COUNTRY TIME Lemonade Flavor Drink Mix
1/2 cup water
2 cups raspberry sorbet, softened
2 cups thawed COOL WHIP Whipped Topping
1 ready-to-use graham cracker crumb crust (6 oz.)
1/2 cup each fresh blueberries, raspberries and sliced strawberries

Steps:

Measure drink mix into cap to 1-qt. line; pour into large bowl. Add water; stir until mix is completely dissolved.
Add sorbet; beat with mixer on low speed until well blended. Whisk in COOL WHIP. Freeze 45 min. or until thick enough to mound; spoon into crust.
Freeze 4 hours or until firm. Remove from freezer 15 min. before serving; let stand at room temperature to soften slightly. Serve topped with berries.

1/3 cup country time lemonade mix
1/2 cup water
1 pint vanilla ice cream, softened
1 (8 ounce) container Cool Whip, thawed
1 9-inch graham cracker crust (bought or home made)

Steps:

stir drink mix and water until dissolved.
beat lemonade mix and ice cream on low until blended.
stir in whip topping.
freeze until mixture firms, then spoon into crust.
freeze 4 hrs.
let stand out for 10 min.
before serving.
garnish w/ lemon slices.

Came up with this refridgerated lemon dessert for supper last night and boy did it hit the mark on such a sweltering summer day!

Ingredients

1 box duncan hines lemon supreme cake mix
( plus 3 eggs,1/3 cup vegetable oil , and 1 1/3 cup water for cake)
2 small boxes of jello instant lemon pudding
( plus 1 3/4 cup milk needed for filling)
1 small container whipped topping (cool whip)
1 Tbsp fresh lemon zest

Steps:

1. Preheat your oven to 350F. Mix up the lemon cake mix as directed on box with electric mixer and pour in round spring form pan.Bake 30 to 35 minutes or til cake tests done in center.Remove from oven and let cool completely. Leave cake in pan after cooled.
2. Now mix up 2 small packages of instant lemon pudding. Whisk til thickened.Spread half of pudding over top of cake. Mix other half of pudding with whipped topping (cool whip) and spread over layer of lemon pudding and spread to edge of cake pan. Place fresh lemon zest over the top of cake and refridgerate for 2 hours. Before serving remove sides of springform pan. Enjoy!

1 9-inch graham cracker crust
1 (10 ounce) package frozen raspberries in light syrup, thawed
1 tablespoon cornstarch
3 egg yolks
1 (14 ounce) can Eagle Brand Condensed Milk
1/2 cup ReaLemon juice
yellow food coloring (optional)
whipped topping or whipped cream

Steps:

Preheat oven to 350 deg.
In saucepan, combine raspberries and cornstarch; cook and stir until thickened.
In bowl, beat egg yolk; stir in sweetened condensed milk, ReaLemon juice and food coloring if desired.
Pour over crust; bake 8 minutes.
Spoon raspberry mixture over top.
Chill 4 hours.
Spread with whipped topping.
Garnish as desired.
Refrigerate leftovers.

This recipe was given to my husband and myself after we fell in love with the result during a summer vacation to visit his family in North Carolina. The only thing better than eating a wonderful dessert, prepared with love by family members, is being able to recreate it when you can't be together! I can't think of anything nicer on a hot summer day, though this pie is great anytime you want something cool, refreshing and simple. The recipe makes two pies, but my mother-in-law suggests storing the extra filling in a separate container and serving it with assorted cookies if you don't need two pies. Please note the chilling time (2 hours) plus thawing time (30 minutes) and plan accordingly. (I have listed this amount of time as cooking time for this recipe as well.) It will be worth the wait!

14 ounces sweetened condensed milk
6 ounces frozen lemonade concentrate, thawed and undiluted
12 ounces frozen whipped topping, thawed
2 (9 inch) graham cracker pie crust

Steps:

In a large bowl, mix together the sweetened condensed milk and lemonade concentrate.
Fold the whipped topping in slowly, keeping as much air in the mixture as possible.
Spoon into crusts.
Freeze until firm--I suggest about two hours minimum.
Remove from the freezer half an hour before serving, to allow the pie to thaw to a creamy state.
