EASY EGG TACOS

Steps:
- In medium non-stick skillet, heat oil over medium heat; saute red and jalapeno peppers and garlic for 2 minutes or until softened. Add ham and chili powder; saute 2 minutes or until heated through. Remove to bowl; cover to keep warm.
- In a small bowl or measuring cup, whisk eggs, salt and pepper.
- Melt butter in the same skillet on medium heat; add eggs and cook, stirring gently, until set but still soft, about 2 minutes.
- Spoon eggs on each tortilla, top with ham mixture, cheese and onion. Serve with salsa and/or coriander, if desired.

SCRAMBLED EGG TACOS

- For the tomatillo salsa: Preheat your oven to 450 degrees F.
- Lay out the tomatillos, red onion and jalapeno on a rimmed baking sheet and drizzle with olive oil. Season with salt and pepper then roast until slightly charred and softened, 10 minutes. Remove from the oven and let cool slightly. Pour into the bowl of a food processor and puree until relatively smooth. Add the cilantro and lime juice and adjust with salt.
- For the scrambled eggs: Place a saute pan over medium heat. In the meantime, scramble your eggs in a bowl, being sure not to have any long strands of egg whites hanging off of your fork.
- When the pan is hot, add the butter and swirl it around as it melts to coat the pan. Pour in your eggs and continue to scramble them in the pan so you have small curds. Season with salt and pepper and cook until the eggs are loose and still somewhat runny. Stir in the Mexican crema to stop the eggs from cooking further.
- To serve: Build a taco by spooning some of the soft scrambled eggs on a tortilla. Top with more Mexican crema and the Tomatillo Salsa and cilantro.
CRAZY GOOD EGG TACOS (10 MINUTE)

- In a large bowl, whisk the eggs with chili powder and salt.
- Preheat a pan with butter. Scramble the egg mixture in the pan, scraping only the bottom of the pan as the eggs cook to prevent breaking the eggs up too much. The eggs should take around 3-4 minutes to cook all the way through.
- Heat the tortillas over an open flame for a nice sear or in the microwave for 10 seconds until slightly softened. Place the egg mixture into the center of the tortilla.
- Top the egg mixture with cheese, salsa, and cilantro. Enjoy!

- Crack the eggs into a small bowl and whisk to combine.
- Heat the olive oil in a medium nonstick pan over medium heat until shimmering and add the beaten eggs, salt, and pepper. Using a rubber spatula, stir the eggs often until firm, roughly 3 minutes.
- Divide the eggs between the tortillas.
- Top each taco with pico de gallo, black beans, and cilantro.
- Enjoy!

BACON AND EGG TACOS
This makes a great weekend brunch, all ingredient amounts may be adjusted to taste, I also add in a pinch of cayenne pepper to the eggs, the baking powder will make the eggs very fluffy, you may omit if desired but I suggest to add it in, wrap the tortillas in foil and warm in the oven at 200 degrees F while making the eggs, serve the tortillas with salsa :)

- In a skillet cook the bacon until crisp; remove to a plate (you may drain the fat or leave a few tablespoons in the skillet and omit the butter).
- In a bowl whisk the eggs with cream, baking powder, salt and pepper until well combined, then add in the cooked bacon.
- Heat 2 tablespoons butter over medium-high heat until sizzling.
- Pour the egg mixture into the skillet and cook until almost firm but still slightly watery.
- Add in the cheese and cook gently stirring until the eggs are just cooked and the cheese has melted.
- Spoon about 1/4 cup or a little more down the center of each warm tortilla, then sprinkle a small amount of green onions (if using) over the egg mixture.
- Fold the sides of the tortilla over the filling.
- You may place the rolled tortillas in a baking dish, cover with foil and keep warm in the oven until ready to serve.
- Serve with salsa.

- In a medium bowl, whisk together the 4 eggs. Add the chili powder, garlic powder, cumin, and kosher salt, and whisk until combined.
