1 lb salt cod fish
1/2 cup dried breadcrumbs
1/2 cup milk
2 1/2 cups mashed potatoes
2 tablespoons melted butter
1/2 teaspoon pepper
1 dash hot pepper sauce
1/4 cup vegetable oil, for frying
2 tablespoons chopped fresh parsley, for garnish

Steps:

  • Soak the fish in cold water for at least 6 hours or overnight.
  • Change the water at least 3 times during the soaking.
  • Remove the fish from the water and rinse well.
  • Place it in a saucepan filled with fresh cold water and set it over medium-high heat.
  • Bring the mixture to a simmer and cook for 10 minutes.
  • Drain the fish and let stand until cool enough to handle.
  • Combine the breadcrumbs and milk in a small bowl and let soak.
  • Using a fork, flake the fish, removing any bones, into a large bowl.
  • Add the bread crumb mixture, the potatoes, butter, pepper, and hot pepper sauce.
  • Mix until well combined.
  • Form the mixture into 2 1/2-inch cakes.
  • Heat half the oil in a large skillet over medium-high heat.
  • Cook until the cakes are browned on both sides, about 2 minutes per side.

500g Maris Piper potatoes , peeled and cut into 3cm chunks
2 tbsp olive oil
3 large garlic cloves , crushed
1 thumb-sized piece ginger , peeled and grated
1 tsp black mustard seeds
2-3 heaped tbsp medium curry powder
4 skin-on cod fillets
400ml semi-skimmed milk
1 small lemon , zested and juiced
150g plain flour
2 medium eggs , beaten
150g panko breadcrumbs
salad leaves and slaw, to serve

Steps:

  • Put the potatoes in a large saucepan, cover with cold water and bring to the boil. Reduce the heat to a simmer and cook for 8-10 mins until tender. Drain and leave to steam-dry for 5 mins. Lightly crush the potatoes with a potato masher until slightly chunky.
  • Heat 1 tbsp of the oil in a frying pan over a medium heat. Fry the garlic, ginger, mustard seeds and curry powder for 1 min. Stir the spices through the potatoes, season with salt and set aside.
  • Put the cod in a large saucepan over a medium heat, pour over the milk and bring to a simmer. Immediately remove from the heat, cover and set aside for 10 mins to poach. Lift the fish out with a slotted spoon, then remove and discard the skin. Flake the flesh into the potato mixture in large pieces, then fold in with the lemon zest and juice. Shape the mixture into eight fishcakes using your hands.
  • Put the flour, eggs and breadcrumbs in three separate shallow bowls. Dip each fishcake in the flour, then the eggs, then the breadcrumbs. Set aside on a baking sheet. To freeze, cover and freeze on the sheet until solid, then transfer to freezerproof containers.
  • Heat the remaining oil in a large non-stick frying pan over a medium heat and heat the oven to low. Fry the fishcakes in batches for 5-6 mins on each side until golden and crisp. Keep warm in the oven as you cook them. Serve with the salad leaves and slaw on the side.

125ml mayonnaise
1 rounded tbsp capers, roughly chopped (rinsed and drained if salted)
1 rounded tsp creamed horseradish
1 rounded tsp Dijon mustard
1 small shallot, very finely chopped
1 tsp flatleaf parsley, finely chopped
450g skinned Icelandic cod or haddock fillet, from a sustainable source
2 bay leaves
150ml milk
350g Maris Piper potatoes
½ tsp finely grated lemon zest
1 tbsp flatleaf parsley, chopped
1 tbsp snipped chives
1 egg
flour, for shaping
85g fresh white breadcrumbs, preferably a day or two old
3-4 tbsp vegetable or sunflower oil, for shallow frying
lemon wedges and watercress, to serve

Steps:

