2 (8 ounce) rounds Camembert cheese
oil for frying
1 cup all-purpose flour
2 eggs
¼ cup milk
1 cup bread crumbs
1 (16 ounce) can whole berry cranberry sauce

Steps:

  • Freeze Camembert cheese for 30 minutes.
  • Heat oil in a deep-fryer or large saucepan to 375 degrees F (190 degrees C).
  • Pour flour into a bowl. Beat eggs and milk together in a separate bowl. Pour bread crumbs into a third bowl.
  • Remove cheese from the freezer and cut each round into 6 wedges. Roll each wedge in flour and dip into the egg-milk mixture. Press each wedge into bread crumbs until evenly coated.
  • Fry each breaded wedge in the hot oil until bread crumbs are browned, 2 to 3 minutes per side. Transfer fried cheese to a paper towel-lined plate using a slotted spoon. Serve cranberry sauce on the side.

salt and pepper
2 eggs, lightly beaten
1/4 cup milk
1 cup stale breadcrumbs
1 (260 g) jar cranberry sauce, warmed

Steps:

  • Cut camembert into 2cm wedges.
  • Toss to coat in flour seasoned with salt and pepper.
  • Combine eggs and milk in a shallow bowl and toss camembert in the egg wash; drain and coat in breadcrumbs.
  • Heat oil to 180oC. Deep fry camembert pieces until golden and crisp; drain on kitchen paper and serve with warmed cranberry sauce.

1/2 cup sugar
2 tablespoons water
Bread or crackers, for serving

Steps:

  • Peel the top rind off of the Camembert. With your knife, poke 8 to 10 holes in the top of the cheese and put it onto a glass serving plate.
  • Mix the sugar and water together in a small heavy saucepan and put it over medium heat. Bring to a boil and cook until the caramel is thick and amber in color. (Use caution when working with hot caramel and don't leave it untended.) As soon as it is done, pour it evenly over the camembert. Serve immediately with bread or crackers.

2 ounces fresh white breadcrumbs
oil (for deep frying)
4 sweet apples, cored and quartered

Steps:

  • Mix the cayenne pepper and the flour, then roll each Camembert portion in flour, then in egg and then in breadcrumbs.
  • Heat the oil in a deep fryer to 350 degrees Fahrenheit or until a bread cube browns in 60 seconds.
  • Fry the portions of Camembert for 30 seconds or until golden brown.
  • Drain on kitchen paper.
  • Garnish with apple wedges and serve immediately.

wedge of camembert or brie (about 85g/3oz)
a spoonful of cranberry sauce
a few drops of balsamic vinegar
butter

Steps:

  • Butter the bread. Put a wedge of camembert or brie on the unbuttered side of one slice of bread. Top with a spoonful of cranberry sauce. Drizzle with a few drops of balsamic vinegar, if you have some.
  • Put the second slice of bread on top, buttered side out. Fry in a hot non-stick pan, pressing down with a fish slice, for a minute or two on each side, until golden brown and melting. Cut in half and eat straightaway.

1 egg, beaten
2 tablespoons dry bread crumbs
vegetable oil for frying
1 pinch salt and freshly ground black pepper to taste
2 sprigs fresh parsley
2 ounces whole berry cranberry sauce

Steps:

  • Unwrap Camembert wheel. Dredge in flour, then in beaten egg, and then in breadcrumbs to coat completely.
  • Heat 1 inch oil in a small, deep saucepan over medium heat. Lower Camembert carefully into the hot oil and fry until breading is browned, 1 to 2 minutes per side. Transfer to a paper towel-lined plate to drain. Set on a plate and season with salt and pepper.
  • Fry parsley sprigs for 5 seconds in the hot oil. Serve on top of Camembert and garnish with cranberry sauce.
