½ lemon, juiced
½ cup all-purpose flour
½ cup rolled oats
½ cup wheat and barley nugget cereal (such as Grape-Nuts®)
½ cup melted butter
¼ cup white sugar
¼ cup brown sugar
2 tablespoons butter
⅓ cup brown sugar
⅓ cup white sugar
¼ teaspoon cinnamon
1 tablespoon water

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Toss sliced apples with lemon juice to prevent browning.
  • Mix flour, rolled oats, wheat and barley nugget cereal, melted butter, 1/4 cup white sugar, and 1/4 cup brown sugar together in a large bowl.
  • Melt 2 tablespoons butter in a large skillet over medium heat. Stir 1/3 cup brown sugar, 1/3 cup white sugar, and cinnamon into melted butter until sugar begins to dissolve, 3 to 4 minutes. Add apples and water; continue cooking and stirring until apples soften and are coated with sauce, 4 to 5 minutes.
  • Pour apples and sugar mixture into a 2 quart baking dish. Sprinkle topping evenly over the apple filling.
  • Bake in the preheated oven until the top is browned and the filling is bubbling up around the edges, 25 to 30 minutes. Cool for 10 to 15 minutes.

Grated zest of 1 orange
Grated zest of 1 lemon
2 tablespoons freshly squeezed orange juice

1/2 cup granulated sugar
2 teaspoons ground cinnamon
1 teaspoon ground nutmeg
1 1/2 cups flour
3/4 cup granulated sugar
3/4 cup light brown sugar, packed

1/2 pound cold unsalted butter, diced

Steps:

  • Preheat the oven to 350 degrees F. Butter a 9 by 14 by 2-inch oval baking dish.
  • Peel, core, and cut the apples into large wedges. Combine the apples with the zests, juices, sugar, and spices. Pour into the dish.

This is the apple crisp from my childhood (there is no oatmeal in the topping). If I could only pick one dessert to make the rest of my life, this would probably be it. Mom always made this in her beautiful copper au gratin pan. I bought the same pan when I got married, just so I could make this dessert. Originally from the 1966 version of the "Woman's Day Encyclopedia of Cookery", Mom adapted it slightly over the years (with a little help from Cooks Illustrated I think). Cutting the apples into "cubes" (instead of slices) helps the apples keep the apples firm throughout. I have made this with pecans or walnuts. I have also made it without nuts. I like it best with pecans, but all versions are yummy!! I love it warm or cold. You can serve it with ice cream, but I usually only do that for dinner parties.

2 lbs cooking apples
1/4 cup water
1/2 cup sugar
1/2 cup light brown sugar (firmly packed)
1/2 teaspoon nutmeg
1/2 teaspoon cinnamon
1/4 teaspoon salt (you can be generous unless you decide to substitute salted butter)
3/4 cup flour
1/2 cup unsalted butter

Steps:

  • Cut cold butter into small cubes. Place in freezer to chill further.
  • PREPARE APPLES.
  • Peel apples.
  • Cut an apple into quarters. Cut out core. Cut each apple slice one more time so that there are 8 slices.
  • Cube the apple by cutting each slice the "short" way 2 or 3 times. Apple chunks should be no smaller than 1 inch (or they will get too mushy when cooking).
  • Cube the remaining apples.
  • Put apples into an 8 1/2 x 12 inch au gratin casserole dish, or an equivalent baking dish (it's pretty forgiving).
  • Pour water over apples.
  • PREPARE TOPPING:.
  • In the food processor put the sugar, nutmeg, cinnamon, salt and flour. Pulse until combined.
  • Remove butter from freezer and put into food processor.
  • Pulse to blend. Topping should be smaller than peas but not as fine as cornmeal.
  • Add 3/4 cups chopped pecans pulse too mix.
  • Sprinkle topping over apples evenly.
  • Cover dish with foil.
  • Bake at 350 for 30 minutes.
  • Uncover.
  • Bake for 30 more minutes.
  • Cool before serving.

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Grease an 8-inch square baking dish with coconut oil.
  • Place apples in the baking dish. Pour orange juice over apples; mix until well coated.
  • Combine pecans, almonds, raisins, ginger, cinnamon, and nutmeg in a food processor; pulse until coarsely chopped. Spread over the apples.

1 tablespoon all-purpose flour
1/2 teaspoon ground cinnamon
1/8 teaspoon ground nutmeg
TOPPING:
1/2 cup all-purpose flour
1/4 cup sugar
1/4 cup cold butter, cubed
3 tablespoons chopped pecans
1/3 cup apricot jam
Vanilla ice cream, optional

Steps:

  • In a small bowl, combine the apple, sugar, flour, cinnamon and nutmeg. Transfer to a 3-cup baking dish coated with cooking spray. , For topping, combine the flour and sugar in a small bowl; cut in butter until mixture is crumbly. Stir in pecans. Sprinkle over apple mixture. Drop jam by teaspoonfuls over the top., Bake, uncovered, at 350° for 35-40 minutes or until apple slices are tender. Serve warm with ice cream if desired. 1/4 cup all-purpose flour
3 tablespoons firmly packed dark brown sugar
1/8 teaspoon salt
3 tablespoons cold butter, cut into bits
1/3 cup old fashioned oats
2 tablespoons sliced almonds
2 apples, peeled, quartered, and sliced thin crosswise

Steps:

  • Preheat oven to 375 degrees F.
  • In a small bowl, soak the apricots in brandy for 5 minutes.
  • Blend flour, brown sugar, salt and butter until mixture resembles coarse meal.
  • Add oats and almonds and toss.
  • In a 9 inch glass pie dish, toss together apples, apricots and brandy.
  • Sprinkle oat mixture evenly over top and bake for 30-35 minutes, or until apples are tender and topping is browned.

3/4 cup dried mixed fruit
1 tablespoon all-purpose flour
1/3 cup brown sugar
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg
1 lemon, juice and zest of, fresh
3/4 cup old fashioned oats
3/4 cup all-purpose flour
1/3 cup brown sugar, plus
2 tablespoons brown sugar
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 cup salted butter, cut into small pieces

Steps:

  • Preheat oven to 375°F Lightly grease a 10-inch round baking dish.
  • Combine fruit mixture ingredients (apples through lemon juice & zest) and transfer to prepared baking dish.
  • Combine dry topping ingredients (oats through nutmeg) then cut in butter (I use my fingers to combine) until crumbly. Sprinkle topping over fruit mixture.
  • Bake until fruit bubbles and topping is browned, 35-45 minutes.
  • Serve warm.
