Steps:
- In a large skillet, heat 1 1/2 teaspoons butter and 1 tablespoon oil over medium. Add onion and cook, stirring occasionally, until golden, 10 minutes. Add carrot, thyme, and cayenne and season with salt and pepper. Cook, stirring occasionally, until carrot is tender, 5 minutes. (If mixture is dry or begins to overbrown, add up to 2 tablespoons water.) Transfer mixture to a food processor.
- Return skillet to medium-high and add remaining 1 1/2 teaspoons butter and remaining 1 tablespoon oil. Pat livers dry with paper towels. Season livers with salt and pepper and add to skillet. Cook until golden brown on all sides and cooked through, 6 minutes. Transfer livers to processor and pulse, scraping down sides as needed, until mixture is mostly smooth. Season to taste with salt and pepper and let cool. Transfer pate to a small bowl and serve at room temperature with toasts or crackers.

- Preheat oven to Broil/Grill.
- Sprinkle each 1/2 chicken liver with garlic salt to taste. Wrap 1/2 slice bacon around each chicken piece and fasten with a toothpick. Place on a broiling pan.
- Broil for 5 to 7 minutes. Turn pieces over and broil another 5 to 7 minutes, or until chicken livers are cooked through and no longer pink inside. Serve hot.

- Remove chicken livers from container, rinse and dry on paper towel.
- Combine the flour, cornstarch and seasonings in a small bowl. Combine the egg and milk in a separate bowl.
- Dip the livers in the milk mixture and then in the flour mixture. Lay on the air fryer tray or basket. Continue until all are complete. Don't crowd the pan when cooking.
- Using the Spray Olive Oil, spray the livers and the flour mixture will start to get moist but not wet and goopy.
- Cook at 390 for 10 minutes. Turn them over at the half way point and see if they need a bit more spray oil. Continue cooking until the internal temperature reaches 165 degrees. They will be a deep golden brown.

CHOPPED CHICKEN LIVERS

- Rinse the livers and pat dry with a kitchen towel. Clean the livers, by trimming and discarding any visible fat, green parts, or membrane. Set the livers aside.
- In a large saute pan, over medium heat, heat 2 tablespoons of the chicken fat and add the onions. Cook, stirring occasionally, until golden brown, about 10 to 12 minutes. Transfer the onions to a plate with a slotted spoon. Wipe out the pan.
- Spread the livers out in a single layer on a sheet pan and season with the salt and pepper. Raise the heat to high, add 2 tablespoons of the fat to the pan and when the fat begins to shimmer, lay the livers in the pan in a single layer. Working in batches, cook the livers turning each over once, until browned, about 2 to 2 1/2 minutes per side. Transfer the livers to the plate with the onions. Repeat with 2 tablespoons fat and remaining livers. Cool.
- Coarsely chop the livers with a knife (don't be tempted to use a food processor). In a medium bowl, gently combine the livers with the eggs, onions, and remaining 2 tablespoons fat. Season with salt and pepper to taste. Refrigerate for 2 hours before serving. Serve with toast and cornichons if desired.
- Serving suggestion: Toasted rye or pumpernickel bread and cornichons .
- In a small saucepan combine the chicken fat or skin, thyme, garlic, and water. Bring the mixture to a simmer over medium-low to medium heat. Cook until the fat has rendered (liquefied) and the skin becomes crispy, about 35 to 45 minutes. (Adjust the heat, as needed, to keep the skin from browning too quickly.) Set the chicken fat aside to cool slightly. Strain into a small bowl. If desired reserve the crispy skin. Refrigerate, covered, for up to one week.

Steps:
- Cut livers in two, season with salt and pepper.
- Melt butter in saute pan and add livers; cook for one minute.
- Wrap each piece of liver in a strip of bacon and fasten with a toothpick.
- About ten minutes before serving, place bacon wrapped livers in a baking pan and broil until bacon is crisp.
- Drain on paper towels.
- Serve hot, either with toothpicks or on a small square of toast.

RUMAKI APPETIZER

- Place bacon strips on frying pan with low flame and cover pan.
- Melt some butter or margarine, and add the soy sauce, ginger, sherry and garlic in another frying pan with a container of chicken livers on a medium flame.
- DO NOT ALLOW THE BACON TO GET FULLY DONE, ONLY PARTIALLY DONE.
- While bacon is still soft and only partially done, remove and place strips onto a paper towel to slightly cool.
- When livers are done on both sides, remove from flame and also set aside onto paper towel to slightly cool.
- Slice the chicken livers into somewhat flat pieces.
- Take a piece of chicken liver and a slice of water chestnut and wrap either 1/2 strip of bacon or a whole strip of bacon around the liver and water chestnut, securing it with a wooden toothpick.
- Place the Rumaki onto a cookie sheet, and continue this same procedure, until the cookie sheet is filled and the livers and bacon are gone.
- Set the cookie sheet with all of the Rumaki aside.
- About 20 minutes before company arrives, preheat oven to 450 degrees.
- About 15 minutes before company arrives, place the cookie sheet with the Rumaki into the oven for 10 minutes, and then raise the oven to broil for about 3 to 5 minutes.
- Remove from oven and serve on a hot plate.
- Leave the toothpicks in place so they can pick it up by the toothpicks.

- 1. Line a plate with paper towels to drain rosemary and garlic chips and set aside. --- Heat oil in medium skillet over medium-high heat. Add rosemary leaves, sauté until crisp, about 30 seconds. Using slotted spoon, transfer sautéed rosemary to paper towels.
- 2. Quickly add garlic slices and cook until just golden and crisp. DO NOT over-cook or they may become bitter. Add to plate with rosemary. --- Quickly add the red onion to same skillet sauté until golden, about 3 minutes. Sprinkle in the salt,pepper and spice powder.
- 3. Add the minced garlic. liver and 1 teaspoon chopped rosemary( not form the sautéed). Cook until liver starts to color then turn. Continue cooking and turning until all sides are lightly browned, about 3 minutes.
- 4. Deglaze with Madeira, and cook until wine has evaporated, about 2 minutes. Add chopped parsley and toss. Taste and season as needed. Spoon onto toasted baguette slices and sprinkle with crispy garlic and rosemary to garnish.
- 5. Note: I like to add finely diced bacon in with the chicken liver and cook together until both are done.
- 6. New Regime Spice Blend:** Grind all in spice grinder. Store in an airtight container in a cool, dark place.

- Soak & Rinse the livers: Rinse 1 lb of chicken livers under running water, then, soak in milk for up to a couple of hours to help remove the metalicky taste (optional). Next, place in a colander and rinse under running water again to rinse from the milk. Cut the two lobes of the livers in half.
- Fry the onions: Meanwhile, peel and cut the onion into 1/4" half rings. Add 1/2 cup of oil to a large skillet and cook the onion, stirring often over medium heat until the onions are golden in color. Then, remove the onions with a slotted spoon to one bowl and the oil to a different bowl. Set aside both.
- Dredge livers: Add 1 cup of all-purpose flour to a deep bowl, then dredge the liver in flour shaking off excess.

Tip: As you cook in batches, it might be useful to use a paper towel to clean the skillet between each batch, otherwise the little leftover pieces burn in the next batch.Do not overcook the liver or it will taste chalky. The livers should be velvety smooth on the inside with slightly pink centers. Transfer to a paper towel-lined platter and sprinkle with salt and pepper right away.
