1/4 head (about 1 pound) green cabbage
2 carrots
1/3 cup mayonnaise
1/3 cup sour cream
1 tablespoon cider vinegar
1 tablespoon sugar
1/2 teaspoon celery seed
1/4 teaspoon salt
1/8 teaspoon pepper

Steps:

  • Shred cabbage with a sharp knife. Grate carrots; combine with cabbage in a large bowl.
  • In a small bowl, whisk together mayonnaise, sour cream, vinegar, sugar, celery seed, salt, and pepper. Add dressing to cabbage mixture, and toss to combine. Serve immediately, or store in the refrigerator for up to 2 days.

5 cups thinly sliced green cabbage
1 cup grated carrots
3/4 cup mayonnaise
1/3 cup sour cream
2 tablespoons apple cider vinegar
1 tablespoon Dijon mustard
1 tablespoon honey
1/2 teaspoon celery salt
Kosher salt and freshly ground black pepper

Steps:

  • Toss together the cabbage and carrots in a large bowl.
  • Whisk together the mayonnaise, sour cream, vinegar, mustard, honey and celery salt in a medium bowl. Pour the dressing over the shredded vegetables and toss to coat. Season with salt and pepper. Cover and refrigerate for 30 minutes. Season with more salt and pepper before serving.

1/2 cup mayonnaise
1/2 cup cultured buttermilk (do not use milk + vinegar or lemon juice)
1/3 cup sugar
2 tablespoons cider vinegar (use less if you don't want it so tangy)
2 teaspoons kosher salt
1/2 teaspoon black pepper (freshly ground)
1/2 teaspoon onion powder (optional)
6-8 cups cabbage (shredded)
1 1/2 cups carrots (shredded)

Steps:

  • Stir cabbage and carrots together gently to combine. It's pretty to use some purple cabbage for some of the green cabbage.
  • Whisk all the dressing ingredients together in a large bowl.
  • Pour over the coleslaw mix.
  • Stir well to be sure all the cabbage is coated with dressing.
  • Cover and refrigerate for at least 4 hours.
  • Serve ice cold.

1/4 cup cider vinegar
1/2 to 1 teaspoon celery seeds

Steps:

  • Gather the ingredients.
  • In a large jar or medium bowl, combine the mayonnaise, 5 to 6 tablespoons of the sugar, the vinegar, celery seed, Creole seasoning, and black pepper. Whisk to blend or cover the jar and shake it until well blended.

Been a caterer and personal chef for over 20 yrs. This particular recipe for cole slaw seems to be the favorite of both my friends and customers. If you like a sweet/sour cole slaw then give it a try. I do our church's Roast Chicken Dinner each year before our annual festival and I always make more because there are those who like to take it home by the pint. I don't use any salt nor onion. There's ample salt in the mayo. Seemingly sometimes the onion overpowers the slaw. Then there are customers who dislike onion. You may also substitute Splenda for the granulated sugar. You may also use a lower fat mayonnaise but I think it adds a different flavor. You may also substitute the extra 1/2 cup of mayo for milk.

1/2 medium carrot, grate on large grater holes

1 large cabbage, shredded
3 -4 carrots, shredded
2 -3 shallots, finely chopped (or 1 onion)
3 cups mayonnaise
1 cup sour cream
3 -4 tablespoons red wine vinegar
3 tablespoons water
2 tablespoons sugar
1 -2 teaspoon salt
2 -3 teaspoons pepper

Steps:

  • shred cabbage and carrots (food processors are very handy for shredding (3mm is my preferrence).
  • add shallots (I've used shallots, onions or green onions).
  • In a seperate bowl combine mayo, sour cream and remaining ingredients.
  • Mix to taste (we love red wine vinager so I normally go towards 4+ tbsp same with the pepper) Do not over mix, you want the sour cream and mayo to combin well but not too thin where it won't stick to the cabbage.
  • Pour on top of cabbage, toss well and chill.

1 tbsp mustard (any you've got)
200g mayonnaise
1 red apple, cut into matchsticks (optional)

  • Coarsely grate the carrot and finely shred the cabbage (use a food processor with a grating/ slicing blade or do it by hand) and tip into a bowl. Season with salt, then add the sugar and vinegar and toss everything together. Leave for 20 mins for the vegetables to very lightly pickle.
  • Stir through the mustard and mayonnaise and add any other bits you want to, then serve. Can be made a day ahead and chilled.
