1kg roasting potatoes (we used Maris Piper), halved, or quartered if large
½-1 tsp chilli flakes
1 tsp turmeric
1 tbsp coriander seeds
1 tbsp cumin seeds
4 tbsp vegetable oil

Steps:

  • Heat oven to 220C/200C fan/gas 7. Boil the potatoes for 5 mins. Drain well, place back in the pan, cover with a lid and shake vigorously to lightly roughen up the edges.
  • Meanwhile, grind the spices using a pestle and mortar until lightly crushed, then mix with the oil. Put the spice mix in a roasting tin and place in the oven to heat up. Carefully put the potatoes into the roasting tin, tossing them in the hot oil and spice mixture. Roast in the oven for 40-45 mins or until crisp and golden, turning once or twice during cooking.

3 pounds medium Yukon Gold potatoes, cut into 1-1/2-inch cubes (about 8 potatoes)
2 tablespoons olive oil
2 garlic cloves, minced
2 tablespoons smoked paprika
2 teaspoons garlic powder
1-1/2 teaspoons chili powder
1-1/2 teaspoons ground cumin
1/4 teaspoon salt
1/4 teaspoon crushed red pepper flakes
1/8 teaspoon pepper
AIOLI:
1-1/2 cups mayonnaise
3 tablespoons lemon juice
3 garlic cloves, minced
1 tablespoon minced fresh chives plus additional for topping
1 teaspoon red wine vinegar
1/4 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Preheat oven to 375°. Place potatoes in a Dutch oven; add water to cover. Bring to a boil. Reduce heat; cook, uncovered, 8-10 minutes or until just tender. Drain; pat dry with paper towels. Transfer potatoes to a mixing bowl. Toss potatoes in oil and minced garlic to coat evenly. , Combine the paprika, garlic powder, chili powder, cumin, salt, pepper flakes and pepper; sprinkle over potatoes. Gently toss to coat. Transfer potatoes to 2 greased 15x10x1-in. baking pans, spreading into a single layer. Bake until crispy, about 25 minutes, stirring potatoes and rotating pans halfway through cooking., For aioli, combine ingredients until blended. Transfer potatoes to a serving platter; sprinkle with chives. Serve warm with aioli.

1 pound Yukon Gold potatoes, cut into 1-inch pieces
7 tablespoons extra-virgin olive oil
Kosher salt and freshly ground pepper
8 skin-on, bone-in chicken thighs and drumsticks (4 of each; about 2 1/2 pounds total)
3 Fresno chile peppers, seeded and roughly chopped
2 cloves garlic, chopped
Grated zest and juice of 1 lemon
1 tablespoon plus 2 teaspoons red wine vinegar
1 teaspoon paprika
Heaping 1/2 teaspoon honey
4 cups iceberg lettuce salad mix

Steps:

  • Put a baking sheet on the top oven rack and preheat to 475 degrees F. Toss the potatoes with 1 tablespoon olive oil in a bowl; season with salt and pepper. Spread out on the hot baking sheet and roast until the potatoes start browning, about 10 minutes.
  • Meanwhile, heat 1 tablespoon olive oil in a large skillet over medium-high heat. Pat the chicken dry with paper towels and season with salt and pepper. Cook skin-side down until the skin is crisp and brown, about 6 minutes, then flip and brown lightly on the other side, about 3 minutes.
  • Make the sauce: Blend the chiles, garlic, lemon zest and juice, 1 tablespoon vinegar, the paprika, honey and 1 teaspoon salt in a blender to make a chunky puree. Gradually blend in 1/4 cup olive oil. Set aside half of the sauce for serving.
  • Move the potatoes to one side of the baking sheet and add the chicken skin-side up to the other side. Brush all over with the remaining chile sauce. Roast until the chicken is cooked through and the potatoes are browned and crisp, 13 to 15 minutes. Divide the chicken, potatoes and pan juices among plates.
  • Toss the lettuce mix with the remaining 1 tablespoon olive oil and 2 teaspoons vinegar; season with salt and pepper. Add the salad to the plates. Serve with the reserved chile sauce.

