Pineapple Coconut Muffins image

Delicious Pineapple Coconut Muffins that bring that tropical flavor to your mouth. Easy to make and are sure to please those who enjoy coconut and pineapple.

Number Of Ingredients 9

1 cup all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 cup & 1/2 cup sweetened shredded coconut (separated)
1/4 cup granulated sugar
3 eggs
1/2 cup milk
1 cup pineapple (bite-sized pieces, drain juice from can)

Steps:

  • Prepare your muffin tin with non-stick cooking spray.
  • Preheat oven to 350F.
  • In a large bowl, combine flour, baking powder, baking soda, salt, 1 cup of coconut, and sugar. Stir to mix well.
  • In a medium bowl, whisk eggs with a fork. Add milk to the egg mixture and whisk to combine.
  • Pour egg & milk mixture into dry ingredients and stir until well mixed.
  • Stir in pineapple.
  • Pour into 12 muffin tins.
  • Sprinkle the other 1/2 cup coconut evenly over the top of each unbaked muffin.
  • Bake 20 minutes or until done.
  • Let cool in the pan for 10 minutes then remove from tin to cool on a cooling rack.
  • Store in a sealed container in the fridge.

Make-Ahead Coconut-Pineapple Muffins image

I make and refrigerate the batter for these not-so-sweet muffins the night before. The next morning, I bake them and they are ready for breakfast or for a quick snack. I sometimes dip them in a brown sugar glaze to sweeten them up a bit.

1 ½ cups all-purpose flour
1 teaspoon baking powder
½ teaspoon baking soda
½ teaspoon salt
½ cup white sugar
¼ cup unsalted butter, softened
1 cup vanilla Greek yogurt
1 large egg, at room temperature
1 ½ teaspoons coconut extract
1 cup chopped fresh pineapple
½ cup sweetened shredded coconut
½ cup chopped pecans
1 cup brown sugar
2 tablespoons fresh pineapple juice

Steps:

  • Sift flour, baking powder, baking soda, and salt together in a bowl. Set aside.
  • Cream sugar and butter in a second bowl with an electric mixer. Add Greek yogurt, egg, and coconut extract; beat until well combined. Add in flour mixture and mix until just combined. Fold in pineapple, coconut, and pecans. Cover and refrigerate batter for 8 to 12 hours.
  • Preheat the oven to 375 degrees F (190 degrees C). Grease a 12-cup muffin tin or line with paper liners.
  • Fill each liner with batter using an ice cream scoop.
  • Bake in the preheated oven until a toothpick inserted in center comes out clean, 20 to 25 minutes. Cool for 5 minutes in the pan, then transfer to a wire rack. Cool completely before glazing.
  • Combine brown sugar and pineapple juice for glaze in a microwave-safe bowl. Microwave until sugar has melted, 20 to 25 seconds. Dip each muffin into the glaze.

1/2 cup butter
1 1/4 cups sugar
2 eggs
1/2 teaspoon vanilla
1/2 teaspoon salt
2 1/2 teaspoons baking powder
1/2 cup shredded unsweetened coconut
2 cups flour
1 (20 ounce) can pineapple

Steps:

  • Preheat oven to 350F, line 2 muffin pans with paper cups.
  • In a large bowl, beat butter and sugar until pale and fluffy; add eggs and vanilla, and beat well.
  • Combine salt, baking powder, coconut, and flour.
  • Drain and chop pineapple, reserving juice (about 7 ounces).
  • Add the flour mixture to the butter mixture alternately with the reserved juice.
  • Fold in pineapple, and fill muffin cups 2/3 full.
  • Bake for 20-25 minutes.
  • Note: Sprinkle sugar on top of muffins for crunchy muffin tops.

2 cups flour
1 1/4 cups sugar
1 cup sweetened flaked coconut
1/2 cup fresh pineapple, finely diced
1 tablespoon baking powder
1 teaspoon lemon zest, freshly grated
1 teaspoon orange zest, freshly grated
1/4 teaspoon salt
2 eggs
1/3 cup skim milk
4 tablespoons canola oil or 4 tablespoons any flavorless oil
2 tablespoons lemon juice, freshly squeezed
2 tablespoons orange juice, freshly squeezed
2 cups powdered sugar
1 tablespoon lemon juice, freshly squeezed
1 tablespoon orange juice, freshly squeezed
1/2 cup sweetened flaked coconut

Steps:

  • MUFFINS: Preheat oven to 400 degrees.
  • Line large size 1 cup muffin pans with corresponding large paper liners.
  • In a large bowl, combine flour, sugar, coconut flakes, baking powder, both zests and salt.
  • In a separate bowl, combine eggs, milk, oil and both juices until incorporated.
  • Add wet ingredients to dry ingredients, and stir gently until combined.
  • Pour approximately 3/4 cup batter in each paper liner.
  • Bake for approximately 25 minutes, or until a toothpick comes out clean.
  • Allow to cool, and remove muffins from pan.
  • GLAZE: Spread 1/2 cup coconut flakes on a small sheet pan or ovenproof skillet, and bake in a 350 degree oven until golden, about 5 to 7 minutes CAUTION: Coconut burns easily, so keep an eye on it.
  • In a clean bowl, blend powdered sugar with 1 tablespoon each of freshly squeezed lemon juice and orange juice until smooth. Consistency should be like that of white glue. CAUTION: Humidity may affect proportions. If more liquid is needed, add a few drops of juice at a time as necessary. If mixture is too liquid, add more powdered sugar as necessary.
  • Spoon glaze onto cooled muffin tops.
  • Sprinkle toasted coconut immediately onto freshly glazed muffins before the glaze dries.

I was in the mood for pineapple and wanted to make some muffins and found few such combinations on this site. I did a quick search and found this on About.com, under the heading Southern U.S. Cuisine, from Diana Rattray. I really liked these, they are flavorful and not overly sweet. I thought they might need a little something and I added some allspice, cinnamon and nutmeg to the topping.

1 1/3 cups flour
1/2 cup sugar
1/3 cup brown sugar, lightly packed
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 cup chopped pecans
2/3 cup rolled oats
1 cup buttermilk
1/2 cup melted butter
1 egg
1 (15 ounce) can crushed pineapple, drained well
1/2 cup sweetened flaked coconut
1/3 cup brown sugar
1/4 cup flour
1/4 cup sweetened flaked coconut
2 tablespoons rolled oats
3 tablespoons cold butter, cut up

Steps:

  • Grease 18 muffin cups, or line with paper liners.
  • in a large bowl, mix together flour, sugar, brown sugar, baking powder, baking soda, pecans and oats. Make a well in the center of the mixture.
  • In a separate bowl, whisk together buttermilk, melted butter and egg.
  • Pour into well in flour mixture, stir to blend just until dry ingredients are moistened, but do not overmix.
  • Gently fold in pineapple and coconut.
  • Spoon batter into prepared muffin cups, filling about 2/3 full.
  • For topping:.
  • mix together brown sugar, flour, coconut and oats. cut in butter with a pastry cutter till coarse crumbs have formed.
  • Sprinkle crumb topping over pineapple muffin batter.
  • Bake muffins at 400 for about 20 minutes, or till tops are lightly browned and firm.
  • transfer pans to rack to cool for about 5 minutes.
  • gently turn muffins out onto rack to cool completely.

Steps:
