SIMPLE GARLIC MASHED POTATOES

Simple Garlic Mashed Potatoes image

This is a fairly quick and simple version of garlic mashed potatoes. It goes well with just about any kind of meat or poultry, as well as many other meals. If you want to make this vegan or fleishig, reserve some of the cooking liquid to use in place of milk, and replace the butter with margarine.

Categories     Potato

Time 30m

Yield 4 serving(s)

Number Of Ingredients 5

4 large red potatoes, unpeeled, cut into uniform quarters
4 -5 large garlic cloves, peeled and cut in halves
butter
hot milk
salt and pepper, to taste

Steps:

  • Place potatoes and garlic into a large saucepan full of cold water. Bring to a boil over high heat, reduce heat to medium, and boil for about 10-12 minutes. Check potatoes for doneness by poking a few wedges with a fork or skewer--if still firm, cook another minute or two and check again. Repeat until tender. Drain, taking care not to lose garlic cloves. Return potatoes to warm pot.
  • Mash potatoes. Do not overwork, or potatoes will be tough (it's okay if there's a few lumps--it just means these are real potatoes, not from a box). Make sure to smash up the garlic, or pull out the cloves and squeeze in a garlic press.
  • Add some butter, to taste (I usually use 2-3 T), and salt and pepper, also to taste. Mix until butter has melted.
  • Add a little hot milk and beat it into the potatoes. Continue until potatoes are desired creaminess (the amount I use varies, but I usually use between 1/4 and 1/2 cup, give or take a bit).
  • Cover pot with foil to keep warm until ready to serve. Potatoes will stay hot for 10-15 minutes this way.
  • Serve with a pat of butter in an indentation on top.

Categories     side-dish

Time 50m

Yield 6 servings

Number Of Ingredients 6

1/2 cup garlic cloves, peeled (about 1 head)
1 cup extra-virgin olive oil
3 pounds Yukon gold potatoes, peeled and quartered
Kosher salt
1 teaspoon freshly ground black pepper
1/4 cup heavy cream, half-and-half, or creme fraiche

Steps:

  • In a small saucepan, bring the garlic and oil to a boil, then turn the heat to low and cook uncovered for 5 minutes, or until the garlic is lightly browned. Turn off the heat and set aside. The garlic will continue to cook in the oil.
  • Meanwhile, place the potatoes in a large pot of salted water, bring to a boil, and cook for 15 to 20 minutes, until the potatoes are very tender. With a slotted spoon, remove the potatoes from the water, reserving the cooking water, and remove the garlic from the oil, reserving the oil.
  • Process the potatoes and garlic through a food mill fitted with the medium disk. Add the reserved olive oil, 2 teaspoons of salt, the pepper, cream, and 3/4 cup of the cooking water to the potatoes and mix with a wooden spoon. Add more cooking water, if necessary, until the potatoes are creamy but still firm. Season, to taste, and serve hot.

GARLIC MASHED POTATOES

Garlic Mashed Potatoes image

I was always wanting the Garlic mashed potatoes I ate in restaurants to have more garlic. My mom has always used evaporated milk and everyone really loves her mashed potatoes. I decided to use her technique and seriously increase the garlic content to come up with the flavor that I thought a Garlic Mashed Potato dish should have. Simmering the garlic with the potatoes smooths out the harsh garlic taste while perfuming the potatoes with an abundance of garlic. I also wanted the dish to be very easy to size upwards for company. You can do this very easily for every two additional potatoes you use. By the way... My husband told me I had errors in my recipe. To make it absolutely correct preface each of the steps with Make Husband...

CORN AND MASHED POTATOES

Corn and Mashed Potatoes image

I always mix my corn (or peas for that matter) up with my mashed taters. Here's my interpretation of a recipe I found on the net for it. Originally there were 2 pages of ingredients and endless steps. Simply delicious.

  • Turkey. Without a whole roasted turkey, Thanksgiving dinners are incomplete. In the United States, most people prefer having turkeys with mashed potatoes.
  • Fried Chicken. Apart from turkey, chicken dishes, especially fried chicken, go really well with mashed potatoes. Fried chickens tend to be crispy on the outside and tender on the inside.
  • Roasted Chicken. Are you craving some roasted chicken breasts? The chicken should be properly marinated and roasted till golden brown. A creamy side dish, such as mashed potatoes, will definitely complement your crispy yet tender chicken.
  • Pork Chops. There’s no denying that grilled pork chops are delicious. However, the texture of the pork meat might seem a bit dry for you. Thus, you’ll want something creamy to go with it.
  • Grilled Beef Steak. Beef is full of protein. Based on how you cook, grill, or fry them, they can be either dry or succulent. But, when it comes to choosing a beef dish that goes well with mashed potatoes, beef steaks will be your best bet.
  • Pot Roast. One of the best comfort foods you’ll ever eat is pot roast. This rich gravy meal, which includes wine and tomato sauce, can be made with either beef or ham.
  • Meatloaf. Another comfort food on this list is meatloaf. You can prepare meatloaf in many ways by adding ingredients of your choice. Given the dish is on the drier side, it is perfect for eating with creamy mashed potatoes.
  • Corn Beef. Corn beef has always been one of the favorite dishes on my table on festive occasions. The salty, spicy, and tender dish is rich in flavor. Hence, plain, creamy mashed potatoes are just the best side dish to complement the taste of spicy corn beef dishes.
  • Pork Roast. Pork roast with mashed potatoes is an amazing combination. Since the pork meat is a bit firm, the smooth and creamy mashed potatoes will make up for it.
  • Fish Cakes And Patties. Not only meat, but you can also try mashed potatoes with various fish recipes. There are many ways you can combine mashed potatoes with fish.
