

  • In a moderately hot skillet that has been sprayed with a cooking spray brown the coarsely chopped Pablano pepper and jalapeno pepper.
  • Brown and stir until the skins have turned dark on many sides of peppers.
  • Add tomatoes and brown them until the skins on the tomatoes have turned a dark brown on several sides, remove pan from heat.
  • Put onion in hot skillet that has been removed from the heat and stir.
  • In a food processor add celery salt, oregano, cilantro, sugar, garlic salt and pepper.
  • Pour peppers, onions and tomatoes and add water a little at a time; process just enough to chop to a medium
  • consistency but not to a smooth paste, leave a little chunky.
  • Remove from processor and pour in hot skillet turn up heat quickly stir for 3 min and serve hot.

This is my version of queso that is familiar with Pappasito's in Houston, TX. I found this copycat from CopyKat.com with my adjustments of more onion, garlic, and tomato.. and this is fairly close..but not quite there.. it's really good all the same!! Hope you think so too!

1 1/2 lbs process American cheese (I use Land O' Lakes, not Velveeta)
1 (4 ounce) can green chilies, do not drain
1 tablespoon garlic (the kind from a jar)
3/4 cup diced white onion
1/3 cup milk
3/4 cup diced ripe tomatoes, seeds discarded
1/2 teaspoon garlic salt

Steps:

  • Melt cheese with milk and stir until blended.
  • Add chilies with liquid.
  • Add garlic, onion and stir until onions are transparent.
  • Remove from heat and add tomatoes before serving.

1/2 teaspoon celery salt
1/8 teaspoon oregano
1/4 cup chopped fresh cilantro
1/2 teaspoon sugar
1 fresh pablano pepper
1/4 teaspoon garlic salt
1/2 cup water - (to 3/4)
1/4 teaspoon freshly-ground black pepper

Steps:

  • In a moderately-hot skillet that has been sprayed with a cooking spray brown the coarsely chopped Pablano pepper and jalapeño pepper. Brown and stir until the skins have turned dark on many sides of peppers. Add tomatoes and brown them until the skins on the tomatoes have turned a dark brown on several sides, remove pan from heat. Put onion in hot skillet that has been removed from the heat and stir. In a food processor add celery salt, oregano, cilantro, sugar, garlic salt and pepper. Pour in peppers, onions and tomatoes and add water a little at a time, process just enough to chop to a medium consistency but not to a smooth paste, leave a little chunky. Remove from processor and pour in hot skillet, turn up heat, quickly stir for 3 minutes and serve hot. This recipe yields ?? servings.

I found this is a stack of old handwritten recipes. I probably copied it from the Houston Chronicle?? I have not made this at home yet, so serving size and prep time are a guess. Also, I personally would drain some of the bacon fat and add the salt to taste, but I am listing it how it was originally written. Please note these beans should soak for 8 hours, so plan ahead.

3/4 lb dried pinto bean
3 quarts water
3/8 lb bacon, cut up
1/4 cup garlic, finely minced
4 tablespoons cilantro, chopped and divided
1/2 cup onion, chopped
1 1/2 teaspoons cumin
1 1/2 teaspoons onion powder
3/4 tablespoon salt
1 cup tomatoes, chopped

Steps:

  • Soak beans in 2 qts water for 8 hours Drain and set aside.
  • In a heavy pot, cook bacon until done. Remove bacon and set aside, leaving bacon fat in pot. Add garlic, 2 Tbls. cilantro and onion to hot bacon fat. Cook until onion is transparent.
  • Add beans, bacon, cumin and onion powder. Stir in salt and remaining 1 qt water.
  • Turn heat to med-low and cook slowly until fork tender. Just before serving, stir in remaining cilantro and tomatoes.
