water, to cover
salt and pepper
sliced onion
sliced carrot
1/4 cup white wine
2 tablespoons lemon juice
thyme
2 cucumbers, sliced very thin
1/4 cup fresh dill, chopped
1 cup sour cream or 1 cup yogurt
1/2 cup mayonnaise
2 teaspoons tarragon
1 teaspoon Dijon mustard
salt and pepper

Steps:

  • in large pan, add salmon, cut in half if needed.
  • add water, spices, wine, lemon juice, and vegetables to cover halfway.
  • use 2 burners if necessary, heat to boil, cover and simmer on low 10-15 minutes.
  • when salmon turns light pink, and opaque remove from liquid, chill.
  • meanwhile make dill sauce- mix all ingredients together.
  • slice cucumbers very thin, or use a mandoline, watch your fingers.
  • decorate salmon with rows of cucumber to look like fish scales, serve w/ dill sauce.
  • this can be served warm, but we prefer it cold or at room temp.

1 tablespoon Dijon mustard
5 sprigs fresh dill
2 lemons, 1 sliced in half, the other sliced into thin rounds
1 pound salmon, pin bones removed, skin intact
Kosher salt and freshly ground black pepper
1/3 cup white wine vinegar
1/4 cup extra-virgin olive oil
1 teaspoon chopped fresh dill fronds
1 teaspoon Dijon mustard
1/4 teaspoon garlic powder
Kosher salt and freshly ground black pepper
1 pound baby Yukon gold potatoes
Kosher salt and freshly ground black pepper
4 large eggs
1/2 pound haricot vert or thin green beans, trimmed
1/4 cup olive oil
1 large head frisee lettuce, cut into bite-size pieces (about 5 cups)
1 romaine heart, cut into bite-size pieces (about 3 cups)
1 cup cherry tomatoes, sliced in half
1/2 cup pitted kalamata olives, sliced in half

Steps:

  • For the salmon: Add the wine, Dijon mustard, dill sprigs and 1 cup of water to a large straight-sided skillet. Squeeze the juice from the halved lemon into the skillet and then add in the lemon halves. Bring the mixture to a simmer over medium heat. Sprinkle the salmon with a generous pinch of salt and pepper. Once the liquid is simmering, gently add the salmon, skin-side-down, and turn the heat to low. Place the lemon slices on top of the salmon, cover the pan and cook for 10 minutes. Turn the heat off and let sit, covered, for 5 minutes. The salmon should easily flake apart with a fork. Carefully remove the salmon from the liquid and set on a plate. Cool completely.
  • For the dressing: Add the vinegar, oil, dill, mustard, garlic powder, 1/2 teaspoon salt and 1/2 teaspoon pepper to a glass jar with a lid. Cover and shake to emulsify. Set aside until ready to assemble the salad.
  • For the salad: Add the potatoes to a large saucepan and add enough cold water to cover the potatoes by 4-inches. Add a big pinch of salt and heat over medium high heat. Bring the potatoes to a boil and let cook until the potatoes are fork tender, 5 to 8 minutes. Use a slotted spoon to remove the potatoes to a plate. Reserve the pot with boiling water to use to cook the eggs and haricot vert.
  • Fill a large bowl with ice and water. Bring the water back up to a boil, then add your eggs and cook for 7 minutes. Remove the eggs to the ice bath. Bring the water back up to a boil and add the haricot vert. Cook until they are tender-crisp, about 3 minutes. Remove the haricot vert to the ice bath. Drain and cut them into thirds and set aside until ready to assemble. Remove the eggs from the ice bath, peel and set aside.
  • Using the flat base of a measuring cup or a glass, lightly smash the potatoes to expose some of the flesh. Sprinkle with a generous pinch of salt and pepper. Heat a large skillet over medium-high heat. Add the olive oil and swirl to coat the pan. Carefully add the potatoes into the pan, seasoning side down. Sprinkle the exposed side of the potatoes and cook until they are crispy and golden brown in places, about 4 minutes per side. Some potatoes may break apart, that's totally fine! Remove to a plate and set aside until ready to assemble.
  • To assemble the salad: Arrange the frisee and romaine leaves on a large platter. Drizzle about half of the dressing and toss to coat. Top the lettuce with the crispy potatoes, haricot vert, tomatoes and olives. Flake the cooled salmon into large pieces and scatter it on top of the salad. Slice the eggs in half and nestle into the salad. Drizzle on the remaining dressing and serve.