1 tablespoon cumin seeds
1 tablespoon red pepper flakes
1/2 tablespoon whole black peppercorns
1 tablespoon garlic powder
1 tablespoon salt
1 (3-pound) pork roast, cut into 4 steaks, 2-inches thick
2 tablespoons vegetable oil
3 russet potatoes, cut into 1-inch pieces
2 sprigs rosemary, stripped
2 tablespoons vegetable oil
Salt
3/4 cup sugar
1/2 cup red wine vinegar
1 cup orange juice
1 tablespoon butter

Steps:

  • Preheat the oven to 400 degrees F.
  • To prepare the pork: Place cumin seeds, red pepper flakes and peppercorns in a spice grinder and grind into a fine powder. Place in a small bowl and mix in garlic powder and salt. Rub mixture all over pork. Let sit at room temperature, 30 minutes.
  • Meanwhile, in a medium bowl, toss potatoes with rosemary, oil and salt. In a small saucepan, bring sugar, vinegar and orange juice to a boil. Reduce heat to a simmer and continue cooking Sweet and Sour Sauce until it reduces by half, about 10 minutes. Remove from heat, swirl in butter and keep warm before using.
  • In a 13-inch cast iron skillet, heat 2 tablespoons vegetable oil. When pan is smoking hot, add pork and sear on both sides. Add potatoes and place in the oven until pork is cooked through and potatoes are tender, about 40 minutes.
  • Serve pork chops with rosemary potatoes and drizzled with the Sweet and Sour Sauce.

2 tbsp olive oil
1 tsp mustard seed
1 tsp turmeric
2 tsp garam masala
140g frozen pea

Steps:

  • Cover the potatoes in cold salted water, then bring to the boil. Simmer for 5 mins, until just tender. Drain and allow to steam dry for a few mins. Heat the oil in a frying pan and fry the spices for 1 min until fragrant. Tip in the potatoes and toss well so they are coated in the spices. Gently fry for 5-10 mins until slightly golden, then add peas, mix well and cook for 3-4 mins more. Season well before serving.

2 tablespoons olive oil (or canola oil)
2 tablespoons brown sugar
1 teaspoon chili powder

  • Preheat oven to 400 degrees F.
  • Place all ingredients in a ziploc bag & toss to coat.
  • Spread sweet potato cubes around on a broiler pan or cookie sheet.
  • Roast at 400 degrees F for 40 - 45 min, or until lightly browned & tender when pierced with a fork.
  • Stir pieces around a bit to turn them, after first 20 minutes roasting.

2 teaspoons cayenne pepper
1 teaspoon cumin
1 teaspoon oregano
2 -3 tablespoons olive oil

Steps:

  • Preheat the oven to 400 degrees F (200 C).
  • Wash the potatoes.
  • Cut in half lengthwise, then cut each piece in half again lengthwise, leaving you with eight wedges per potato.
  • You can either leave them this thickness, or cut each wedge in half crossways, giving you 16 triangles per potato.
  • Put in a big bowl and rinse with water to wash the starch off.
  • Drain as much water as you can from the potatoes, then add in the olive oil.
  • Stir to coat.
  • Mix the spices together, then sprinkle over the oiled potatoes.
  • Stir again until all the potatoes are coated evenly.
  • Spread the potatoes on a baking sheet (I line mine with aluminium foil to help with clean up).
  • Grind over some black pepper and bake in the oven for 30-40 minutes.
  • Halfway through the baking, use a spatula to turn the potatoes over.

