DAD'S BREAKFAST PIZZA
This recipe can be very versatile depending on your preferences. My whole family used to gather at 10 a.m. every Sunday morning at Mom and Dad's for breakfast. Dad made this up one Sunday, and it has been a favorite of ours ever since =)

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Lightly spray a 9x12-inch baking sheet with cooking spray.
- Cook the bacon in a large skillet over medium heat, stirring often, until the bacon is browned and crisp, about 10 minutes. Remove bacon pieces with a slotted spoon, and drain on paper towels.
- Open up the cans of biscuits, separate the biscuits, and arrange onto the prepared baking sheet so they touch. Press the biscuit dough down to seal them together into a crust that covers the baking sheet.
- Bake in the preheated oven until the crust is slightly cooked and very lightly browned, about 5 minutes. Do not overbake. Remove from oven.
- Melt the butter in a large nonstick skillet over medium heat until the foam disappears. Beat the eggs in a bowl, and pour the eggs into the hot skillet. Use a spatula to lift and gently stir the eggs just until set, but still moist, 3 to 4 minutes. Arrange the lightly scrambled eggs on the semi-baked biscuit crust. Top with the cooked bacon, onion, and green pepper; spread the Cheddar cheese all over the pizza. Season to taste with salt and black pepper.
- Return to oven, and bake on the top rack until the cheese is melted and bubbling and has begun to brown, about 10 more minutes.

DAD'S FRIED POTATOES
Steps:
- Preheat nonstick skillet over Med-High heat. Drain potatoes, pat dry as much as you can without breaking up potato slices.
- Add oil to skillet. Add dried spices, salt, and pepper. Saute garlic and onions in oil for 30 seconds or so, and then add potatoes.
- Fry potatoes, flipping occasionally for 15-20 minutes or until browned and crispy on edges.

DAD'S BREAKFAST POTATOES
The kids love these potatoes and eat every bite!

Steps:
- Wash and slice potatoes into 1/3 inch cubes.
- Soak potatoes in water for a half hour while you heat 1/2 cup (or if bigger pan 1/2 inch) of oil in a cast iron skillet. (Note: Soaking the potatoes is important to get the starch out so they will crisp up nicely!)
- Drain and pat dry potatoes with a paper towel.
- Fry potatoes in pan turning occasionally until golden brown.
- Place cooked potatoes on a paper towel lined plate. Be sure to salt potatoes while still hot. Enjoy!
DAD'S BREAKFAST BREAD
This is my dad's version of scones. It is a dough like cinnamon roll dough and it is fried in hot oil. Very good Sunday treat. Served with honey, jam or sprinkled with powdered sugar.

- In a large bowl, stir together the scalded milk, sugar, margarine and salt. In a small bowl, stir together the yeast and warm water. Let stand 10 minutes, or until foamy.
- Stir the yeast mixture into the milk mixture. Blend in the eggs. Mix in the flour one cup at a time to make a soft dough. Cover bowl and let rise in a warm place until double.
- Heat one inch of oil in a deep heavy skillet to 370 degrees F (180 degrees C). Form large handfuls of dough into flat pancake shapes and fry them in the hot oil, turning once, until golden brown on both sides. Remove from oil to drain on paper towels.

DAD'S COUNTRY BREAKFAST SKILLET

Steps:
- Cut bacon into 1 inch pieces.
- Place the bacon pieces into a skillet over medium heat.
- Cook until the bacon is crisp, then drain half of the fat, bringing it back to the stovetop.
- Add potatoes and pepper to the pan. Cook until potatoes are golden brown--about 8 to 10 minutes.
- Place the potato and bacon mixture into a bowl. Place the skillet back on the stovetop.
- Add four eggs into the skillet. Don't stir. Let them cook for a minute or until the egg whites set.
- Carefully place the potato and bacon mixture around the eggs, sprinkling some cheese on top, and cook for another minute.
- Allow the skillet to cool before serving.

DAD'S BAKED POTATOES
These are a favorite and visiting family always requests them when they come to see us. If only they knew how easy they are to prepare!

Steps:
- Scrub your potatoes and slice each potato into 1/2-inch rounds, but keep them together in the potato shape.
- Place one potato on each foil square and top with one onion round each, and then the butter pat on top of the onion (the size of your pat of butter is up to you, but mine are about 1 1/2 tablespoons each.
- Now the fun part. I line up all of my spices in front of me and shake on as much as I like to each potato. Be very liberal--potatoes can take a lot of flavor.
- Then put each foil square in front of you with the potato lengthwise. Grab the front flap and the back flap and pull them together over the potato and then roll them down together until you get close to the potato. Then grab the sides and roll them upward so that none of the butter spills out during baking.
- Place them on a baking sheet in a 350-375° oven for about an hour, depending on how big your potatoes are and how thick you sliced them. You can check their doneness by sliding a knife into one through the foil--if it goes in smoothly, it's done.