  • Mix together 125ml mayonnaise, 1 rounded tbsp roughly chopped capers, 1 rounded tsp creamed horseradish, 1 rounded tsp Dijon mustard, 1 small very finley chopped shallot and 1 tsp finely chopped flatleaf parsley. Set aside.
  • Lay 450g skinned Icelandic cod or haddock fillet and 2 bay leaves in a frying pan. Pour over 150ml milk and 150ml water.
  • Cover, bring to a boil, then lower the heat and simmer for 4 mins. Take off the heat and let stand, covered, for 10 mins to gently finish cooking the fish.
  • Meanwhile, peel and chop 350g Maris Piper potatoes into even-sized chunks. Put them in a saucepan and just cover with boiling water. Add a pinch of salt, bring back to the boil and simmer for 10 mins or until tender, but not broken up.
  • Lift the fish out of the milk with a slotted spoon and put on a plate to cool. Drain the potatoes in a colander and leave for a min or two.
  • Tip the potatoes back into the hot pan on the lowest heat you can and let them dry out for 1 min, mashing them with a fork and stirring so they don't stick. You should have a light, dry fluffy mash.
  • Take off the heat and beat in 1 rounded tbsp of the sauce, then ½ tsp lemon zest, 1 tbsp chopped flatleaf parsley and 1 tbsp snipped chives.
  • Season well with salt and pepper. The potato should have a good flavour, so taste and adjust to suit.
  • Drain off liquid from the fish, grind some pepper over it, then flake it into big chunks into the pan of potatoes.
  • Using your hands, gently lift the fish and potatoes together so they just mix. You'll only need a couple of turns, or the fish will break up too much. Put to one side and cool.
  • Beat 1 egg on a large plate and lightly flour a board. Spread 85g fresh white breadcrumbs on a baking sheet. Divide the fish cake mixture into four.
  • On the floured board, and with floured hands, carefully shape into four cakes, about 2.5cm thick. One by one, sit each cake in the egg, and brush over the top and sides so it is completely coated.
  • Sit the cakes on the crumbs, patting the crumbs on the sides and tops so they are lightly covered. Transfer to a plate, cover and chill for 30 mins (or up to a day ahead).
  • Heat 3-4 tbsp vegetable or sunflower oil in a large frying pan. To test when ready, drop a piece of the dry breadcrumbs in - if it sizzles and quickly turns golden brown, it is ready to use.
  • Fry the fish cakes over a medium heat for about 5 mins on each side or until crisp and golden. Serve with the rest of the sauce (squeeze in a little lemon to taste), lemon wedges for squeezing over and watercress.

These freezable and simple-to-make fish patties are ideal as a family meal or can be made and frozen individually as a quick last-minute kids supper, from toddlers to teens

1 x pack fish pie mix (cod, salmon, smoked haddock etc, weight around 320g-400g depending on pack size)
3 spring onions, finely chopped
100ml milk
450g potato, peeled, large ones cut in half
75g frozen sweetcorn, defrosted
handful of grated cheddar cheese
1 large egg, beaten
flour, for dusting
olive oil, for frying

Steps:

  • Cook the potatoes in boiling water until just tender. Drain well and return to the pan on a low heat. Heat for another minute or two to evaporate excess liquid. Mash the potato with a small knob of butter. Allow to cool.
  • Put the fish spring onions and milk in a shallow dish, cover with cling film and cook in the microwave for 1 ½ - 2 mins until just cooked. If you don't have a microwave, put everything in a saucepan and gently cook until just opaque and cooked through.
  • Drain the fish and spring onions through a fine sieve. Gently mix through the potatoes, avoiding breaking up the fish too much, along with the sweetcorn, cheddar and a generous grind of black pepper. Form into 6 - 8 patties. The cooler the mash potato is when you do this, the easier it will be to form the patties as the mixture will be very soft when warm.
  • Pour the egg on one plate and scatter flour on the other. Dip the patties in egg and then flour and arrange on a sheet of baking paper on a tray. Put the patties in the fridge for at least half an hour to firm up if the patties feel very soft. At this point you can freeze the patties, wrapped individually. Defrost throughly before moving onto the next stage.
  • Heat a large frying pan with a generous glug of olive oil. When the oil is hot, carefully lower the fish cakes into the pan. Cook for 5 - 7 minutes or until golden brown underneath and then carefully flip them over. Fry for another 5 - 7 minutes or until golden on the bottom and heated all the way through.

