4 Pork medallions
1 Teaspoon olive oil
2 Tablespoons butter
2 Cloves garlic (crushed)
1 Tablespoon paprika
1 Tablespoon dijon mustard
1 Tablespoon flour
1/2 Cup chicken stock
1/3 Cup heavy cream
1 1/2 Teaspoons coarse sea salt
1 Teaspoon fresh ground black pepper
Fresh chopped parsley (if desired for garnish)

Steps:

  • Season both sides of the pork medallions with sea salt and fresh ground black pepper. Set aside.
  • Heat a cast iron pan over high heat for a few minutes. Add a teaspoon of olive oil and the pork medallions. Sear the pork on each side for about 2 minutes. Remove from pan and place on a plate to rest.
  • In a medium deep sided skillet set over medium heat, add the butter and garlic. Sizzle for about a minute. Add the paprika and mustard. Stir for about 30 seconds. Add the flour and stir quickly to form a paste, about a minute. Gradually start pouring in the stock, whisking as you pour until you have a smooth and slightly thickened sauce. This will take about 2 minutes. Add the cooking cream and bring to a simmer. Reduce heat to low and add the pork. Cover and leave to cook for 10 - 12 minutes or until pork is cooked through.
  • Serve pork medallions with the sauce. Best served straight away.

3/4 cup jarred sliced pickled banana peppers
1/2 cup Dijon mustard
3 tablespoons honey
4 (1-inch thick) center cut boneless pork loin chops
Kosher salt and freshly ground black pepper
6 pappardelle nests
1 tablespoon olive oil
1/2 onion, chopped
3 cloves garlic, chopped
3 tablespoons reserved marinade
1 1/2 cups heavy cream
Kosher salt and freshly ground black pepper
1/4 cup grated Parmesan cheese
1/4 cup chopped fresh parsley, for serving

Steps:

  • To make the marinade: In a blender or food processor combine banana peppers, mustard, and honey. Blend until smooth, and set aside 3 tablespoons for the pasta sauce.
  • Pour the remaining marinade into a re-sealable plastic bag. Season the pork with salt and pepper and add them to the bag. Seal and distribute the marinade equally on the pork. Marinate at room temperature up to 2 hours or in the refrigerator if longer than that. Remove the pork from the refrigerator 30 minutes before cooking to let pork come to room temperature.
  • Preheat a seasoned cast iron grill pan over medium-high heat.
  • Bring a large pot of well-salted water to a boil for the pasta.
  • Remove the pork medallions from the marinade and give a gentle shake to remove excess marinade. Place on the grill pan. Let cook 4 minutes per side or until cooked through. Remove from the pan and loosely tent with aluminum foil while the meat rests.
  • Meanwhile, cook the pasta in salted boiling water until al dente, about 12 minutes. In a medium saute pan on medium heat, heat the oil. When it begins to swirl, add the onions. Season the onions with salt and pepper, and sweat until tender.
  • Add the garlic and cook another minute. Add reserved marinade and stir. Once combined, add the heavy cream and stir until slightly reduced and thickened, about 8 minutes.
  • Stir in the grated Parmesan, and parsley. Drain the pasta and add to sauce, coating well. Serve alongside pork.

1 pork tenderloin (1 pound)
1/3 cup all-purpose flour
1/4 teaspoon salt
1/4 teaspoon pepper
1 tablespoon butter
3 green onions
1/3 cup white wine or chicken broth
1/2 cup fat-free evaporated milk
4 teaspoons Dijon mustard

Steps:

  • Cut pork widthwise into 6 pieces; flatten to 1/4-in. thickness. In a large resealable plastic bag, combine the flour, salt and pepper. Add pork, a few pieces at a time, and shake to coat. In a large nonstick skillet, brown pork in butter over medium-high heat. Remove and keep warm. , Slice green onions, separating the white and green portions; reserve green portions for garnish. 1 tbsp olive oil
600g pork medallions
2 tbsp unsalted butter
2 banana shallots , thinly sliced
250g chestnut mushrooms , sliced
1 garlic clove , crushed
1 tbsp plain flour
100ml madeira or sherry
400ml chicken stock
4 sprigs thyme
½ tbsp wholegrain mustard
100ml double cream
mashed potato and wilted greens, to serve

Steps:

  • Heat the oil in a large non-stick frying pan and fry the pork on each side for 2-3 mins until golden brown. Set aside on a plate.
  • Melt the butter in the pan and, when foaming, fry the shallots and mushrooms over a medium heat for 10 mins. Add the garlic and cook for another 1 min. Stir through the flour and cook for another 2 mins. Whisk through the madeira and boil for 2 mins. Gradually stir through the stock until the sauce is lump free. Add the thyme and mustard and season to taste.
  • Return the pork to the pan and simmer uncovered for 5-7 mins or until the pork is cooked through. Stir through the cream and heat again until simmering. Serve with creamy mashed potatoes and wilted greens.

