150ml sunflower oil, plus extra for the tin
175g self-raising flour
2 tbsp cocoa powder
1 tsp bicarbonate of soda
150g caster sugar
2 tbsp golden syrup
2 large eggs, lightly beaten
150ml semi-skimmed milk
100g unsalted butter
225g icing sugar
40g cocoa powder
2½ tbsp milk (a little more if needed)

Steps:

  • Heat the oven to 180C/160C fan/gas 4. Oil and line the base of two 18cm sandwich tins. Sieve the flour, cocoa powder and bicarbonate of soda into a bowl. Add the caster sugar and mix well.
  • Make a well in the centre and add the golden syrup, eggs, sunflower oil and milk. Beat well with an electric whisk until smooth.
  • Pour the mixture into the two tins and bake for 25-30 mins until risen and firm to the touch. Remove from oven, leave to cool for 10 mins before turning out onto a cooling rack.
  • To make the icing, beat the unsalted butter in a bowl until soft. Gradually sieve and beat in the icing sugar and cocoa powder, then add enough of the milk to make the icing fluffy and spreadable.
  • Sandwich the two cakes together with the butter icing and cover the sides and the top of the cake with more icing.

4 (1 ounce) unsweetened chocolate squares
1/2 cup water
1/2 sugar
2 cups sifted all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
1 1/4 cups sugar
1/2 cup butter, soft or 1/2 cup margarine
3/4 cup milk
1 teaspoon vanilla
3 eggs

Steps:

  • Preheat oven to 350.
  • Fit wax paper in bottoms of two 9-inch layer pans.
  • Place unsweetened chocolate, water and sugar in saucepan. Cook and stir (low heat) to form a smooth sauce. Set aside and cool.
  • Place in large mixing bowl and blend on low speed, flour, baking soda, salt and sugar. Add butter and milk. Blend to moisten flour and beat on medium speed for 2 minutes. Blend in chocolate mixture. Add vanilla and eggs. Beat on medium speed for 2 minutes.
  • Pour into pans. Bake 30-35 minutes. Cool 10 minutes; remove from pans and peel off waxed paper.

3 cups semisweet chocolate chips
1 (14 ounce) can sweetened condensed milk
¼ cup butter
1 cup chopped walnuts

Steps:

  • Place chocolate chips, sweetened condensed milk, and butter or margarine in large microwaveable bowl. Zap in microwave on medium until chips are melted, about 3-5 minute, stirring once or twice during cooking. Stir in nuts, if desired.
  • Pour into well-greased 8x8-inch glass baking dish. Refrigerate until set.
