- 1. Grease and flour a 10-inch fluted tube pan. Heat oven to 350°.
- 2. In large mixer bowl combine cake mix, sour cream, oil, water, eggs, pudding mix, liqueur, orange peel, and cinnamon. Beat with an electric mixer on low speed until blended, Scraping sides of bowl constantly. Beat on medium speed for 4 minutes. Stir in chocolate chips.
- 3. Pour into prepared pan. Bake in 350° oven for 50-60 minutes or until a toothpick inserted near the center comes out clean.
- 4. Cool on wire rack 10 minutes. Remove from pan, and cool on rack. Sprinkle with powdered sugar, if desired.
- 5. To make this a gluten free recipe, use a good quality 2 layer gluten-free chocolate cake mix, and make sure the ingredients used are also gluten free. There are GF substitute ingredients for every item in this recipe. I hope you like it. Something different and rich, and people do not know it is GF unless you tell them!

- For the cake: Preheat the oven to 350 degrees F. Mix together the softened butter and 1 tablespoon of the cocoa to make a thick paste. Use this paste to paint the inside of the Bundt pan. Set aside.
- In an electric mixer, combine the flour, granulated sugar, baking soda, salt, cinnamon and remaining 1/2 cup cocoa and mix until blended. Add the orange juice, mayonnaise, vinegar and vanilla and mix until just combined, 1 to 2 minutes. Fold in the orange zest. Pour the batter into the prepared pan and bake until a toothpick inserted in the cake comes out clean, 45 minutes. Cool in the pan for 10 minutes, and then turn out onto a cooling rack to cool completely.
- For the chocolate glaze: Mix the confectioners' sugar and cocoa together. Whisk in the orange juice, 1 tablespoon at a time, until it reaches a good consistency to drizzle. Drizzle the glaze over the cake.

- Stir in orange rind.
- Mix together in separate bowl -- all the wet ingredients.

- Grease 8-inch square pan with butter. In 2-quart heavy saucepan, stir together sugar, milk, corn syrup, 1 tablespoon butter and the orange peel. Cook over medium heat, stirring constantly, until sugar is dissolved. Cook, stirring occasionally, to 234°F on candy thermometer or until small amount of mixture dropped into cup of very cold water forms a soft ball that flattens when removed from water; remove from heat. Cool without stirring to 120°F, about 1 hour. (Bottom of saucepan will be lukewarm.)
- Add orange juice and extract. Beat vigorously and continuously with wooden spoon 5 to 10 minutes or until mixture is thick and no longer glossy. (Mixture will hold its shape when dropped from a spoon.) Quickly spread in pan. Let stand about 1 hour or until firm. Cut into 1-inch squares. Store in airtight container at room temperature.

- Mix crushed cookies, orange zest and butter; press onto bottom of a greased 9-in. springform pan. Set aside. , In a small saucepan, sprinkle gelatin over orange juice; let stand 1 minute. Stir over low heat until gelatin is dissolved. Set aside. , For filling, melt chocolate with 1/2 cup cream in microwave; stir until smooth. Cool slightly; stir in dissolved gelatin. In a large bowl, beat cream cheese, sugar and cocoa until smooth. Gradually add chocolate mixture and orange zest; mix well. In another bowl, beat remaining cream until stiff peaks form. Meanwhile, in a small saucepan, combine sugar, milk and remaining water. Bring to a simmer over medium heat, stirring occasionally. Remove from heat. Stir in gelatin mixture until dissolved. Add baking chips; stir with a whisk until melted. Stir in food coloring; mix well. Cool glaze, stirring occasionally, until it reaches 90°, about 40 minutes. , Place cake on an inverted 9-in. pie plate in a foil-lined 15x10x1-in. pan. Remove the sides of the springform. Pour cooled glaze over frozen cake, allowing excess to drip off. Let glaze set 15 minutes before removing drips from bottom edge of cake. Refrigerate 2 hours before serving.

- In large bowl, dissolve yeast in warm water and let stand til foamy, about 5-10 minutes.
- Stir warm milk, orange juice, sugar, ricotta, orange zest, salt, and egg into the yeast mixture.
- Using the paddle attachment, beat 2 cups flour on low speed into the yeast mixture until a wet dough forms.
- Beat in the remaining dough, 1/2 cup at a time, until a stiff dough forms.
- Turn dough out onto a lightly floured surface and knead until smooth and elastic, about 5-10 minutes, adding more flour as needed to prevent sticking.
- Place dough into a large greased bowl, turn to coat.
- Cover loosely with a damp towel or cloth and let rise in a warm place til doubled in bulk, about 1 1/2 hours.
- Grease a 10" springform pan.
- Punch down dough and turn out onto a lightly floured surface and knead for 1 to 2 minutes.
- Divide the dough into 3 equal pieces and roll each piece into 20" long ropes.
- Braid the ropes together.
- Coil braided dough into prepared pan and tuck ends under.
- Cover loosely with a damp towel and let rise again til almost doubled, about 30 minutes.
- Brush dough with the glaze.
- Bake in 425 oven about 25-30 minutes til the top of the cake is golden brown.
- Turn cake out onto a wire rack to cool slightly.
- Icing:.
- In small bowl, stir together powdered sugar and orange juice til smooth.
- Spread icing over warm cake.
- Serve warm.

- Grease an 8 x 8 inch square pan.
- In a heavy saucepan over medium heat melt 1 cup of sugar, stirring constantly. Carefully add boiling water. Stir in remaining 2 cups of sugar, non-dairy creamer and salt. Stirring constantly, bring mixture to a boil. Without stirring, heat to 242 to 248 degrees F (116 to 120 degrees C), or until a small amount of syrup dropped into cold water forms a firm but pliable ball. Remove from heat and cool to room temperature.
- Beat mixture until it loses gloss. Immediately fold in grated orange peel and nuts and transfer to prepared pan. Chill for 2 hours, or until firm, before cutting.