1 Tbsp green peppercorns (drained from a jar)
1 Tbsp dijon mustard
1 Tbsp fresh chives (chopped fine)
3 clove garlic (crushed)
3 Tbsp dry vermouth
1/4 c heavy cream
1/3 c chicken stock
1/3 c all purpose flour
3/8 tsp kosher salt
1/8 tsp black pepper
1/2 tsp smoked paprika
1/2 tsp dry thyme leaves (crushed)
1 large egg (beaten)
1 lb 1/4 inch boneless pork chops or 6 thin cut pork chops
3 Tbsp cooking oil
2 Tbsp olive oil
1 Tbsp butter, unsalted

Steps:

  • 1. Cut the Pork Chops in half, so that you will have 12 pieces. Pat dry with a paper towel. Pound with a mallet until medallions are very thin. Place on a plate or tray and cover with plastic. Keep refrigerated until ready to bread in egg and flour.
  • 2. Measure Green Peppercorns, Dijon Mustard, Chopped Chives, Crushed Garlic, Dry vermouth, Heavy Cream, and Chicken Stock into individual little dishes and/or ramekins. Place on a tray, so they will be handy next to the stove. Cover with plastic until ready to use.
  • 3. Beat the Egg and place in a breading tray or shallow dish. Measure the Flour, Kosher Salt, Black Pepper, Smoked Paprika, and Dry Thyme Leaf in a breading tray or shallow dish. Use a fork to blend well.
  • 4. Take the Pork from the fridge and bread up to 20 minutes before frying. Dip in the Beaten Egg first and then in the Seasoned Flour. Use a fork to assist. Place each Pork piece on a tray that is lined with waxed paper.
  • 5. To fry the Pork, heat the Cooking Oil, Olive Oil, and Unsalted Butter in a large heavy bottomed fry/saute pan. Have the heat on med/hi to hi. When heated, fry Pork on hi up to 2 minutes per side, turning with a fork or tongs. Do this in 2 batches. Set Pork aside on an attractive platter.
  • 6. Now you will quickly make the sauce by adding all of your little ingredients that you have handy on the tray. Reduce the heat under the pan to med/lo. First add the Crushed Garlic and saute 15-20 seconds. Stir to prevent burning. Now add the liquids (dry vermouth, cream, chicken stock). Whisk to blend and reduce for about 1 minute. Now add the Mustard, Green Peppercorns and Chopped Chives. Keep whisking for about 1 minute more. Remove pan from heat. Spoon Sauce over the Pork Medallions and serve immediately with a Potato and a Fresh Vegetable.

  • Heat a large heavy bottomed skillet over medium-high heat. Dry the pork medallions well and season with salt and pepper. Add the oil to the skillet and heat until shimmering. Lay the pork in the pan and cook until browned on the first side, about 4 minutes. Turn and cook until the second side is browned, about 3 minutes more. Transfer the pork to a plate, and cover loosely with foil.

3 tablespoons flour
1 teaspoon salt
1/2 tsp EACH garlic powder, onion powder, pepper, paprika
butter
olive oil
12 ounces baby bella/cremini mushrooms sliced ¼-inch thick
1 shallot, minced
4 garlic cloves, (minced)
¼ teaspoon red pepper flakes
¼ cup flour
2 ½ cups reduce sodium beef broth
1 tablespoon Worcestershire sauce
1 tablespoon reduced sodium soy sauce
1 teaspoon Dijon mustard
1 teaspoon beef bouillon ((see notes))
1 teaspoon dried parsley
½ tsp EACH dried oregano, dried thyme

Steps:

  • Prep pork: Trim silver skin from the pork tenderloin and cut crosswise into 12 medallions. Press each medallion with the palm of your hand to flatten to a about 1/2-inch even thickness. Whisk the flour and all pork seasoning together in a shallow dish. Dredge each medallion in the mixture, shake off any excess, then transfer to a dry surface.
  • Cook pork: Melt the 2 tablespoons butter in 2 tablespoons olive oil in a large skillet over medium-high heat. Once hot, add HALF of the pork medallions in a single layer and cook for approximately 3 minutes per side. Pork is cooked through when internal temperature registers at 145˚F. Cooking time will also depend on the thickness of the medallions. Transfer pork to a plate, tent with foil and repeat with remaining pork.
  • Caramelize mushrooms: Melt 2 tablespoons butter with 1 tablespoon olive oil over medium heat. Increase temperature to medium-high and add half of the mushrooms. Give them a stir to evenly coat in the butter then arrange mushrooms in a single layer. Cook mushrooms for 3 minutes per side or until golden. Once evenly browned, season mushrooms lightly with freshly cracked salt and pepper and give them a stir. Remove mushrooms from skillet and repeat with remaining mushrooms; transfer all mushrooms to a plate.
  • Gravy: To the now empty skillet, melt 2 tablespoons butter. Add shallot and sauté over medium-high heat for 2-3 minutes to soften. Reduce heat to medium, add garlic and red pepper flakes and sauté for 30 seconds. Add flour and cook for 1 minute, scraping up the browned bits on the bottom of the pan. Reduce heat to low and slowly whisk in beef broth. Add soy sauce, Worcestershire, Dijon, beef bouillon, and all seasonings. Bring to a simmer until thickened. Once thickened to desired consistency, stir the mushrooms into the gravy.
  • Assemble: Nestle the pork medallions into the pan and spoon some gravy over top. Cook over medium for a few minutes to warm through. Taste and season with salt and/or pepper to taste. Garnish with fresh parsley if desired. Serve over mashed potatoes (recommended), rice or pasta.