  • Heat oven to 200*F. Heat 1 TBS olive oil in a skillet over medium heat. Add onion, 1/2 tsp salt, and 1/8 tsp pepper. Cook until the onions are translucent, about 5 minutes. Set aside.
  • Cut fish into large chunks; pulse in a food processor to coarsely chop. Transfer to a medium bowl. Add onion, tarragon, egg and Tabasco, combining well. Add remaining salt and pepper. Form 8 3-inch patties; dredge them in bread crumbs, shaking off excess.
  • Heat 1 TBS oil in a large skillet, over medium low heat. Cook 4 patties until browned, about 4 to 5 minutes on each side. Remove to a baking sheet, cover with aluminium foil, and keep warm in oven while you cook the other 4. Wipe out skillet, return to heat and add remaining oil. Cook remaining patties and serve immediately with tartar sauce.

1 pound cod fillets, cubed
1 tablespoon butter
1 tablespoon grated onion

  • Place the potatoes in a large pot of water, bring the water to a boil. Let the potatoes cook until they are almost tender.

Cod cakes are terrific with cod, but can be made with any white-fleshed fish. Poach the fillets in bay-leaf-scented water, then flake the cooled meat into a New Englandish mirepoix of sautéed onions and celery. Eggs and cracker crumbs will help bind everything together below a drift of spice. Make sure to leave some time to chill the resulting patties in the refrigerator - the cold will help them set up so they don't fall apart in the sauté pan. A light smear of mayonnaise on the exterior of the cakes before you fry them will encourage the most glorious crust. Serve with a thatch of green salad, a bowl of chowder or a neat pile of slaw.

1 pound cod fillets, or other white flaky fish
2 tablespoons unsalted butter
2 ribs celery, trimmed, peeled and diced
1 medium-size yellow onion, peeled and diced
2 cloves garlic, peeled and minced
1 heaping tablespoon mayonnaise, homemade or store-bought
2 teaspoons Dijon mustard
2 eggs
1 1/2 teaspoons kosher salt
1/2 teaspoon freshly ground black pepper
2 teaspoons Old Bay seasoning, Lawry's Seasoned Salt or 1 teaspoon paprika and 1 teaspoon red-pepper flakes, or to taste
1 ''sleeve'' unsalted saltine crackers, crushed, or 1 heaping cup panko bread crumbs
1/2 bunch parsley, roughly chopped
1/4 cup neutral oil, like canola

Steps:

  • Fill a shallow, wide pan with high sides with about an inch of water, and set it over high heat. Add the peppercorns, bay leaf and 1 section of the lemon to the water, and allow it to come to a bare simmer. Place the fish into this poaching liquid, and cook, barely simmering, until the flesh has just begun to whiten all the way through, approximately 6 to 8 minutes. Using a wide spatula, carefully remove the fish from the water, and set aside to cool.
  • Empty the pan, and return it to the stove, over medium-high heat. Add the butter, and allow it to melt, swirling it around the pan. When the butter foams, add the celery, onions and garlic, and sauté, stirring often, until the vegetables soften and the onions turn translucent, then transfer them to a large bowl.
  • In a small bowl, mix together the mayonnaise, mustard, eggs, salt, pepper and seasoning salt (or paprika and hot-pepper flakes), then add this mixture to the bowl with the sautéed vegetables, pour the crushed saltines or bread crumbs over them and stir to combine. Add the parsley, and stir again.
  • Flake the cooked fish into the binding sauce carefully, keeping the flakes as whole as you can manage, then gather them into small balls, and form them into patties, 4-6 for a main course, 6-8 for an appetizer. Place them on a sheet pan or platter, cover loosely with plastic wrap and transfer them to the refrigerator for at least 30 minutes to set.
  • Set a large sauté pan over high heat, and add to it the neutral oil. When the oil is shimmering, remove the fish cakes from the refrigerator, and carefully sauté the patties until they are golden brown, approximately 4 to 5 minutes a side. Work in batches if necessary. (A small smear of mayonnaise on the exterior of the patties will give them a crisp crust.) Serve them alone, or with greens dressed in a lemony vinaigrette, with the remaining wedges of lemon.

Steps:

  • Preheat oven to 200 degrees. Heat 1 tablespoon olive oil in a skillet over medium heat. Add onion, 1/2 teaspoon salt, and 1/8 teaspoon pepper. Cook until onions are translucent, about 5 minutes. Set aside.

5 pounds cod fillets
3 pounds Yukon Gold potatoes, peeled and quartered
2 Spanish onions, diced
Canola oil, for pan-frying
4 cups sour cream
1 cup diced fresh chives
1 cup Dijon mustard
1 cup chopped scallions
1/2 cup Worcestershire sauce
3 tablespoons Old Bay seasoning
1 tablespoon garlic powder
1 tablespoon white pepper
1 pound panko breadcrumbs
Butter, for pan-frying

Steps:

  • Add some salt and a bouquet garni of some bay leaves, lemon wedges and black peppercorns to a pot of boiling water. Add the cod fillets and boil for 10 to 12 minutes. Remove the cod from the water and refrigerate for 1 hour.
  • Boil the potatoes in plenty of salted water until tender. Drain, mash and cool completely.
  • Pan-fry the onions in a little bit of canola oil until soft. Set aside to cool.
  • In a large bowl, mix together the chilled cod, mashed potatoes, fried onions, sour cream, chives, mustard, scallions, Worcestershire sauce, Old Bay seasoning, garlic powder, white pepper and 1 tablespoon salt. Add the breadcrumbs and mix to combine. Form the mixture into 4-ounce cakes.
  • Heat some oil and 1 tablespoon butter in a large skillet over medium-high heat. Pan-fry the cakes in batches until golden brown, 3 to 4 minutes per side; add some additional oil and butter between batches as needed.

Camilla MacPhee, a longtime resident of Souris, Prince Edward Island, fondly remembers when staples like salt beef, salt cod, potatoes, turnips, beets, parsnips, and carrots came entirely from neighboring farmers and fishermen. This recipe is based on the fish cakes she still makes today.

1 lb skinless boneless salt cod (preferably center-cut)
1 medium onion, finely chopped (1 cup)
3 1/2 tablespoons unsalted butter
1 lb russet (baking) potatoes
1 parsnip (1/4 lb)
1/2 teaspoon black pepper
1 large egg, lightly beaten
1/2 cup plain dry bread crumbs
3 tablespoons vegetable oil

Steps:

  • Soak cod in a large bowl with cold water to cover by 2 inches, chilled, changing water 3 times a day, 1 to 3 days (see cooks' note, below).
  • Drain cod and transfer to a 3- to 4-quart pot with fresh water to cover by 2 inches. Bring just to a simmer and remove from heat. (Cod should just flake; do not boil, or it will become tough.) Drain in a colander.
  • Cook onion in 1/2 tablespoon butter in a 10-inch heavy skillet over moderate heat, stirring occasionally, until pale golden, about 7 minutes. Transfer to a large bowl.
  • Peel potatoes and parsnip. Halve parsnip lengthwise and remove core if tough. Cut potatoes and parsnip into 1-inch pieces and steam together in a steamer over boiling water in a large pot, covered, until tender, 18 to 20 minutes. 3Add to cooked onions and coarsely mash, then cool slightly. Flake cod and stir into potato mixture along with salt to taste and pepper. Stir in egg until just combined.
  • Put bread crumbs in a shallow baking dish.
  • Form rounded 1/4-cup scoops of cod mixture into 12 (3-inch-diameter) cakes and transfer to a sheet of wax paper. Gently dredge fish cakes in bread crumbs to coat and transfer to a wax-paper-lined tray. Chill, covered with plastic wrap, at least 30 minutes.
  • Preheat oven to 200°F.
  • Heat 1 tablespoon butter and 1 tablespoon oil in 10-inch heavy skillet over moderate heat until foam subsides. Cook 4 fish cakes, turning over once, until golden brown, 7 to 8 minutes total.
  • Transfer to a paper-towel-lined baking sheet and keep warm in middle of oven. Wipe skillet clean and cook remaining fish cakes in 2 batches, adding 1 tablespoon each of butter and oil per additional batch.

