250g jasmine or basmati rice
5 tbsp desiccated coconut
zest and juice 1 lime
small pack coriander , roughly chopped

Steps:

  • Cook the rice following pack instructions. Add the coconut about 5 mins before the end of the cooking time. Stir in the lime zest and juice, and the coriander. Serve immediately.

1 teaspoon canola oil
1 cup long grain white rice
1 cup chicken stock
2 to 3 strips lime peel
1/2 teaspoon kosher salt
1 tablespoon lime zest plus 2 tablespoons lime juice
1/4 cup chopped fresh cilantro leaves, plus more for sprinkling
2 green onions, green parts only, chopped

Steps:

  • Heat the oil in a large saucepot over medium-high heat. Add the rice and toast until lightly golden, about 1 minute. Add the stock, lime peel, salt and 1 1/2 cups water and bring to a boil. Cover the rice, reduce the heat to low and simmer until all of the liquid is absorbed, about 15 minutes. Let the rice stand, covered, about 5 minutes, then stir in the lime zest, juice and cilantro. Transfer to a serving bowl and top with more cilantro leaves and green onion.

3 cups water
2 cups sweetened flaked coconut
1 tablespoon olive oil
1 cup basmati rice
1 teaspoon salt
1/4 teaspoon pepper
2 tablespoons lime juice

Steps:

  • Combine water and coconut in a small saucepan and simmer over medium heat for 5 minutes.
  • Place a strainer over a small bowl and strain coconut mixture into bowl; reserving liquid, discarding coconut solids. You should have 2 cups coconut milk. Set aside.
  • In a skillet heat oil and then add rice, stirring over medium heat until rice changes color (7-10 minutes).
  • Stir in the reserved coconut milk and bring mixture to a boil.
  • Stir in salt, pepper and lime juice.
  • Cover and reduce heat to a simmer.
  • Simmer for 20 minutes or until liquid is absorbed.

¼ cup flaked coconut
1 cup coconut milk

  • Rinse rice until the water runs clear; drain. Heat coconut oil and butter in a large skillet over medium-high heat. Cook and stir rice and coconut flakes for 3 to 4 minutes. Stir in the lime juice, then add the coconut milk, chicken broth, salt and lime zest. Bring to a low boil, then cover and reduce heat to low. Cook for 20 minutes. 1 cup jasmine rice
26 ounces light coconut milk
2 1/4 cups whole milk
1 cup sugar
2 1/2 teaspoons lime zest, fresh
coconut, toasted for garnish

Steps:

  • In a medium bowl, soak rice for 20 minutes in enough water to cover. Drain and place in a heavy 3 quart saucepan. Add coconut milk, whole milk and sugar and bring mixture to a boil. Reduce heat and simmer, uncovered, for 25 minutes or until thickened, stirring occasionally. (Mixture will thicken as it cools).
  • Remove from heat and add lime zest. Serve at Room temperature or chilled, garnished with toasted coconut.

1 small onion, chopped
3 tablespoons gingerroot, minced
1/2 teaspoon turmeric (or more to taste)
3/4 cup almonds, slivered
3 tablespoons lime juice
6 cups vegetable broth
1/4 cup of fresh mint, chopped

Steps:

  • Heat coconut oil in wok. Add rice, onion, ginger, turmeric and almonds and cook until onion is translucent and rice begins to brown.
  • Combine rice mixture with broth and lime juice and cook according to your rice cooker's instructions. (You can also cook this in a large saucepan on the stove--just cover and cook at a simmer until rice is tender and all broth is absorbed).
  • Toss will mint and serve.

Steps:

  • In a bowl soak rice in cold water to cover 30 minutes. Drain rice in a sieve. In a 2- to 3-quart heavy saucepan bring coconut milk, whole milk, rice, sugar, and a pinch salt to a boil and gently simmer, uncovered, stirring occasionally, 25 minutes. Remove pan from heat.
  • Stir lime zest into pudding. Divide pudding among four 2/3-cup custard cups. Puddings may be made 2 days ahead and chilled, covered.
  • Serve puddings warm or chilled and garnish with flaked coconut.

Rinse rice with cold water. Add rice to a heavy bottomed sauce pan. Pour in water and coconut milk. Add salt, stir with a wooden spoon. Bring to a boil over medium heat. Reduce to a simmer, cover for 20 minutes. Fluff rice with a fork. Add lime zest, lime juice and coriander to rice, toss. Serve with fresh cilantro.
