FAVORITE FAMILY CORN
I first made this corn for a family gathering. (That means 30 + people of varying ages!) Everyone, from seniors to children liked it. It is simple to make and made with ingredients you can keep on hand. It travels and holds well in a crockpot.

Steps:
- Melt butter and cream cheese.
- Stir in thawed corn.
- Salt and pepper to taste.
- Cook, stirring occasionally, until the sauce has thickened.
- Note: If corn is cold the sauce ingredients will lump up when it's added.
- It will melt out smooth again!
SKILLET CHICKEN WITH CREAMED CORN
Skillet chicken with creamed corn is an easy weeknight dinner that's ready in just 25 minutes.

Steps:
- Combine flour, salt, pepper and paprika in a shallow dish.
- Coat chicken on both sides with the flour mixture.
- Melt butter in a large nonstick skillet over medium-high heat.
- Add chicken and cook 2-3 minutes on each side, until well browned. Reduce heat to medium-low and continue cooking the chicken until it's cooked through, 7-10 minutes more.
- Remove the chicken to a plate and cover to keep warm.
- Add the creamed corn and yellow corn to the skillet, stirring to warm through for 2-3 minutes.
- Serve the chicken and corn sauce over brown rice or quinoa. Sprinkle with cilantro or parsley and sliced green onions.

- Combine shredded cheese, mushrooms, hard-cooked eggs, corn and peppers in medium bowl; cover and refrigerate until ready to use.
- Preheat oven to 350ºF. Place 1 cup of the milk, flour, sour cream, eggs and salt in blender; cover. Blend until smooth. Let stand 10 min.
- Spray 8-inch nonstick crepe pan or saute pan with cooking spray. Heat on medium-high heat. Add 3 Tbsp. batter; tilt pan to evenly cover bottom with batter. Cook crepe 30 sec. on each side or until lightly browned in both sides. Stack cooked crepes with parchment paper in between each one. Continue with remaining batter to make a total of 12 crepes.
- Fill each crepe with 1/3 cup shredded cheese mixture; roll tightly. Place filled crepes in 13x9-inch baking dish; cover with foil. Bake 25 min.

- Chicken and Dumplings. Oh, how I love thee. Thou comest together so quickly with such humble ingredients, and thrilleth my soul with thy mouth-watering texture and flavor.
- Cheeseburger Soup*. I don’t know how I lived without this recipe in my repitiore. I love how you get such a flavorful soup with just ground beef. Must be all the cheese.