I used this recipe for week 30 of my food blog, "Travel by Stove." I am attempting to cook on meal from every nation on Earth, and Bermuda is my 30th stop. Please note that I never use any recipe for my blog that I'm not reasonably sure is from authentic or traditional sources, and this recipe has been posted without any alternations or additions to the ingredients. These cod fish cakes are really more like potato cakes with a little bit of cod meat added. I think they work best as a side dish.

Steps:

  • thaw fish, if frozen, rinse fish, pat dry with paper towels.

  • In a medium bowl, combine egg, bread crumbs, onion, mayonnaise or dressing, mustard, parsley, lime zest and salt.
  • Add fish, mix well.
  • Shape into 1/2 inch thick patties.
  • Coat both sides of the fish patties with cornmeal.
  • In a large nonstick frypan or on a nonstick griddle heat oil over medium heat.
  • Add half the fish cakes.
  • Cook for 4 to 6 minutes or until fish flakes easily when tested with a fork, gently turning once.

3 medium Maris Piper potatoes (approx. 550g/1lb 4oz), peeled and quartered
500g/1lb 2oz skinless cod loins
1 tsp salt
2 garlic cloves, peeled and pounded in a pestle and mortar
1 red chilli, finely chopped
1 green chilli, finely chopped
large handful freshly chopped coriander, plus extra to garnish
½ tsp chilli powder
2 tsp cumin seeds, toasted in pan then ground in a pestle and mortar
1 tsp finely chopped fresh root ginger
1 free-range egg, beaten
50g/1¾oz plain flour, for dusting
sunflower or vegetable oil, for shallow frying

Steps:

  • Bring a pan of water to the boil and cook the potatoes for approximately 10-12 minutes, or until tender.
  • While the potatoes are cooking, cut the cod loins in half. Put the cod in a steamer or heatproof colander, and sit it on top of the pan of potatoes. Cover with a lid and reduce the heat to a simmer. Steam for 6-8 minutes, or until the fish is cooked through and starting to flake. Remove the fish and set aside. Drain the potatoes and transfer to a large bowl. Add the cod and, using a masher, blend the potatoes and fish together.
  • Stir in the salt, garlic, chillies, coriander and chilli powder. Mix to combine. Add the ground cumin, ginger and beaten egg and mix well to combine.
  • Put the flour in a shallow bowl. Shape large spoonfuls of the fish mixture into rounds using your hands, then flatten slightly before coating well in plain flour. Place on a plate while you use the remaining mixture - it will make approximately 12 fishcakes. Chill the fish cakes in the fridge for 10-15 minutes to firm up.
  • In a non-stick frying pan, heat enough oil to completely cover the base of the pan. Shallow fry the fish cakes for 2-3 minutes on each side until golden brown. Carefully seal the edges of the fish cakes in the oil until golden. Transfer to a plate and serve the warm fish cakes with sprigs of coriander and tomato chutney.

1 pound cod fillets
¼ teaspoon black peppercorns
1 small onion (peeled and sliced)
1 cup whole milk
2 cups mashed potatoes
1 pound cod (flaked poached cod)
2 tablespoons parsley (finely chopped)
2 cloves garlic (minced)
1 medium egg (for binding the fish cakes)
¼ teaspoon black pepper
½ teaspoon salt
½ cup all-purpose flour (for dusting the fish cakes)
2 large eggs (beaten for coating the fish cakes)
1 cup breadcrumbs (finely crumbed for coating the fish cakes)
½ cup parmesan cheese (finely grated - optional)
3 tablespoons canola oil (for frying the fish cakes)

Steps:

  • Pour the milk into a large saucepan and add the sliced onion and peppercorns. Bring the liquid to simmering point. Do not boil. Lower the heat and simmer for 5 minutes. Add the cod fillets and simmer for 7 to 10 minutes depending on the thickness of your fish.
  • Remove the pan from the heat and allow the fish to cool in the liquid. Remove the fish with a slotted spoon. Reserve the liquid, which may be needed to bind the fish cakes.
  • Flake the fish into a large mixing bowl, taking care to remove all the bones. Pass the mashed potatoes through a sieve or food mill.
  • Add the mashed potatoes, minced garlic, parsley, salt and pepper and combine well together. Add the parmesan cheese if desired.
  • Add the beaten egg and bind the mixture. If the mixture is too dry add some of the reserved poaching milk. If the mixture is too wet and sticky add a little flour.
  • Divide into eight portions. Using floured hands form the mixture into flat cakes.
  • Set up 3 bowls, one with flour, one with beaten egg and the other with breadcrumbs.
  • Coat each fish cake in flour. Dip it in egg and then coat in breadcrumbs. Repeat with the rest of the fish cakes.
  • Heat the butter or oil in a large skillet. Fry the fish cakes for about 5 minutes on the first side or until nicely golden brown. Flip the fish cake and brown for 4 to 5 minutes on the other side. Cook in 2 separate batches.
  • Serve hot with a side of vegetables or a crisp green salad.

