Carrot, celery, parsley and peppers give great color to this meat loaf, while the unique addition of apple makes it moist.

Ingredients

2 eggs
1 tablespoon cider vinegar
1/3 cup dry bread crumbs
5 bacon strips, cooked and crumbled
1/3 cup shredded peeled tart apple
1/3 cup grated carrots
1/3 cup each chopped celery, onion, green pepper and sweet red pepper
3 garlic cloves, minced
3 tablespoons dried parsley flakes
1-1/4 teaspoons salt
1 teaspoon pepper
2 pounds ground beef

Steps:

In a large bowl, combine the eggs, vinegar, bread crumbs, bacon, apple, vegetables, garlic, parsley, salt and pepper. Crumble beef over the mixture and mix well. , Pat into a greased 9x5-in. loaf pan. Bake, uncovered, at 350° for 1 hour or until meat is no longer pink and a thermometer reads 160° drain. Let stand 10 minutes before slicing.

Ingredients

1 1/2 lbs ground beef
5 ounces fresh spinach, finely chopped
2 carrots, finely grated
1 tablespoon Worcestershire sauce
1 large egg, beaten
3/4 cup tomato juice or 3/4 cup vegetable juice
1/4 cup parmesan cheese, grated
1/4 cup breadcrumbs
1/4 cup onion, finely chopped
1/4 cup ketchup
1/4 teaspoon salt
1/4 teaspoon pepper

Steps:

Pre-heat oven to 350*.
In a small bowl combine 1/4 c vegetable or tomato juice and ketchup. Set aside.
Combine all other ingredients and mix well.
Form into a loaf and place in a 1 qt loaf pan.
Bake for 50-55 min, topping with ketchup mixture during the last five minutes of cooking.
NOTES:.
I have used a variety of vegetables in this meatloaf, including zucchini, yellow squash, parsnips, etc. I also add a little fresh garlic. I have also doubled the recipe and cooked in a 9x13 glass baking dish when cooking for a crowd.

1 1/2 lbs ground beef
1 (1 1/4 ounce) package vegetable soup mix, Knorr brand
1 egg
1/2 cup seasoned dry bread crumb
1/2 cup milk
tomato sauce (optional)

Steps:

In a medium bowl, combine first 5 ingredients.
Mold into a loaf on a foil lined baking pan or place in loaf pan and bake for 1 hour at 350°F.
Let stand 10 minutes before slicing. If desired serve with tomato sauce over top.