1 tbsp Olive or Canola Oil
3 tbsp Butter
8 oz Sliced Mushrooms
1/2 cup Chopped Yellow Onion

2 cups Chicken Broth
1 tbsp Worcestershire Sauce

  • Slice both pork tenderloins into equal pieces approximately 2″ wide. Pat each piece dry with a paper towel. Season with salt and pepper.

1 shallot, finely chopped (2 tablespoons)
1 (4 1/2 ounce) jar Green Giant sliced mushrooms, drained
1 teaspoon vegetable oil
1 pork tenderloin, cut into 8 (1/2 to 3/4 lb)
1/8 teaspoon salt
1/8 teaspoon pepper
1 tablespoon cognac or 1 tablespoon apple juice
1 tablespoon Dijon mustard
1/2 cup whipping cream
fresh thyme sprigs or basil leaves, if desired

Steps:

  • In 8-inch skillet, melt 2 teaspoons of the butter over medium heat. Add shallot and mushrooms; cook and stir 1 minute or until tender. Remove from skillet.
  • To same skillet, add remaining 3 teaspoons butter and the oil. Add pork; cook 8 to 10 minutes, turning slices halfway through cooking, until browned and no longer pink in center. Sprinkle with salt and pepper. Remove from skillet; cover to keep warm.
  • Gradually add cognac to same skillet; stir in mustard and cream. Heat to boiling; boil 1 to 2 minutes, stirring constantly, until slightly thickened. Add mushroom mixture; cook 1 minute or until thoroughly heated. Serve sauce over pork slices; garnish with thyme.

A simple dish that my family enjoyed from Betty Crocker's Cooking Today.

1 1/2 lb pork tenderloin
1 Tbsp butter
1 Tbsp vegetable oil
salt and pepper
2 medium cooking apples, unpeeled, cubed
1/2 c whipping cream
1/4 c apple cider
1 Tbsp dijon mustard
fresh parsley, chopped

Steps:

  • 1. Cut pork diagonally into 1/4-inch thick slices. Heat butter and oil in 10-inch skillet over medium heat until butter is melted. Cook a few slices pork at a time in butter mixture until light brown on both sides and no longer pink in center. Sprinkle with salt and pepper. Remove pork to warm platter; keep warm.
  • 2. Add apples to skillet. Cook, stirring occasionally, until apples are tender and liquid has evaporated. Stir in whipping cream, cider and mustard. Heat to boiling, stirring constantly. Pour over pork; sprinkle with parsley.

3 1/2 cups fresh breadcrumbs made from French bread
1 cup chopped walnuts
1/3 cup chopped fresh parsley
1/4 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1 cup all purpose flour
2 large eggs, lightly beaten
1/3 cup (or more) vegetable oil
Mustard Cream Sauce
Red Cabbage with Raspberries, Onions and Apples

Steps:

  • Using meat mallet or rolling pin, pound pork between sheets of plastic to 1/4-inch thickness. Sprinkle with salt and pepper. Mix breadcrumbs, walnuts, parsley, cinnamon and nutmeg in processor until nuts are finely ground. Transfer to small bowl. Season with salt and pepper. Place flour and beaten eggs in separate bowls. Dredge 1 pork medallion in flour; shake off excess. Dip into beaten eggs to coat, then into breadcrumb mixture. Repeat with remaining pork medallions, flour, beaten eggs and breadcrumb mixture.
  • Heat 1/3 cup oil in heavy large skillet over medium-high heat. Working in batches, add pork and sauté until just cooked through, adding more oil to skillet between batches if necessary, about 2 minutes per side. Transfer to platter. Serve with mustard sauce and cabbage.

1 1-pound pork tenderloin
1/3 cup all purpose flour
1/2 teaspoon salt
1/4 teaspoon pepper
3 tablespoons butter
3 green onions, sliced, white and green parts separated
1/3 cup dry white wine
1 cup whipping cream
1/4 cup Dijon mustard

Steps:

  • Cut tenderloin crosswise into 1/2-inch-thick pieces. Pound between sheets of waxed paper to thickness of 1/4 inch. Combine flour, salt and pepper in shallow dish. Melt 1 tablespoon butter in heavy large skillet over medium-high heat. Dredge pork in seasoned flour, shaking off excess. Add 1/3 of pork to skillet and sauté until brown and cooked through, about 2 minutes per side. Transfer to platter and keep warm. Repeat with remaining pork in 2 more batches, adding 1 tablespoon butter to skillet for each batch.
  • Add white parts of green onions to skillet. Sauté until just tender, about 1 minute. Stir in white wine and boil until liquid is reduced to 2 tablespoons, about 3 minutes. Add whipping cream and simmer until thickened to sauce, about 5 minutes. Whisk in 1/4 cup Dijon mustard. Season sauce to taste with salt and pepper. Spoon sauce over pork. Garnish tenderloin with remaining green onions and serve.
