Steps:
- Heat olive oil and crushed garlic, stir in smoked sausage slices and cook until smoked sausage is browned.
- Add pepper, onion, broccoli, chicken broth and tomato sauce and simmer for about 10 minutes until vegetables are tender and the liquid is absorbed.
- In the meantime, cook rice according to package instructions. Stir rice into the skillet, sprinkle with cheese and serve.

I have not tried this dish. I'm posting this for safe keeping. I found this in Taste Of Home Quick Cooking 2006. I usually serve it over a mixture of white or wild rice.

- In a large skillet, cook sausage over medium heat until no longer pink. Meanwhile, in another skillet, stir fry the broccoli, onion, celery and red pepper in oil until onion is tender. Stir in the water, barbecue sauce, soup mix, thyme, salt and pepper.
- Cut sausage into 1/2-inch slices; add to vegetable mixture. Reduce heat; cook uncovered, for 5-8 minutes, stirring occasionally. Serve over noodles or rice.

From the back of a pkg of Hungry Jack Scalloped potatoes! Made this for supper tonite and it was wonderful and simple! BF had 3 helpings and DS had 2. I subbed green beans only for the veggies cause it was all I had. Yummy served with hot rolls and honey and cold applesauce.

Steps:
- Cook sausage and onion in large skillet until browned, stirring occasionally, drain if neccessary.
- Add potato slices, cheese sauce packet, pepper, water, milk and margarine or butter, mixing well.
- Bring to a boil.
- Reduce heat and simmer 10 minutes, stir frequently.
- Stir in veggies and simmer 10-12 minutes more until potatoes and veggies are tender, stirring occasionally.

I made this up one day when I couldn't find a recipe anywhere with these ingredients. So I kind of threw it together on a whim. Sugar can be adjusted for sweetness, and if the sauce gets a bit thicker than desired I suggest adding a little chicken broth as it's thickening. Serve immediately over rice.