1/4 cup white wine vinegar
1/4 cup dry white wine
2 bay leaves
1 teaspoon whole white peppercorns
1 teaspoon dried thyme
1 small onion, peeled and chopped
1 carrot, washed and chopped
2 stalks celery, washed and chopped
1 leek, washed and chopped
4 five-ounce fresh salmon filets, all skin and bones removed

Steps:

  • Tie the peppercorns and dry herbs together in a little bundle of cheese cloth. Combine the liquids in a large pot or skillet. Bring to a boil. Add the vegetables and the herb bundle to the court bouillon ingredients, bring to a boil and cook for 20 to 25 minutes. Reduce to a simmer and add the salmon filets. Simmer, covered, for 10 to 12 minutes. Turn off the heat and allow the salmon to cool in the bouillon. When completely cold, remove the salmon from the bouillon. Drain on paper towels to dry completely. Cover the fish with plastic wrap, and place in a refrigerator to chill for 1 to 2 hours, or until ready to serve. Serve with herb mayonnaise or vinaigrette.;

1 (6-lb) whole salmon (with skin), cleaned and backbone removed, head and tail left intact
1 teaspoon salt
6 qt cold water
1/2 cup fresh lemon juice
1 large onion, coarsely chopped
2 carrots, coarsely chopped
2 celery ribs with leaves, cut into 4-inch pieces
2 bay leaves (not California)
6 fresh parsley stems (without leaves)
2 fresh thyme sprigs
1/4 teaspoon whole black peppercorns
For aspic
1 cup dry white wine
2 tablespoons Sercial Madeira
1 fresh thyme sprig
1 teaspoon salt
1 large leek, white and pale green parts chopped and 2 outer leaves reserved
For garnish
1 carrot, coarsely chopped
1 celery rib, coarsely chopped
3 large eggs, whites lightly beaten and shells crushed (reserve yolks for another use)
1 tablespoon unflavored gelatin (from two 1/4-oz envelopes)
1/4 cup cold water
Accompaniment: green mayonnaise
Special Equipment
2 (35-inch-long) pieces of cheesecloth; kitchen string; a 24-inch fish poacher*; a long (25-inch) platter

Steps:

  • Poach salmon:
  • Wash salmon inside and out and sprinkle inside with salt. Unfold 1 piece of cheesecloth on top of the other to make a double layer, then wrap fish snugly in it and tie ends (close to fish) with kitchen string. Place on poacher rack in poacher, then straddle poacher across 2 burners on stovetop. Add 6 quarts cold water (it should cover fish by 1 inch), lemon juice, vegetables, herbs, and peppercorns.
  • Bring to a boil, partially covered, over high heat (this will take about 25 minutes; fish will register 145°F on an instant-read thermometer inserted into thickest part of fish). Transfer poacher to a metal rack and cool fish in broth, uncovered, 30 minutes. Then chill fish in poacher (do not pour off broth), uncovered, at least 8 hours.
  • Reduce broth for aspic:
  • Lift fish on poacher rack out of broth and drain well, then transfer from rack to a large shallow baking pan and chill. Pour broth through a sieve into a large bowl. Transfer 8 cups broth to a 4-quart heavy pot, reserving remainder for another use. Add white wine, Madeira, thyme sprig, and salt and boil until reduced to 5 cups, 30 to 40 minutes. Cool 20 minutes.
  • Prepare salmon for glazing:
  • Wash reserved leek leaves and chopped leeks in a bowl of cold water, then lift out and drain well. Cut leaves into decorative strips. Blanch strips in a saucepan of boiling water 1 minute, then transfer to a bowl of ice and cold water. Drain and pat dry.
  • Remove strings from cheesecloth, then open cheesecloth but don't remove it. Remove fatty strip and small bones (they look like a comb) from spine of fish from head to tail. Trim off any fat from edges of belly. Carefully remove bony section under gills, then remove skin and dark flesh from visible side (top) of fish by gently scraping with a small sharp knife. Using the cheesecloth, roll fish over onto platter and remove bony section under gills, then remove skin and dark flesh from other side of fish. Wipe platter clean, then cover fish with dampened paper towels and chill until aspic is ready.
  • Clarify broth (using egg whites and shells) and make aspic:
  • Whisk together reduced broth, chopped leek, carrot, celery, and egg whites and shells in a 4- to 6-quart heavy pot. Bring to a boil, whisking constantly, then reduce heat and cook at a bare simmer, undisturbed, over low heat 30 minutes. Ladle broth through sieve lined with a double thickness of dampened paper towels set over a 1-quart glass measure, then press firmly on solids.
  • Soften gelatin in cold water in a 1-quart saucepan 1 minute. Add 3 cups broth and simmer, stirring, until gelatin is dissolved, about 2 minutes.
  • Glaze salmon with aspic:
  • Ladle 2/3 cup aspic into a metal bowl set in a larger bowl of ice and cold water. Let stand, stirring occasionally, just until aspic is the consistency of raw egg white. Remove bowl from ice water and spoon a thin layer of aspic over fish, then chill fish until aspic is set, about 10 minutes. Arrange leek garnish on fish and glaze fish with more aspic. Chill fish, uncovered, until ready to serve.
  • Pour remaining aspic into a 13- by 9-inch baking dish and chill until firm, about 1 hour. Cut into 1/2-inch cubes, then arrange cubes around salmon.

