TURKISH BEEF PATTIES WITH CONFETTI COUSCOUS



Turkish Beef Patties with Confetti Couscous image

2 tablespoons extra-virgin olive oil
3 cups frozen pepper-and-onion stir-fry blend, finely chopped
1 cup whole-wheat couscous
Kosher salt and freshly ground pepper
1 1/4 pounds lean ground beef
2 cloves garlic, finely grated
1 tablespoon ras el hanout (Moroccan seasoning)
3/4 cup nonfat plain Greek yogurt
Finely grated zest and juice of 1/2 lemon
1/4 cup chopped fresh mint
1/4 cup chopped fresh parsley
1/4 cup chopped dried apricots

Steps:

  • Heat 1 tablespoon olive oil in a large nonstick skillet over medium-high heat. Add the frozen vegetables and cook, stirring occasionally, until the liquid is evaporated, 8 to 10 minutes. Transfer half the vegetables to a large bowl and half to a medium bowl; reserve the skillet. Add the couscous, 1/2 teaspoon salt, a few grinds of pepper and 1 1/2 cups boiling water to the large bowl. Stir to combine, cover and set aside 10 minutes.
  • Meanwhile, add the ground beef, garlic, ras el hanout, 1/2 teaspoon salt and a few grinds of pepper to the medium bowl. Mix with your hands until completely combined. Divide into eight 4-inch logs. Heat the remaining 1 tablespoon olive oil in the reserved skillet over medium heat; add the beef logs and cook, turning, until browned, about 8 minutes.
  • Whisk the yogurt, lemon zest and juice in a small bowl. Fluff the couscous with a fork and stir in the mint, parsley and dried apricots. Divide the couscous, yogurt sauce and patties among plates.

1 cup uncooked couscous
1 cup chicken stock or vegetable stock
3/4 cup raisins
1/3 red bell pepper (finely diced)
1/3 green bell pepper (finely diced)
1 tbspn vegetable oil
2 tbspn maple syrup
1/2 lemon juice of 1/2 lemon
1/2 tspn fresh ground black pepper
pinch of kosher salt

Steps:

  • Gather all ingredients before starting recipe.
  • Mix dressing ingredients and set aside.
  • Measure 1 cup of uncooked couscous and pour into a medium bowl.
  • Add finely diced red and green pepper to couscous.
  • Measure 1 cup of chicken stock in a 2 cup measure cup and add 3/4 of a cup of raisins to the chicken stock. Microwave on high for 2 minutes or until the chicken stock comes to a boil. Allow raisins to steep for a couple of minutes, then add the stock and the raisins to the couscous.
  • Cover bowl with cling wrap and allow to steam, for at least 5 minutes. Remove cling wrap and fluff couscous with a fork until it light and fluffy, tossing the raisins and peppers until well blended.
  • Drizzle dressing over couscous, mix, taste, then drizzle a bit more or to your liking.

1 cup reduced-sodium chicken broth
1 cup uncooked couscous
1 can (15 ounces) black beans, rinsed and drained
3/4 cup frozen corn, thawed
1 medium sweet red pepper, chopped
6 green onions, chopped
1/4 cup minced fresh cilantro
DRESSING:
2 tablespoons plus 1 teaspoon olive oil
2 tablespoons lime juice
1-1/2 teaspoons red wine vinegar
1/2 teaspoon ground cumin
1/4 teaspoon salt
1/4 teaspoon pepper
Pine nuts, optional

Steps:

  • In a large saucepan, bring broth to a boil. Stir in couscous. Remove from the heat; cover and let stand for 5-10 minutes or until broth is absorbed., Fluff with a fork. Stir in the beans, corn, red pepper, onions and cilantro. In a small bowl, whisk the oil, lime juice, vinegar, cumin, salt and pepper. Drizzle over salad and toss to coat. Sprinkle with pine nuts if desired.

1 teaspoon olive oil
2 garlic cloves, minced
1 cup water
1 teaspoon salt
2 plum tomatoes, seeded and cut into 1/4-inch dice
1 1/2 tablespoons fresh lemon juice
1 teaspoon freshly grated lemon zest
3/4 cup couscous
6 dried pitted prunes, cut into 1/3-inch pieces

Steps:

  • Trim fennel stalks flush with bulb and remove any discolored areas from bulb. Cut bulb into 1/4-inch dice and coarsely chop fronds.
  • Heat oil in a large nonstick skillet over moderately high heat until hot but not smoking, then sauté diced fennel and garlic, stirring, 1 minute. Reduce heat to low and cook, covered, until fennel is just tender, about 6 minutes. Add water and salt and bring to a boil.
  • Remove from heat and stir in tomatoes, lemon juice, zest, couscous, and prunes. Cover skillet and let stand 5 minutes.
  • Stir in fennel fronds and season with salt and pepper.

16 ounces quick couscous or 12 ounces israeli couscous
3 lbs frozen corn, thawed and cooked,let cool.
2 (12 ounce) cans black beans, drained and rinsed in cold water
8 ounces chopped red onions
3 ounces chopped green peppers
3 ounces chopped yellow peppers
3 ounces chopped orange bell peppers
3 ounces chopped red peppers
3 small zucchini, halved and thinly sliced- use a mandoline
1 cup kalamata olive, pitted and sliced
1 1/2 cups olive oil
1/4 cup white wine vinegar
1/4 cup white balsamic vinegar
2 1/2 teaspoons cumin
1 teaspoon chopped fresh basil
1 teaspoon chopped fresh thyme
1 tablespoon chopped fresh marjoram

Steps:

  • if using quick cook couscous, cook 2 boxes according to package directions (boil water, add couscous, remove from heat cover for 5 minutes).
  • if using israeli couscous, steam or boil for 13 minutes, remove from heat.
  • if boiling, drain.
  • in a huge bowl add couscous, corn, and the rest of the salad ingredients.
  • mix dressing ingredients together, add to salad, toss, cover, and refrigerate 1 hour or more.
  • serve at room temperature.

I've been making this recipe for years for potlucks. It's very easy and everyone seems to LOVE it. Even those picky eaters. This can be made a day in advance, and is actually better the next day. (you may want to add extra salad dressing the next day due to absorption)

1 (6 ounce) box garlic and herb couscous mix (I use Near East brand garlic and herb flavor)
1/3 cup green pepper, diced
1/3 cup red pepper, diced
1/3 cup orange bell pepper, diced
1 bunch green onion, sliced thin
4 ounces corn, drained
1 (2 1/2 ounce) can black olives, sliced
1/2 cup Italian salad dressing (I use wish bone brand)

Steps:

  • Prepare couscous according to box directions and allow to cool.
  • While couscous is cooling, dice peppers, and slice green onions.
  • Add all ingredients in a bowl.
  • Add Italian salad dressing.
  • Mix together.
  • Enjoy!
