COLD TUNA MACARONI SALAD - A CLASSIC SUMMER SALAD
Cold Tuna Macaroni Salad is classic Summer side dish that is easy to make! This potluck recipe is full of creamy pasta, tuna, and peas.

Steps:
- Following the directions of the box of macaroni, add salt to your water and bring the required amount of water needed to a boil.
- While you are waiting for the water, prep and dice your ingredients.
- When the water is at full boil, add in your elbow macaroni and cook until the pasta is al dente. Then drain and cool the pasta.
- Place eggs into a pot of water and boil until they are hard boiled. Once they are done, place the eggs into a ice bath and let them cool.
- In a large bowl combine all of the ingredients together and mix well.
- Transfer to another serving dish and cover it with saran wrap. Put in the fridge for 2 to 4 hours or overnight.

- Cook macaroni according to package directions, drain in colander and rinse with cold water.
- In a large bowl, place the macaroni and peas.

- In a pot of boiling, salted water, cook pasta until al dente, 7 to 8 minutes. Drain, then transfer to large bowl to cool slightly.
- While pasta cools, soak onion in cold water. Drain, then stir into pasta along with celery, celery leaves, jalapeno and tuna. Whisk together mayonnaise, buttermilk, lemon juice, relish and mustard. - Cook the pasta in boiling salted water according to the package directions. Drain and run under cold water to cool, then drain again. Transfer to a serving bowl.
- While the pasta cooks, pulse the celery, bell pepper and red onion in a food processor until finely minced. Add to the serving bowl along with the tuna and eggs.
- Stir together the mayonnaise, mustard, vinegar, House Seasoning and relish in a small bowl. Pour over the pasta salad and toss gently to combine. Season with salt and pepper. Garnish with chopped fresh parsley before serving, if desired.
- Stir together the garlic powder, onion powder, paprika, salt and pepper in a small bowl. Store in an airtight container.
COLD MACARONI AND TUNA SALAD
This is a simple and good recipe that is great served on those hot summer days and can even be prepared the night before so that it is ready and cold when you come home from work the next day. My husband never ate this until we got married and in the summer he requests it every other week. You can substitute chicken for the tuna and it is great that way also. I serve it on a leaf of lettuce, for looks, with an assortment of crackers. Happy eating!

- Place eggs in a saucepan and cover with water. Bring to a boil, remove from heat, and let eggs stand in hot water for 15 minutes. Remove eggs from hot water, cool under cold running water, and peel.

You pretty much already have everything you need to make this side dish, a great accompaniment to fried or grilled proteins. - Bring a large pot of well-salted water to a boil, and cook the macaroni according to package instructions, until slightly pasta al dente. Drain, rinse with cold water until the pasta is cool and set aside.

I much prefer mayonnaise and assiduously leave out the peas and cheese...In addition I've lightened the original recipe a smidge with lower fat ingredients and whole wheat pasta...Serve over lettuce.