1 small bunch fresh dill
1 whole salmon (wild, if possible), about 6 pounds, cleaned and scaled (or substitute a center-cut section of a larger salmon)
1 tablespoon salt
2 tablespoons sugar
2 teaspoons yellow mustard seeds
1 teaspoon black peppercorns
1 onion, peeled and quartered
3 tablespoons Dijon mustard
2 tablespoons light brown sugar
1 cup sour cream
3 tablespoons white wine vinegar
3 tablespoons chopped dill
1/2 teaspoon salt, or as needed
1 generous bunch dill
2 lemons, cut into wedges

Steps:

  • To poach salmon, begin by placing the small bunch of dill inside cavity of the salmon, and put salmon in a fish poacher or a large roasting pan. (If necessary remove head to fit salmon in pan.) Cover with water, and add salt, sugar, mustard seeds, peppercorns and onion. Place over high heat, and bring to a boil. Turn salmon over, and cook 10 minutes. Turn off heat, and let salmon cool in water for about an hour.
  • To make sauce, whisk together the mustard and brown sugar in a small pitcher. Add sour cream and vinegar, and whisk until smooth. Mix in the chopped dill, and season with salt. Cover, and refrigerate until serving.
  • To serve, remove salmon from poaching liquid and lay on large sheet of parchment or waxed paper. Remove skin from top, gently peeling it away, along with fins. Carefully lift top layer of salmon in one long fillet, removing it from backbone and transferring it to a large platter.
  • Lift backbone off fish in one piece, and pick out any other visible bones. Turn fish over, and remove skin as before. Then place second fillet alongside the first on platter. Arrange leafy sprigs of dill between fillets, and drizzle sauce on top. Scatter lemon wedges around edges of plate. Pass pitcher of sauce separately.

1 lemon, thinly sliced
450 ml boiling water
720 g salmon fillets
1 small cucumber, roughly chopped

Steps:

  • Place the peppercorns, dill and four lemon slices(reserve the remaining slices for the garnish) in a large saute pan and pour in the boiling water. Add the salmon, cover with a tight fitting lid and cook for 5 minutes. Turn off the heat and allow salmon to cool completely in the water-this should cook it perfectly. Remove from the pan then transfer to a plate, cover and chill until ready to serve.
  • To make the sauce, place the cucumber and dill in a food processor and whizz until smooth. Add the creme fraiche and some salt and pepper and pulse to make a smooth, pourable sauce.
  • To serve, place a salmon fillet on 4 plates and pour over the sauce. Garnish each with a slice of lemon and a sprig of dill.

2 salmon fillets , about 1.5kg/3lb 5oz each
olive oil , for greasing
1 lemon , sliced
1 bunch dill , chopped
small fennel bulb , thinly sliced
6 tbsp white wine
2 egg yolks
1 tsp Dijon mustard
450ml rapeseed or sunflower oil
2 tbsp white wine vinegar
1 tbsp lemon juice
6 tbsp herbs , such as chervil, chives, dill, parsley and tarragon, finely chopped
1 cucumber , sliced into long thin strips with a potato peeler
chopped dill
lemon cheeks

Steps:

  • The salmon fillets need to be skinless and boneless, so if you can't get your fishmonger to do it, you'll need to do it yourself: to remove the pin bones, stroke your hand along the flesh side of the fillets and use tweezers or pliers to pull out any bones you come across. Then, to remove the skin, you'll need a very sharp knife, preferably a filleting knife. Take each fillet in turn and place skin -side down on the board with the narrowest end facing you. Slide your knife in between the skin and the flesh from the tail end, and wiggle your knife to loosen and pull away the skin. Firmly take hold of the tail skin you have loosened and, working away from yourself, cut along the length of the fish, while moving the knife side to side. Keep the blade of your knife as flat and close to the skin as possible so as not to leave any flesh on the skin. Repeat with the second fillet.
  • Heat oven to 180C/160C fan/gas 4. Take a very large sheet of extra-wide foil (turkey foil works well), and lightly brush with olive oil. Place one salmon fillet on the foil and scatter over the sliced lemons, dill and half the fennel, and season generously. Place the second salmon fillet on top, domed side up. Season and drizzle with the wine.
  • Top with a second sheet of greased foil and fold up the edges to enclose the salmon in a parcel. Make the parcel quite loose so there is room for the steam. Lift onto a large baking tray and cook for 1 hr then remove and allow to rest in the foil for 10 mins.
  • While the salmon cooks, make the mayonnaise. Place the yolks and the mustard in a medium bowl, adding a pinch of salt, if you like. Pour the oil into a jug as you will need a controlled steady stream. Briefly whisk the eggs and start to drizzle on the oil very slowly, starting with a few drips at a time while continuously whisking.
  • Continue adding the oil. When the mayonnaise starts to come together, you can add the oil slightly quicker. Continue until all the oil has been added.
