Halibut Fillets with Lemon & Butter Sauce | Traeger Grills image

A fish fit for lunch or dinner, grill this flaky halibut topped with creamy butter sauce for your next seafood meal. Try this recipe on your Traeger.

white wine
small shallot, diced
sprigs of fresh thyme
Juice of 1/2 lemon
heavy cream
(1 stick) unsalted butter, cubed
Kosher salt
freshly ground white pepper
Traeger Fin & Feather Rub, to taste
(8-oz) thick-cut halibut fillets
unsalted butter

Steps:

  • When ready to cook, place a cast iron skillet on the grill grates to preheat. Set the Traeger temperature to 425°F and preheat with the lid closed for 15 minutes.
  • Make the lemon and butter sauce: Add the wine, shallot, thyme, and lemon juice to a medium saucepan. Bring to a simmer over medium-high heat and cook until reduced by half, 10-15 minutes.
  • Reduce the heat to low and stir in the heavy cream. Add the butter, a few cubes at a time, slowly whisking after each addition until melted and incorporated, 3-4 minutes total. Do not let the sauce come to a boil.
  • Season the sauce with salt and pepper then strain through a fine-mesh sieve into a medium bowl, discarding the solids. Return the strained sauce to the saucepan and keep warm until ready to serve.
  • Season the halibut fillets with Traeger Fin and Feather Rub.
  • Insert the probe into the thickest part of a halibut fillet. Add the butter to the cast iron skillet on the Traeger. When the butter is hot, add the halibut fillets to the skillet and cook until the internal temperature reaches 140°F, 4-5 minutes per side.
  • Remove the halibut from the grill and serve with the warm lemon butter sauce. Enjoy!

¾ cup butter, softened
1 tablespoon lemon juice
1 ½ teaspoons onion powder
1 ½ teaspoons dried parsley
¾ teaspoon dried dill weed
¼ teaspoon white sugar
¼ teaspoon salt
¼ teaspoon ground black pepper
4 inch-thick halibut steaks

Steps:

  • Preheat grill for medium heat and lightly oil the grate.
  • Stir butter, lemon juice, onion powder, parsley, dill, sugar, salt, and pepper together in a bowl; spread evenly over the halibut steaks.
  • Cook on preheated grill until the fish flakes easily with a fork, 5 to 6 minutes per side.

I live in the "Halibut Capitol of the World" and this is a favorite summertime meal. It gives the halibut wonderful flavor!

1 1/2 lbs halibut fillets
2 teaspoons smoked paprika
1 teaspoon garlic powder
1 teaspoon dried thyme
1 teaspoon dried basil
1 teaspoon salt
1 teaspoon black pepper
1/4-1/2 teaspoon cayenne pepper
4 tablespoons butter
4 tablespoons olive oil

Steps:

  • Preheat the grill. Combine all the dried spices in a small bowl. Melt the butter and combine with the olive oil in a shallow dish. Dip each halibut filet in the butter and oil and place on a baking sheet. Sprinkle each side of the fish generously with the spice combination, and allow to sit for 15 minutes.
  • Place the filets on a well oiled grill for 4 mins and carefully turn them over. Grill for an additional 4-5 mins on the second side, or until the fish is flaky.
  • Great with coleslaw!
