- Lower the heat to 300F and place ribs on the middle rack. Cook for 3 to 3 1/2 hours.
- Remove from oven, place on large cutting board, and use large chef's knife or cleaver to cut ribs apart.

- Place the ribs in a large bowl and sprinkle them with the full amount of RawSpiceBar's Dark Coffee & Chiles. Massage the ribs with the rub, using your hands to ensure the ribs are completely coated. Cover and refrigerate for 6 to 24 hours.
- Preheat the oven to 350ºF (180ºC).
- Remove the ribs from the fridge. In a Dutch oven or casserole dish large enough to fit all the ribs, heat the oil over medium-high heat. Remove the ribs from the pot as they are done and place them on a plate.
- Add the garlic, onion, and jalapeños to the drippings in the pot and cook until softened, 3 to 5 minutes, turning down the heat to medium-low if necessary. Carefully pour in the espresso, tomatoes, and vinegar, season with salt and pepper, and bring to a simmer. Return the ribs to the pot, put the lid on, and slide it into the oven. Let the ribs braise until tender, 2 to 3 hours. (Begin checking the ribs at 2 hours and then check every 20 minutes or so after that.).
- Remove the pot from the oven and let it rest for 30 minutes. If desired, skim any fat from the surface of the sauce. Serve the ribs in bowls with lots of sauce and sprinkle with torn basil leaves, if desired.

Steps:
- Preheat oven to 450 degrees F.
- Combine coffee rub ingredients into a small bowl and mix together.
- Rub the spice mixture heavily, all over the entire prime rib.
- Place prime rib into a small roasting pan onto a roasting rack. You don't want the prime rib sitting directly on the bottom of the pan.
- Place prime rib into the oven and cook at 450 degrees for 30 minutes.
- Combine the horseradish ingredients in a small bowl, stirring to combine, and place in the refrigerator until time to serve.
- Reduce heat down to 325 degrees F. after 30 minutes, then cook for the remaining time as per the package directions (usually about 15 min. per pound)
- Using a meat thermometer, check the internal temperature to ensure it's cooked to the level you prefer. Typically medium rare = 130-135 degrees, medium = 135-140 degrees, medium well 140-150 degrees and well done 155+ degrees.
- Once the temperature has reached the desired level, remove prime rib from oven and let rest for 20-30 minutes. NOTE: the internal temperature will typically rise about 5 degrees as it rests, so keep that in mind when checking the temperature.
- Slice and serve with homemade horseradish sauce.

Meanwhile, in a separate pan, add 1/2 cup of water, the instant coffee mix, oyster sauce and one chile and simmer over medium heat until sauce thickens.
- While simmering, add the sugar and allow the sauce to caramelize. Add the ribs to the pan and gently toss until they are fully coated and little sauce remains.

- Combine the rub ingredients. Using a dull knife, slide the tip under the membrane covering the back of each rack of ribs. Lift and loosen the membrane until you can pry it up, then grab a corner of it with a paper towel and pull it off. Season the racks evenly all over with the rub and allow them to stand at room temperature for 45 minutes before grilling.
- Meanwhile, make the sauce. In a saucepan over medium-high heat on the stove, melt the butter. Add the onion and cook until softened and beginning to brown, 7 to 8 minutes, stirring occasionally. Stir in the remaining sauce ingredients and bring to a boil. Reduce the heat to medium-low and simmer, uncovered, until slightly thickened and reduced to 1½ cups, 16 to 18 minutes. Remove from the heat. If you prefer a smooth sauce, use an immersion blender or regular blender to puree the sauce.
- Place the racks standing upright in a rib rack, both facing the same direction. Place the rib rack over indirect low heat, as far from the heat as possible, close the lid, and cook for 2½ hours. After the first hour, baste the racks with water, particularly any areas that are looking a little dry. Continue to baste with water every 30 minutes or so. After 3 hours, check to see if one or both racks are ready to come off the grill. They are done when the meat has shrunk back from the ends of most of the bones by ½ inch or more. Lift a rack by picking up one end with tongs. It should bend in the middle and the meat should tear easily. If the meat does not tear easily, return the racks to the rib rack on the grill, close the lid, and cook for about 30 minutes more.

- Before adding the rub to the ribs, remove the membrane from the underside of the rack. Use a paring knife to separate and get under the layer—you should be able to pull it off in a single piece and discard.
- Season the ribs generously with the rub, using around a heaping tablespoon per side. Set the ribs on a wire rack set inside of a sheet pan, cover lightly, and refrigerate overnight.
- The next day, preheat the oven to 250°F. Remove the cover from the ribs and add a layer of foil to the sheet pan below the wire rack. Slow-roast the ribs until they’re fork-tender, which can take about 4 to 6 hours depending on the size of your rack and your oven.

- Prep. For the rub, combine the ground coffee, brown sugar, smoked paprika, black pepper, ground fennel, granulated garlic, and onion powder in a small bowl and blend well.
- Season the ribs with kosher salt. If you can, give the salt 1 to 2 hours to be absorbed. The process of salting in advance is called dry brining. The rule of thumb is 1/2 teaspoon of kosher salt per pound of meat, but ribs are about 50% meat, so use about 1/4 teaspoon per pound. You can simply eyeball it by sprinkling on the same amount of salt you would sprinkle on the ribs if they were served to you unsalted.
- Fire up. Prepare a smoker for indirect cooking. Alternatively, you can set up a charcoal grill for 2-zone cooking by placing a chimney full of pre-heated charcoal briquets on one side of the grill's charcoal grate in order to create direct and indirect cooking zones. Adjust the smoker or grill vents to bring the temperature to about 225°F and add 2 to 3 chunks of your favorite smoking wood to the charcoal for flavor. On a gas grill, adjust the temperature knobs so that one half of the grill is off and the other half is heated enough to maintain a temperature of approximately 225°F on the indirect side.

- Rub spice mixture on both sides of the each rack of ribs. You can do this ahead and leave overnight (or up to 24 hours), or make the ribs immediately.
- Create a foil packet to cook the ribs in by laying down a piece of aluminum foil about 6 inches larger than the length of the ribs on each side, and then place a piece of parchment about the same size or smaller on top of that. Place the ribs in the middle, bone side up, and tightly fold the aluminum foil around the ribs to create a sealed packet. Place on a sheet try with a metal baking rack. Use two, if needed.
