Peaches and Cream Bars are so simple to make but are always impressive! Substitute with your favorite pie filling to change up the flavors!

1 cup unsalted butter, (softened)
2 cups sugar
4 large eggs
1 teaspoon vanilla extract
3 cups all-purpose flour
1 teaspoon salt
21 ounce can peach pie filling
8 ounce block cream cheese, (softened)
1/2 cup sugar
1 teaspoon vanilla
1 large egg
1 cup powdered sugar
2 Tablespoons milk
1 teaspoon almond extract ((or vanilla extract))

Steps:

  • For the bars: Preheat oven to 350° F. Grease a 9 x 13-inch baking pan with cooking spray.
  • Cream together butter and sugar in a stand-mixer until light and fluffy.
  • Add eggs and vanilla extract; beat well.
  • In a separate bowl, combine flour and salt. Slowly add to the wet mixture until just combined.
  • Take half of batter and spread into the bottom of the prepared pan.
  • For the cheesecake layer: Beat cream cheese and sugar together.
  • Add vanilla and egg and beat until thoroughly combined.
  • Spread evenly over the pie batter layer.
  • Spread peach pie filling over the cheesecake layer.
  • Drop remaining pie batter over the pie filling. (It will spread as it bakes so don't worry if it doesn't cover all the pie filling)
  • Bake 30 to 35 minutes, or until top pie crust is light golden-brown. Cool completely.
  • For the glaze: Once bars are cooled, mix together glaze ingredients and drizzle over the top.
  • Cut into bars and serve!

1 cup almonds, finely chopped
1 cup graham cracker crumbs
1/3 cup unsalted butter, softened
2 (8 oz.) packages cream cheese, softened
1 (14 oz. can) sweetened condensed milk
2 large eggs
1/4 cup lemon juice
1/2 teaspoon almond extract
2 1/2 tablespoons all-purpose flour
1 (8.75 oz. can) peaches, drained
pinch of salt

Steps:

  • Preheat the oven to 375°F. Spray a 9x13-inch pan with non-stick spray.
  • In a mixing bowl combine almonds, graham cracker crumbs, and butter with fork until combined. Press into the bottom of the pan.
  • Using a handheld or a stand mixer, beat the cream cheese until smooth and no lumps remain. While mixing, add the sweetened condensed milk, eggs, lemon juice, almond extract, and flour. Mix until fully combined. Pour over crust.
  • In a food processor or blender, puree the peaches. Stir in a pinch of salt. Using a tablespoon, drop spoonfuls of the peach puree over the top of the cream cheese mixture. Using a knife gently swirl the peaches through the filling to create a marbled look.
  • Bake for 30 minutes or until the center is set. Remove from the oven and cool to room temperature before transferring to the refrigerator to chill throughout. Cut bars and serve chilled.

4 fresh peaches, or as needed
⅓ cup white sugar, or to taste
¼ cup water
1 ½ cups heavy cream

Steps:

  • Cut each peach in half along the crease, twist open, and remove the pit. Peel and slice. Cut slices in half to get roughly 2 cups of sliced peaches.
  • Bring sugar and water to a boil in a saucepan over medium-high heat. Boil until a syrup forms, about 3 minutes. Stir in peaches until coated. Bring syrup back to a light simmer, about 1 minute. Immediately remove from heat and pour mixture into a bowl.
  • Transfer peaches into a large bowl using a slotted spoon. Pour in heavy cream and stir to combine. Divide mixture between serving glasses, cover with plastic wrap, and refrigerate until completely chilled and cream has absorbed all the peach flavor, at least 3 hours.

1 (8 ounce) package softened cream cheese
1/2 cup sugar
1/4 teaspoon almond extract
1 (21 ounce) can peach pie filling
1/2 cup all-purpose flour
1/4 cup packed brown sugar
3 tablespoons cold butter
1/2 cup sliced almonds

Steps:

  • Unroll crescent dough into one long rectangle, and press onto the bottom and slightly up the sidesof a greased 13x9 inch baking pan.
  • Seal perforations.
  • Bake at 375 degrees for 5 minutes, and cool completely on a wire rack.
  • In a large bowl, beat the cream cheese, sugar, and extractuntil smooth, and spoon over crust.
  • Spoon pie filling over cream cheese layer.
  • In a small bowl, combine flour, and brown sugar. Cut in butter until the mixture resembles coarse crumbs.
  • Stir in almonds, and sprinkle over peach filling.
  • Bake at 375 degrees for 25-28 minutes or until edges are golden brown.
  • Cool 1 hour, on a wire rack, and store in refrigerator.

1 tube(s) (8 oz.) refrigerated seamless crescent dough sheet
1 pkg (8 oz.) cream cheese, softened
½ c sugar
¼ tsp almond extract
1 can(s) (21 oz.) peach pie filling
½ c all purpose flour
¼ c packed brown sugar
3 Tbsp cold butter
½ c sliced almonds

Steps:

  • 1. Unroll crescent dough sheet into a rectangle. Press onto bottom and slightly up sides of a greased 13x9" baking pan. Bake in a preheated 375º oven for 5 minutes. Cool completely on a wire rack.
  • 2. In a large bowl, beat cream cheese, sugar and extract until smooth. Spread over crust. Spoon pie filling over cream cheese layer.
  • 3. In a bowl, whisk flour and brown sugar. Cut in butter until mixture resembles coarse crumbs. Stir in almonds; sprinkle over peach filling.
  • 4. Bake 25-28 minutes or until edges are golden brown. Cool in pan on a wire rack. Cut into bars. Store in an airtight container in the refrigerator.
  • 5. NOTE: This would also work well with other flavors of pie filling: blueberry, strawberry, apple, pineapple, or cherry.

  • In the bowl of a mixer, combine the flour, sugar, and salt. Mix with the paddle attachment until combined. Cut the butter into small pieces and add in a few at a time. Mix until the butter is evenly combined and the mixture appears crumbly. (This can also be done by hand with a pastry cutter or with a fork.)
  • Take out 1 1/2 cups of the mixture and set aside. Press the remaining mixture into the prepared pan. Bake in the preheated oven until golden brown, 12 to 15 minutes. Let cool for at least 10 minutes.
  • In a large bowl, whisk together the eggs and sugar. Add in the sour cream, flour and salt. Fold in the sliced peaches. Pour over the cooked crust. Take the remaining 1 1/2 cups of the dry mixture and sprinkle over the top of the peaches. Bake until the top is lightly browned and the filling is set, 45 to 50 minutes. Cool at least 1 hour before cutting into bars. (I find that these slice much better after they have been refrigerated for a couple of hours.)

  • In a large bowl, whisk the flour, oats, brown sugar, and cinnamon together until combined. Cut in the cold butter using a pastry blender or two forks until it reaches coarse, pea-sized crumbs. See photo above. Remove 3/4 cup of the mixture, put in a small bowl and mix with pecans. This will be set aside for the topping.
  • Evenly press the remaining oat mixture into the bottom of the prepared baking pan. Bake for 15 minutes as you prepare the filling.
  • Whisk the egg and sugar together until smooth and creamy. Add the flour and salt. Whisk until combined. Fold in the peaches. Remove crust from the oven after 15 minutes and pour the filling over hot crust. Sprinkle with reserved oat/pecan mixture.