Spicy Roast Potatoes with Tahini and Soy | Homemade Rose Harissa image

2 lb/ 900g roasting potatoes, skin left on, cut into 1-inch/ 2½-cm cubes
50g rose harissa
1 garlic clove, peeled and crushed
3 tbsp olive oil
Salt and black pepper
4 ½ tbsp chives (or any herbs on hand), finely chopped
4 ½ tsp black or white sesame seeds (and ideally a mixture of both), toasted
FOR THE TAHINI SOY DRESSING:
1/4 cup/ 60g tahini (mixed very well, to combine the solids and fat)
2 tbsp soy sauce
4 ½ tsp mirin or maple syrup
4 ½ tsp rice vinegar
1 tbsp water
FOR THE HOMEMADE ROSE HARISSA:
40 grams dried Kashmiri red chilies or guajillo chilies
25 grams dried ancho chilies
4 garlic cloves, peeled 2 teaspoons cumin seeds
1 tablespoon coriander seeds
1 ½ teaspoons caraway seeds
1 tablespoon tomato paste
1 tablespoon dried rose petals
1 ½ teaspoons granulated sugar
1 ½ teaspoons Kashmiri chili powder, or paprika
2 tablespoons lemon juice
1 tablespoon rosewater, divided
4 tablespoons cider vinegar
½ cup olive oil, divided 1 ½ teaspoons salt

Steps:

  • Heat the oven to its highest setting, 500°F or 240°C fan.
  • In a large bowl, mix the potatoes, harissa, garlic and oil with three-quarters of a teaspoon of salt and a generous grind of pepper. Transfer to a large sheet-pan lined with patchment paper, and spread out as much as possible. Cover tightly with foil, roast for 15 minutes.
  • Remove the foil, turn down the heat to 425°F or 220°C fan) and roast for 25 minutes more, stirring once halfway through, until the potatoes are cooked and nicely browned.
  • Meanwhile, whisk all the dressing ingredients until smooth.
  • Transfer the potatoes to a shallow serving bowl and drizzle over with the dressing. Finish with the chives and sesame seeds, and serve with extra sauce alongside.
  • To make the rose harissa:
  • Place a large frying pan over high heat. Once the pan is very hot, add the chilies and garlic. Toast until fragrant and charred, about 2 minutes. Pick out the garlic and set aside. Transfer the chilies to a heatproof bowl.
  • Pour enough boiling water over the chilies to cover them, and then weigh them down with a small plate. Soak for 30 minutes to soften and rehydrate, then strain. Roughly chop the chilies and add them to the bowl of a food processor.
  • Meanwhile, add the cumin, coriander, and caraway seeds to the same pan, and toast over medium-high heat until fragrant, 2 to 3 minutes. Transfer the seeds to a mortar and pestle and roughly crush them before adding them to the food processor along with the chopped chilies, garlic, tomato paste, rose petals, sugar, and chili powder or paprika. Pulse a few times until roughly chopped and combined.
  • Add the lemon juice, half of the rosewater, the cider vinegar, 4 tablespoons of olive oil, and a pinch of salt to the food processor. Blitz until you have a coarse paste.
  • Transfer the mixture to a bowl and gently stir in the remaining rosewater and the remaining 4 tablespoons of olive oil.
  • Transfer the harissa to a sterilized airtight jar and keep refrigerated if not using right away. Harissa keeps, covered with a layer of oil, in the refrigerator for several weeks.

(Add 1/4 cup water while cooking onion if too many browned bits accumulate.) Add beef stock, tomatoes, 1 chile, and orange wedges; bring to a boil. Return chuck roast and any accumulated juices to pan; bring to a simmer over high.
  • Cover and transfer to preheated oven; braise 1 hour and 30 minutes. Uncover and stir in sweet potato and celery root. Return to oven, and braise, uncovered, until meat and vegetables are tender but not falling apart, 1 hour to 1 hour and 30 minutes. Remove from oven, and let rest 15 minutes. Transfer chuck roast to a work surface; shred into large pieces. Skim off fat from Dutch oven, and discard. Return shredded beef to Dutch oven.
  • While meat rests, zest remaining orange to equal 1 tablespoon zest and squeeze to yield 3 tablespoons juice. Finely chop remaining 2 chiles to equal 1 tablespoon. Stir together parsley, orange zest and juice, chopped chiles, and remaining 1/4 cup oil; season with salt and pepper to taste. Divide roast mixture evenly among bowls; top with parsley mixture. Serve with crusty bread.