10 parsley sprigs
2 sprigs thyme
1 small bay leaf
1 small onion, halved
4 cups whole milk
2 tablespoons extra-virgin olive oil, plus extra for shallow frying
1/2 cup minced shallot
2 large garlic cloves, minced
1 tablespoon finely sliced chives
3 tablespoons minced flat-leaf parsley
1 tablespoon minced tarragon
1/3 cup heavy cream
1 3/4 cups fresh bread crumbs
1 large egg, lightly beaten
Kosher salt and freshly ground black pepper
1 lemon, cut into 4 wedges
Tartar Sauce, recipe follows
1 cup prepared mayonnaise
1 tablespoon finely chopped cornichons
1 tablespoon finely chopped flat-leaf parsley leaves
1/4 teaspoon finely chopped fresh tarragon
1 1/2 tablespoons chopped capers
1 small scallion, white and green, minced
1/4 teaspoon finely grated lemon zest
1/2 teaspoon freshly squeezed lemon juice
2 to 3 drops hot sauce (optional)

Steps:

  • Soak the salt cod in enough cold water to cover, for 48 hours in the refrigerator. Change the water every day. Drain and cut into large pieces.
  • Tie the parsley, thyme, and bay together with kitchen twine. Put the bundle in a soup pot along with the onion and milk. Bring to a slow simmer over medium heat; add the cod and poach for 15 minutes or until the fish just flakes. Drain and cool. Discard the milk, herb bundle, and onion.
  • Heat the olive oil in a medium skillet, and saute the shallots over medium-low heat, until golden, about 10 minutes. Add the garlic and cook 1 minute more. Set aside to cool slightly. Flake the cod into a medium bowl with your fingers, discarding any bones or skin. Mix the fish with the shallot mixture, the chives, parsley, tarragon, cream, 3/4 cup of the breadcrumbs, egg and salt and pepper to taste. Transfer the mixture to a food processor and pulse several times, until the mixture is combined but not pureed. Form the mixture into 8 disks, and refrigerate for at least 4 hours.
  • When ready to serve dredge the cakes in the remaining crumbs. Heat a large skillet filled about a 1/4 inch deep with oil medium heat. Saute the cakes until golden for about 3 to 4 minutes per side. Serve with lemon wedges and tartar sauce.
  • In a small mixing bowl, stir together the mayonnaise, cornichons, parsley, tarragon, capers, scallion, lemon zest, juice, and the hot sauce, if using. Refrigerate for 30 minutes for the flavors to come together. Serve.
  • Yield: about 1 1/4 cups

2 tbsp + 5 tbsp vegetable oil (divided)
1 lb boneless cod filet
salt and pepper
2 cups mashed potato (leftover, or just microwave 2 potatoes skin-on)
1 large egg
1 green onion (white and green parts, minced)
up to 1 cup fresh bread crumbs (I grate a frozen bun on a box grater)
1/4 cup all purpose flour
1/2 cup mayonnaise
2 tbsp fresh lemon juice
1 1/2 tbsp brined capers
2 tbsp minced fresh parsley
1 green onion (white and green parts, minced)
Salt (to taste)

Steps:

