MUG COOKIE

Mug Cookie image

Nothing beats a warm cookie, but sometimes you don't have the time to bake off an entire batch - that's when the microwave is the perfect shortcut. Mixed right in a mug, this cookie comes together in only a couple of minutes. Since it makes a single serving, the recipe uses an egg yolk instead of an entire egg to help bind the dough and make it tender and chewy. Play around with the mix-ins; from classic chocolate chips to birthday sprinkles, you can't go wrong. It's especially good when topped with a scoop of ice cream.

Time 10m

Yield 1 serving

Number Of Ingredients 10

1 tablespoon unsalted butter
1 tablespoon dark brown sugar
1 tablespoon granulated sugar
1/4 teaspoon pure vanilla extract
1 large egg yolk
3 tablespoons all-purpose flour
Pinch kosher salt
2 tablespoons mix-ins, such chocolate chips, sprinkles, chopped nuts or dried fruit
Flaky sea salt, optional
Vanilla ice cream, for serving

Steps:

  • Microwave the butter on high in a small microwave-safe mug until melted, 20 to 35 seconds. Tilt the mug so that the butter greases the sides. Add the brown sugar, granulated sugar, vanilla extract and egg yolk and mix with a fork until combined. Add the flour and salt and mix until just combined, then fold in the desired mix-ins. Top with the sea salt, if using. Microwave on high until the cookie is puffed and springs back when gently pressed, 60 to 75 seconds. Let sit for 1 minute before serving warm with a scoop of vanilla ice cream.

CHEWY COFFEE COOKIES

Chewy Coffee Cookies image

Provided by Food Network Kitchen

Time 2h

Yield about 24

Number Of Ingredients 11

3 tablespoons coffee beans
1/3 cup turbinado sugar
1 1/2 cups all-purpose flour
1/2 teaspoon salt
1/2 teaspoon baking powder
1/4 teaspoon ground cinnamon
1 stick unsalted butter, at room temperature
1 cup packed dark brown sugar
1 large egg
2/3 cup confectioners' sugar
2 to 4 teaspoons milk or water

Steps:

  • Position racks in the upper and lower thirds of the oven; preheat to 350 degrees F. Line 2 baking sheets with parchment paper. Coarsely grind the coffee beans in a coffee grinder. Combine 1 tablespoon ground coffee in a small bowl with the turbinado sugar; set aside. Transfer the remaining coffee to a medium bowl and whisk in the flour, salt, baking powder and cinnamon.
  • Beat the butter and brown sugar in a large bowl with a mixer on medium-high speed until light and fluffy, about 3 minutes. Beat in the egg. Reduce the mixer speed to low and beat in the flour mixture until combined.
  • Roll tablespoonfuls of dough into balls, then roll each ball in the coffee-sugar mixture. Arrange 2 inches apart on the prepared pans.
  • Bake, switching the pans halfway through, until the cookies are just set around the edges but the centers are still soft, about 18 minutes. Let cool 3 minutes on the pans, then transfer to racks to cool completely.
  • Make the glaze: Whisk the confectioners' sugar and 2 teaspoons milk in a small bowl until smooth. Gradually stir in up to 2 more teaspoons milk until the glaze is thick but pourable. Spoon the glaze over the cookies. Let set, about 10 minutes.

Microwave coffee & walnut cake image

Good Food reader Catherine Dunkley shares her super-quick and easy recipe for the perfect last-minute coffee and walnut cake

Provided by Good Food team

Categories     Dessert, Snack, Treat

Time 25m

Number Of Ingredients 10

85g very soft butter
85g golden caster sugar
2 eggs , beaten
85g self-raising flour
2 tsp instant coffee powder
small handful of walnut pieces (optional)
1 tsp instant coffee powder
1 tsp milk
25g very soft butter
100g icing sugar

Steps:

  • In a medium bowl, beat the butter and sugar together until light and fluffy. Gradually add the eggs followed by the flour and instant coffee. Stir most of the walnuts (if using) into the batter, reserving a few for decoration. Transfer to a microwave-proof dish and cook in the microwave on full power for 2 mins. Reduce the power to medium and cook for 2 mins.
  • After 4 mins, check to see if the cake is cooked - it should be risen and spring back when touched. If it needs a bit longer, cook on medium for 1 min more at a time, checking after each minute until the cake is cooked. Remove and allow to cool.
  • Meanwhile, make the coffee butter cream. Dissolve the coffee in the milk, then add the butter and icing sugar. Beat until smooth, spread over the cake and top with the reserved walnuts.
