Canned peaches make this cobbler quick to assemble. The tender topping pairs nicely with the sweet fruit filling and butterscotch sauce. The sauce should always be served warm. -Ellen Merick, North Pole, Alaska

2 cans (29 ounces each) sliced peaches
1/2 cup packed brown sugar
6 tablespoons quick-cooking tapioca
1 teaspoon ground cinnamon, optional
1 teaspoon lemon juice
1 teaspoon vanilla extract
TOPPING:
1 cup all-purpose flour
1 cup sugar
1 teaspoon baking powder
1/2 teaspoon salt
1/4 cup cold butter, cubed
2 large eggs, room temperature, lightly beaten
BUTTERSCOTCH SAUCE:
1/2 cup packed brown sugar
2 tablespoons all-purpose flour
1/8 teaspoon salt
1/4 cup butter, melted
2 tablespoons lemon juice
Vanilla ice cream, optional

Steps:

  • Drain peaches, reserving 1/2 cup syrup for the sauce. In a large bowl, combine peaches, brown sugar, tapioca, cinnamon if desired, lemon juice and vanilla. Transfer to an ungreased 11x7-in. baking dish. Let stand for 15 minutes., In a large bowl, combine the flour, sugar, baking powder and salt; cut in butter until mixture resembles coarse crumbs. Stir in eggs. Drop by spoonfuls onto peach mixture; spread evenly. Bake at 350° until filling is bubbly and a toothpick inserted in topping comes out clean, 50-55 minutes. Cool for 10 minutes., For butterscotch sauce, in a small saucepan, combine the brown sugar, flour, salt, butter and reserved peach syrup. Bring to a boil over medium heat; cook and stir until thickened, 1 minute. Remove from the heat; add lemon juice. If desired, serve cobbler with ice cream.

2 cups half-and-half cream
3-1/2 cups sugar
3/4 teaspoon salt
6 large eggs, lightly beaten
4 cups heavy whipping cream
2 teaspoons vanilla extract
6 to 8 medium peaches, peeled and sliced or 4 cups frozen unsweetened peach slices

Steps:

  • In a large saucepan, heat half-and-half to 175°; stir in the sugar and salt until dissolved. Whisk a small amount of hot cream mixture into the eggs. Return all to the pan, whisking constantly. Cook and stir over low heat until the mixture reaches at least 160° and coats the back of a metal spoon., Remove from the heat. Cool quickly by placing pan in a bowl of ice water; stir for 2 minutes. Stir in whipping cream and vanilla. Press plastic wrap onto surface of custard. Refrigerate for several hours or overnight., Place peaches in a blender, cover and process until pureed. Stir into the custard. Fill cylinder of ice cream freezer two-thirds full; freeze according to manufacturer's directions., Refrigerate remaining mixture until ready to freeze, stirring before freezing each batch. Allow to ripen in ice cream freezer or firm up in the refrigerator freezer for 2-4 hours before serving.

32 ounces sliced peaches (, (6 cups fresh sliced peaches))
1/2 cup sugar
1/2 teaspoon ground cinnamon
1/8 teaspoon ground nutmeg
1 teaspoon fresh lemon juice
1 tablespoon cornstarch
1 cup flour
1/2 cup brown sugar
1 teaspoon baking powder
1/2 teaspoon salt
6 tablespoons unsalted butter (, chilled and cut into small pieces)
1/4 cup water
1/4 cup cinnamon sugar (, (1/4 cup sugar, 1 teaspoon cinnamon))

Steps:

  • Preheat oven to 400 degrees.
  • Mix together peaches, sugar, cinnamon, nutmeg, lemon juice and cornstarch and put into 8x8 baking dish and bake for 15 minutes.
  • In a food processor add the flour, brown sugar, baking powder, salt and butter and pulse until it makes coarse crumbs, about 15 times.
  • Add in water in 1 tablespoon amounts at a time and pulse each time.
  • When peaches come out add the topping then sprinkle cinnamon sugar over it.
  • Bake for 30 minutes, uncovered.

I got this recipe from Ben & Jerry's Ice Cream book. It is the reason I own an ice cream maker. Every year we go to Gaffney, SC and pick up a huge basket of peaches. This is the perfect way to use some of them. The cooking time listed includes time to let the peaches sit in the fridge.

2 cups finely chopped ripe peaches
3/4 cup sugar
2 teaspoons lemon juice (the juice from 1/2 a lemon)
2 large eggs
3/4 cup sugar
2 cups heavy cream or 2 cups whipping cream
1 cup milk

Steps:

  • Combine the peaches, lemon juice and 3/4 cup of sugar in a bowl.
  • Cover and refrigerate for 2 hours, stirring every 30 minutes.
  • Remove the peaches from the fridge and drain the juice into another bowl and set aside.
  • Return the peaches to the fridge.
  • Whisk the eggs in a mixing bowl until light and fluffy, 1 to 2 minutes.
  • Slowly whisk in 3/4 cup of sugar until completely blended.
  • Add the cream and milk and whisk to blend and then add the peach juice and mix until completely blended.
  • Pour into your ice cream maker and freeze according to the ice maker's directions.
  • When the ice cream is almost frozen (about 2 minutes before it is done) add the peaches and continue freezing until it is ready.
  • If your ice cream maker is anything like mine, you may need to put the ice cream into a container and let it finish freezing in the freezer.

As a beginning cook, I especially liked to practice making pies. Peaches are probably my favorite fruit (but only when in season), so it was a pie I practiced often. I finally got up the nerve to enter a local Grange Fair, and was so surprised to win! That was great encouragement for a novice pie maker.

pastry for a double-crust 9-inch pie
3/4 cup sugar
1/4 cup flour
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/8 teaspoon salt
6 cups sliced peeled peaches
1 egg, lightly beaten
1 cup heavy cream (half-and-half or light cream may be substituted)

Steps:

  • Preheat oven to 425 degrees. On a lightly floured board, roll out bottom crust and fit into the bottom of a 9-inch pie pan.
  • In a large bowl, combine sugar, flour, cinnamon, nutmeg and salt. Add peaches and stir until they are coated. Spoon peaches into lined pie pan.
  • Mix together egg and cream and pour over peaches. Roll the remaining pie pastry to cover pie and place over the peaches. Round edges to seal; prick top of pastry to let steam escape.
  • Bake for 15 minutes at 425, then reduce oven temperature to 350 and bake until crust is golden, about 30 minutes. Serve warm.