  • Heat 2 tbsp oil in a large skillet over medium heat. Add cod, season with salt and pepper; cook until just barely opaque and flakey - better to ever-so-slightly undercook the fish than overcook it at this stage, as you'll be cooking it again in the cakes.
  • Transfer to a bowl and break into large flakes with your hands. Add mashed potato, egg, green onion and enough bread crumbs so that the mixture holds a patty shape (if using leftover mash with milk or other liquid added, you'll definitely need the whole cup of crumbs). Use your hands or a big spoon to work everything together until well-combined.
  • Place flour on a shallow plate. Form potato mixture into 16 equal patties between the palms of your hands, dredging both sides in the flour and transferring to a baking sheet as you go. Refrigerate fish cakes 20 minutes to firm up.
  • Wipe out the fish skillet and return to medium heat; add remaining oil. When shimmering hot, add several fish cakes - you'll need to cook them in a few batches to avoid over-crowding the pan. Serve with tartar sauce.

1.5 pounds salt fish pieces
3 to 3.5 pounds potato (peeled )
1 yellow onion (peeled and minced)
2 tablespoons dried savoury (or thyme or marjoram)
1 teaspoon freshly ground black pepper
3/4 cup all-purpose flour (divided (approximately))
vegetable or canola oil (as needed for frying fish cakes)
Mustard pickles (for serving (optional))
Molasses (for serving (optional))

Steps:

  • Soak salt fish pieces for 12 to 24 hours in a large bowl of cold water with the fish fully submerged, and place in the refrigerator (draining and changing water once or twice during that time. See Notes below).
  • In a large pot of fresh water, boil pieces of salt cod for 15 to 20 minutes (there should be an inch or two of water above the salt cod, basically ensuring that it is fully submerged and covered by the water). Drain.Note: As you are cooking the salt cod, reduce the heat, if necessary, while still maintaining a boil.
  • Once salt fish is cool enough to handle, remove skin and all bones (and discard), shred fish with your hands (checking again for bones and discarding) and set the fish aside in a bowl.
  • Meanwhile, boil potatoes in another pot of lightly salted water until tender (there should be an inch or two of water above the potatoes, basically ensuring that they are fully submerged and covered by the water). Drain and let cool slightly. Roughly mash potatoes in the pot.Note: As you are cooking the potatoes, reduce the heat, if necessary, while still maintaining a boil.
  • To pot of mashed potatoes, add onion, savoury, black pepper, salt fish and about 1 heaping tablespoon of flour. Stir to combine everything, but don't overmix.
  • Using a round ice-cream scoop, form salt fish cakes (the size I made were about 60 to 65 grams each or about 2 ounces each). Pat down to form a patty. Place remaining flour in a small bowl. One at a time, lightly dredge fish cakes in flour, shaking off excess.
  • Preheat oven to 200 degrees Fahrenheit to keep fish cakes warm (as you will be working in batches).
  • To cook fish cakes, heat 2 to 3 tablespoons of vegetable or canola oil in a 12-inch cast-iron pan over medium heat.Note: Cook fish cakes are cooked in batches, about 4 to 5 fish cakes per batch.
  • Place about 4 to 5 fish cakes in the pan. Cook for about 4 to 5 minutes on one side.
  • Flip fish cakes to the other side and continue to cook for another 4 to 5 minutes or until the outside is golden brown and crispy. Transfer fish cakes to a baking sheet and place into your preheated oven to keep warm while you are finishing your batches.
  • Repeat process to cook remaining fish cakes.Note: Monitor the temperature as you are cooking the fish cakes so that they don't burn. The skillet tends to get hotter as you are cooking your batches.
  • Serve with mustard pickles and a drizzle of molasses (optional). Enjoy!

  • Traditional Newfoundland Fish CakesSoak fish over night. Olive oil and butter is for frying fish cakes and onion. Method: 1 - Soak your salt cod overnight, then drain off water. 2- In medium boiler half full with water then add your salt fish. 3- In another medium boiler half full with water add 1/2 tsp sea salt ( optional) 1/2 medium onion, then add your potatoes. 4- In a medium frying pan add 1 tbsp butter, 1 tsp olive oil melt then add 1/2 medium chopped onion fry until golden brown. 5- When fish and potatoes are cooked, drain off water. You will need a large bowl to add your potatoes, sauté onion, savoury, egg, pepper then mash together. 6- Before adding your fish flake it apart with a fork make sure there are no bones in your fish. After you have all your fish flaked add to your bowl continue mashing to mix all your ingredients together. 7- In a small bowl add 1/2 cup of flour, then start scooping your fish mixture up with a ice cream scoop, to make equal helpings. 8- Form each scoop of fish mixture into a flat patty then roll in your flour and put to the side on a plate until all your fish cakes have been made. 9- Pre heat a medium frying pan add 1 tbsp butter and 1 tsp olive oil or margarine put about four fish cake in your pan and let fry until golden brown on each side. " maybe five minutes on each side. This mixture makes 12 medium size fish cakes. If you only need to fry some of your fish cakes you can freeze the rest in freezer bags and date them for another time.

2 ounces Spanish onions
8 ounces cod

  • Bring oil to 360 degrees F in a deep-fryer.

  • Strain the potatoes, parsnip and onion out, then mash them with the butter, herbs and salt and pepper.
  • Fold in cod and form into 2-ounce cakes. Coat cakes in flour, then dip in egg wash, and finally in panko.
  • Deep-fry cod cakes until golden brown, about 3 minutes.

1 small onion, thinly sliced
1 bay leaf
4 peppercorns
2 cups water
2 to 3 cups boiled potatoes
Seasonings (possible suggestions: onion, parsley, black pepper, or other)
2 eggs

Butter or bacon drippings
2 cups cornmeal

Steps:

  • Soak the salt cod in cold water. Salt cod needs a long soaking to remove the preserving salt, so start at least 1 day in advance. First, wash off excess salt under cold, running water. Place fish in a bowl, or crock, of cold water and refrigerate, changing the water several times. Soak until the fish feels soft and almost fresh, this will take a good 24 hours.
  • Poach the salt cod. In a 2-quart pan, add onion, bay leaf, peppercorns, and water and bring to a simmer. After 5 minutes, add the drained soaked codfish and enough water to cover the fish. Bring to a simmer. When it comes to a simmer, cover immediately, and remove pan from heat (salt cod toughens if simmered more than a few seconds). Let stand for 10 minutes or until you are ready to use it.
  • Drain the fish and flake it into a bowl. In a separate bowl, mash the potatoes. Using your hands or a wooden fork, mix the mashed potatoes in with flaked cod. The portions are up to you, more potato than fish is usually the norm. Suggested seasonings to be added at this point are chopped onion, chopped parsley, pepper, etc. In a cup, beat eggs with a pinch of salt. Beat 3/4 of eggs into the fish and potato mixture. Add more egg by drops if mixture is very stiff. Add a little cornmeal if the mixture is too wet. Let cool 20 minutes for easy forming.
  • In a frying pan, heat about 1/2-inch of butter or bacon grease. Shape cod mixture into small patties, being sure to flatten out the centers. Just before placing in the frying pan, coat patties with cornmeal. Fry 2 to 3 minutes on each side until browned. Remove to a tray lined with paper towels. Keep warm in 200 degree F oven while frying the remaining.

  • Tear bread into pieces and pulse to fine crumbs in a food processor. Transfer a scant cup of crumbs to a bowl for fish cakes and reserve remaining 1 1/2 cups in a shallow bowl for coating. Pulse celery and scallions in processor until coarsely chopped, then add parsley and pulse until finely chopped. Combine celery mixture with scant cup crumbs in bowl (for fish cakes).
  • Pulse fish in processor until finely chopped (be careful not to process to a paste). Add fish to celery-crumb mixture along with egg, 1/4 teaspoon salt, and 1/8 teaspoon pepper, stirring until combined well.
  • Season bread crumbs in shallow bowl with remaining 1/4 teaspoon salt and 1/8 teaspoon pepper. Gently shape fish mixture into 4 (4-inch) patties (mixture will be soft) and coat well with seasoned bread crumbs. Chill, uncovered, on a wax-paper-lined large plate 10 minutes.
  • Heat 1 1/2 tablespoons oil in a 12-inch nonstick skillet over moderate heat until hot but not smoking, then fry 2 fish cakes, turning over once, until golden brown and cooked through, 8 to 10 minutes total. Repeat with remaining 1 1/2 tablespoons oil and 2 fish cakes, wiping out skillet with a paper towel between batches.
